Greek Moussaka is an eggplant casserole with layers of roasted eggplant and spiced meat sauce, topped with creamy bechamel sauce. Once baked, be sure to allow the moussaka a few minutes to rest before cutting through, the casserole needs to settle so it does not fall apart when you slice into it. More tips in the post and recipe notes.

2 large eggplants, (sliced lengthwise into 1/4 inch-thick slices, end slices discarded)
salt
Private Reserve extra virgin olive oil
4 tablespoon breadcrumbs
1 large yellow onion, (finely chopped)
1 pound ground lamb (or beef)
1 tablespoon dried oregano
1 teaspoon ground cinnamon
1/2 teaspoon black pepper
1/2 teaspoon ground nutmeg
1/2 teaspoon paprika or hot paprika
1/2 cup red wine
14 ounce can diced tomato
1 teaspoon sugar
1/2 cup hot beef broth
1/3 cup + 2 tablespoons extra virgin olive oil
2/3 cup all-purpose flour
1/2 teaspoon salt, (more if you like)
1/4 teaspoon ground nutmeg
4 cups 2% milk, (warmed)
2 large eggs

Steps:

  • Salt the eggplant. Spread the eggplant slices in one layer and sprinkle with salt. Let set for 30 minutes to "sweat out" its bitterness.
  • Turn the broiler of your oven on.
  • Prepare a large sheet pan or two and brush with extra virgin olive oil. Pat the eggplant slices dry, removing excess salt, and assemble in one layer on the prepared pan. Brush generously with olive oil.
  • Place the sheet pan about 6 inches away from the broiler. Broil the eggplant briefly, turning over so that both sides are softened and golden brown (do not worry if parts of the eggplant are slightly charred, but watch carefully so it doesn't burn). Remove from the oven and set aside.
  • Prepare the meat sauce. Heat 2 tablespoons olive oil in a skillet. Cook the onions on medium heat until they turn slightly golden brown, stirring regularly (about 5 minutes). Now add the ground lamb. Cook the lamb until fully browned, tossing regularly. Drain the lamb from any excess fat and return to the skillet. Add the dried oregano, cinnamon, pepper, nutmeg, and hot paprika. Stir to coat the meat with the spices. Add the wine and boil for 1 minute to reduce. Stir in the canned tomatoes, sugar, and broth. Simmer over medium-low heat for 20 to 30 minutes.
  • Meanwhile, heat the oven to 350 degrees F and work on the bechamel.
  • Make the bechamel. In a large saucepan, heat the olive oil over medium-high heat until shimmering but not smoking. Stir in the flour, salt, and pepper. Cook until golden (if needed, added a little more olive oil). Gradually add the warmed milk, whisking continuously. Continue to cook, stirring occasionally, over medium heat for 5 to 7 minutes. Add the nutmeg. In a small bowl, whisk a small amount of the hot bechamel mixture with the 2 eggs. Then return all to the pan and stir into the bechamel mixture. Continue to stir or whisk the mixture bringing to a gentle boil for just 2 more minutes. Taste and adjust the seasoning. Remove from the heat and allow to cool and thicken a little more. (You should have a creamy, thick and smooth bechamel sauce.)
  • Assemble the moussaka. When ready, lightly oil a 9 ½" x 13" oven-safe baking dish. Layer half the eggplant slices on the bottom. Add the meat sauce and spread well. Add the remaining eggplant slices. Pour the bechamel on top and spread to cover all the eggplant, then sprinkle with the bread crumbs.
  • Bake. Bake the moussaka casserole on the center rack of the heated oven for 45 minutes. If you need to, transfer the baking pan to the top rack and broil briefly so that the top of the moussaka gains a nice golden brown color (watch carefully).
  • Remove from the heat and let the casserole sit for 10 minutes before cutting through into squares to serve. Enjoy!

3 eggplants, peeled and cut lengthwise into 1/2 inch thick slices
salt
¼ cup olive oil
1 tablespoon butter
1 pound lean ground beef
salt to taste

2 onions, chopped
1 clove garlic, minced
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon fines herbs
2 tablespoons dried parsley
1 (8 ounce) can tomato sauce
½ cup red wine
1 egg, beaten
4 cups milk
½ cup butter
6 tablespoons all-purpose flour
salt to taste
ground white pepper, to taste
1 ½ cups freshly grated Parmesan cheese
¼ teaspoon ground nutmeg

Steps:

  • Lay the slices of eggplant on paper towels, sprinkle lightly with salt, and set aside for 30 minutes to draw out the moisture. Then in a skillet over high heat, heat the olive oil. Quickly fry the eggplant until browned. Set aside on paper towels to drain.
  • In a large skillet over medium heat, melt the butter and add the ground beef, salt and pepper to taste, onions, and garlic. After the beef is browned, sprinkle in the cinnamon, nutmeg, fines herbs and parsley. Pour in the tomato sauce and wine, and mix well. Simmer for 20 minutes. Allow to cool, and then stir in beaten egg.
  • To make the bechamel sauce, begin by scalding the milk in a saucepan. Melt the butter in a large skillet over medium heat. Whisk in flour until smooth. Lower heat; gradually pour in the hot milk, whisking constantly until it thickens. Season with salt, and white pepper.
  • Arrange a layer of eggplant in a greased 9x13 inch baking dish. Cover eggplant with all of the meat mixture, and then sprinkle 1/2 cup of Parmesan cheese over the meat. Cover with remaining eggplant, and sprinkle another 1/2 cup of cheese on top. Pour the bechamel sauce over the top, and sprinkle with the nutmeg. Sprinkle with the remaining cheese.
  • Bake for 1 hour at 350 degrees F (175 degrees C).

1/4 cup Greek extra-virgin olive oil, divided
1 pound ground lamb
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/8 teaspoon cayenne
Kosher salt and freshly ground black pepper
1 large yellow onion, halved and thinly sliced
1 red bell pepper, stemmed, cored, and thinly sliced
1 serrano chile, finely diced
5 cloves garlic, finely chopped
2 tablespoons tomato paste
1 cup red wine
1 (28-ounce can) plum tomatoes, pureed until smooth with their juices
1/4 cup chopped fresh flat leaf parsley, plus more for garnish
2 tablespoons chopped fresh oregano
Honey, if needed
1 1/2 cups canola oil
1 1/2 pounds eggplant, cut crosswise into 14-thick slices
6 tablespoons unsalted butter
1/2 cup flour
2 1/2 cups milk
1 bay leaf
1/8 teaspoon freshly grated nutmeg
3 egg yolks
1/2 cup soft goat cheese
1 cup grated Romano
1 lemon, zested

Steps:

  • For the lamb: Soak the currants in warm water for 30 minutes. Drain.
  • Heat 1 tablespoon of the olive oil in a 6-quart saucepan over high heat. Add the lamb, cinnamon, ginger, allspice, cayenne, and salt and pepper and cook, stirring to break up the meat, until browned, about 5 minutes. Transfer the lamb to a large strainer set over a bowl and drain; discard any liquid left in the pan. Return the pan to the heat and add the remaining 3 tablespoons olive oil and heat until it begins to shimmer. Add the onions and bell pepper and cook until soft, about 5 minutes. Add the serrano and garlic and cook for 1 minute. Add the tomato paste and cook for 1 minute.
  • Return the lamb to the pan, add the wine, and cook, stirring occasionally, until almost completely evaporated, about 5 minutes. Add the tomato puree and currants and bring to a boil. Reduce the heat to medium-low and simmer until thickened, about 30 minutes. Stir in the parsