1/2 cup unsalted butter, room temperature, plus more for pan
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup sour cream
1 cup frozen sour cherries, thawed and drained well

Milk Glaze for Cherry-Streusel Coffee Cake

Steps:

  • Preheat oven to 350 degrees. Butter a 9-inch tube pan; set aside. In a medium bowl, sift together flour, baking powder, baking soda, and salt; set aside.
  • With an electric mixer on medium speed, beat butter, sugar, eggs, and vanilla until pale and fluffy, 2 to 3 minutes. Add the flour mixture in 3 batches, alternating with sour cream and beginning and ending with the flour. Beat until just combined, scraping down sides of bowl as needed.
  • Spoon half the batter into prepared pan. Arrange cherries in a single layer on top (but not against the pan's edge, as cherries may stick or burn). Top with the remaining batter, and smooth with an offset spatula. Sprinkle with streusel.
  • Bake until cake is golden brown and springs back when touched, 40 to 45 minutes. Let cake cool on a wire rack set over a piece of parchment paper for 10 to 15 minutes. Run a knife around edges of cakes to loosen, and unmold. Let cool on rack.
  • Spoon glaze over top, letting it drip down sides. Let set for 5 minutes before serving. Cake can wrapped plastic and stored for up to 4 days.

Steps:

  • Heat oven to 350*.
  • Prepare streusel.
  • Mix all ingredients until crumbly.
  • Beat remaining ingredients in large mixer bowl on low speed 30 seconds.
  • Beat on medium speed, scraping bowl occasionally, 2 minutes.
  • Spread half of the batter in greased oblong pan, 13x9x2" or square pan, 9x9x2"; sprinkle with half the streusel.
  • Top with remaining batter; sprinkle with remaining streusel.
  • Bake until wooden pick inserted in center comes out clean, 35-40 minutes.

1 3/4 pounds fresh sour cherries, pitted (2 1/2 cups), or 2 cups jarred pitted sour cherries, drained

2 tablespoons cherry liqueur (optional)

3 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda

Steps:

  • Position a rack in the lower third of the oven and preheat to 350 degrees F. Make the streusel: Spread the almonds on a baking sheet and bake until toasted, 5 to 7 minutes; let cool and transfer to a food processor. Add the sugar, butter, flour, cinnamon, orange zest and cocoa powder and pulse until the nuts are ground and the mixture starts to clump. Refrigerate until ready to use.
  • Make the filling: Toss the cherries, almond extract and cherry liqueur, if using, in a bowl. Stir in the flour and sugar.
  • Make the cake: Whisk the flour, baking powder, baking soda and salt in a large bowl. In a small bowl, whisk the sour cream and vanilla and almond extracts. Beat the butter and sugar in a stand mixer fitted with the paddle attachment on medium speed until smooth, about 5 minutes. Scrape down the bowl. Beat in the eggs one at a time, until light and fluffy, 2 to 3 minutes.
  • Beat in half of the flour mixture on low speed until almost incorporated, then beat in half of the sour cream mixture. Beat in the remaining flour mixture, then the sour cream mixture; finish mixing the batter by hand (do not overmix).
  • Butter the bottom and sides of a 10-inch springform pan. Spread half of the batter in the pan. Sprinkle half of the streusel on top, then cover with the cherry filling. Drop spoonfuls of the remaining batter on top of the cherries and smooth with the back of a spoon. Top with the remaining streusel.
  • Bake on the lower oven rack until the cake springs back in the center when pressed, about 1 hour, 20 minutes. Transfer to a rack to cool. Run a knife around the inside of the pan, then remove the side.

This is one of my family's favorite coffeecakes. The original recipe called for 3/4 cup evaporate milk with 1 Tbls. lemon juice in it and it was very good. However, using the sour cream and milk makes it even better. It is so moist and tender and delicious you will have to eat seconds! Works well for company or to give as a gift too. I always prepare it on Saturday night for Sunday morning. Just cover lightly with a towel.

Steps:

  • Combine flour and sugar in a large bowl.
  • Cut in butter until mixture is crumbly.
  • Set aside 1/2 cup of the mixture.
  • Add baking powder and baking soda to the remaining flour mixture.
  • Put approximately 1/2 cup of sour cream (I use Breakstone Fat Free) in a 'liquid' measuring cup.
  • Add enough milk to make 3/4 cup.
  • Blend together well and add to dry ingredients along with beaten egg and extract; stir just until moistened.
  • Spread 2/3 of the batter over bottom and about 1 inch up the side of a greased 9-inch springform pan to form a shell.
  • Spread pie filling in shell.
  • Drop small spoonfuls of remaining batter over pie filling.
  • Stir almonds into reserved crumb mixture.
  • Sprinkle evenly over cake.
  • Bake in 350°F oven for 50 to 55 minutes.

2 1/4 cups flour
3/4 cup white sugar
3/4 cup butter or 3/4 cup margarine
1/2 teaspoon baking powder

1 egg, beaten
3/4 cup buttermilk or 3/4 cup sour milk
1 (19 ounce) can cherry pie filling

Steps:

  • In a large bowl make crumb mix: 2 1/4 cups flour 3/4 cup white sugar; Whisk together to mix.
  • Cut in: 3/4 cup butter or margarine. Mix until crumbly.
  • REMOVE 1/2 cup of crumb mix and set aside to sprinkle on top.
  • To remainder of crumb mix add: 1/2 teaspoon baking powder 1/2 teaspoon baking soda Combine: 1 beaten egg and 3/4 cup buttermilk or sour milk.
  • Add to dry crumb mix and stir until just moistened.
  • Spread 2/3 of batter over bottom and part way up the side of a greased 9 inch spring form pan or a well greased bundt pan. I favor the spring form pan when serving this as dessert.
  • Spoon Cherry pie filler over batter.
  • Drop spoonfuls of remaining batter over filling.
  • (I found 1 cup of batter for the third is about right) Sprinkle with the 1/2 cup of reserved crumb mix.
  • Bake 350 for 50-55 minutes.

1/2 cup (4 oz) butter
3/4 cup (6 oz) sugar
2 eggs
1 tsp vanilla
2 cups ( 9 oz) all purpose flour
1 tsp baking powder
1 tsp baking soda

1 cup greek yogurt or labne
1 cup (8 oz) cherry pie filling (or other fruit filling) or cherry jam (or your favorite flavor jam)
3 oz (just less than half a block) cream cheese, room temperature
1 egg
1 tbsp sugar
3/4 cup (5 oz) pecans, chopped (or substitute another nut, coconut or oatmeal)
3 tbsp (1 1/2 oz) melted butter
2 tbsp sugar
1/4 cup (1.5 oz) brown sugar

Steps:

  • Butter and flour a 9" square pan.*
  • In a small bowl, beat the cream cheese until soft and smooth. Add the single egg and 1 tbsp sugar and continue to beat until creamy.
  • In another bowl, place the flour, baking powder, baking soda, and salt in a small bowl and stir well.
  • Cream butter and sugar together in a large mixing bowl (I used my KitchenAid mixer) until fluffy and light. Add the eggs, one at a time, clearing well after each addition; then add the vanilla.
  • Add about one third of the flour, and mix well.
  • Next, add about a third of the yogurt/labne, and incorporate into the mixture. Continue two more times, until the flour and yogurt/labne is used, occasionally using a spatula to scrape the sides and bottom.
  • Place half of the batter into the 9x9 pan. Spoon the jam evenly over the batter. Next, spread the cheese mixture over the jam layer. Spread the remaining cake batter over the top.
  • Using a knife, swirl through the cherry cheese coffee cake to marbleize the inside layers. Now sprinkle the streusel topping over the cake.
  • Bake for 50 minutes to an hour, or until cake tester comes out clean.
  • Allow to cool slightly, before cutting. Serve warm with tea or coffee.

1 1/4 cups sugar (granulated)
4 eggs
1 tablespoon vanilla extract

Steps:

  • Gather the ingredients. Preheat the oven to 350 F.
  • Combine the butter and sugar in the bowl of a stand mixer fitted with the paddle attachment. Alternatively, use a large bowl and a hand mixer. Beat on medium-high speed until light and fluffy.
  • Beat the eggs in, one at a time, until each is incorporated.
  • Mix in the vanilla extract, sour cream, and milk until just combined.
  • Add the flour, baking powder, baking soda, and salt to the bowl, then beat on medium-low until completely combined. Be careful to not overmix-you can stop mixing once there are just a few streaks of dry ingredients.   • Pour the cherry pie filling across the top of the cake to evenly cover the top.
  • Gather the ingredients.
  • In a medium bowl, combine the flour, brown sugar, butter, cinnamon, and vanilla extract. With a rubber spatula or your hands, fold the ingredients together until a crumbly mixture forms.
  • Evenly distribute the streusel over the top of the cherry pie filling.
  • Bake until the streusel is browned and the cherry juices are bubbling, and a toothpick inserted in the middle of the cake comes out with a few moist crumbs clinging to it, 50 minutes to 1 hour.

Steps:

  • Preheat the oven to 350°F. Butter a 9-inch tube pan; set aside. In a medium bowl, sift together the flour, baking powder, baking soda, and salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter, sugar, eggs, and vanilla on medium speed until light and fluffy, 2 to 3 minutes. Add the flour mixture in three parts, alternating with the sour cream and beginning and ending with the flour. Beat until just combined, scraping down the sides of the bowl as needed.
  • Spoon about half the batter into the prepared pan. Arrange the cherries in a single layer on top of the batter; avoid placing any cherries against the pan's edge, as they may stick or burn if not fully encased in batter. Top with the remaining batter, making sure it is evenly distributed, and smooth with an offset spatula. Sprinkle the streusel evenly over the top of the batter.
  • Bake until the cake is golden brown and springs back when touched, 40 to 45 minutes. Transfer the pan to a wire rack set over a rimmed baking sheet, and let the cake cool 10 to 15 minutes. Invert the cake onto the rack, then reinvert (so streusel side is up), and let cool completely. Spoon the glaze over the cake, letting it drip down the sides. Let the cake sit until the glaze is set, about 5 minutes, before serving. Cake can be kept at room temperature, wrapped well in plastic, for up to 4 days.

  • In a medium bowl, whisk together the confectioners' sugar and milk until completely smooth. Immediately drizzle glaze over cake.

Every time I make this my family is very nice to me for an entire week! I wish I could credit the source but it's a recipe I copied down one time when I visited my mother in Missouri. I love looking through all her cooking books/magazines, and this was one of the keepers.

1/2 cup all-purpose flour
3 tablespoons sugar
3 tablespoons butter
1/4 cup almonds, sliced
2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
2/3 cup sugar
1 egg, beaten
8 ounces sour cream
1 teaspoon vanilla
1/4 teaspoon almond extract
1/2 cup milk
1 (20 ounce) can cherry pie filling

Steps:

  • Grease a 9-inch springform pan.
  • In medium bowl stir 1/2 cup flour and the 3 tablespoons sugar. Using a pastry blender, cut in 3 tablespoons butter until mixture resembles coarse crumbs. Stir in almonds. Set aside.
  • In another medium bowl, stir together 2 cups flour, baking powder, baking soda, and salt. Set flour mixture aside.
  • In large bowl (mixer) beat the 1/2 cup butter and the 2/3 cup sugar with electric mixer on medium speed until fluffy. Beat in egg, sour cream, vanilla, and almond extract until fluffy. Add flour mixture and milk alternately, beating just until blended.
  • Spread 2/3 of the batter evenly into prepared pan. Spread pie filling on top of batter. Dollop remaining batter on top of filling. Sprinkle sugar mixture over batter in the pan. Bake in a 350 degree oven one hour, till toothpick in center comes out clean (but dough could be under the filling and toothpick won't show it. I needed 1 hour, 15 minutes).
  • Cool for 10 minutes. Serve warm. Cover any leftovers in refrigerator for up to 3 days.

1/2 cup brown sugar
1 cup ground walnuts
1 teaspoon cinnamon
4 cups flour
1/2 teaspoon salt
1 (16 ounce) carton sour cream
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 cup butter, softened
1 teaspoon almond extract
2 cups sugar
6 eggs

Steps:

  • Drain cherries, set aside.
  • Mix together brown sugar, nuts, and cinnamon; set aside.
  • Sift together flour, salt, baking powder, and baking soda; set aside.
  • Cream butter, sugar, and almond extract thoroughly; Add sour cream, Beat until well blended.
  • Add the flour mixture to the butter mixture, alternating with the eggs, beginning and ending with the flour mixture. Beat well, scraping bowl often.
  • Grease and flour a bundt pan; pour 1/3 of the batter in the pan. Top with 1/3 of the cherries and 1/3 of the nut mixture.
  • Repeat layers a second and third time.
  • Bake at 350° for 1 hour and 15 minutes or until cake tests done.

  • 1. Wash, dry and pit the cherries. Set aside. Melt the butter for the streusel and let cool down again. Line 10 inches (26cm) springform tin with baking parchment and grease lightly. Set aside.
  • 2. Mix the flour with brown sugar in a large bowl. Add the melted (and cooled) butter, the egg, and grated almond paste – mix until streusel form. Add about 2/3 of the streusel to the prepared baking tin and press to the bottom and sides to create a nice crust. Place with the remaining streusel in the fridge for about 10 minutes.
  • 3. Preheat the oven to 390°F (200°C). Mix the sour cream with cornstarch, sugar, milk, and vanilla extract. Pour on top of the cake base and spread evenly. Mix the cherries with the cherry jam and place on top of the sour cream mixture. Sprinkle everything with the remaining streusel and the brown sugar. Bake for 40-45 minutes or until the cherries are soft and the streusel got a nice golden color. Take out of the oven and let cool down completely on a wire rack. Serve with some whipped cream or vanilla ice cream.
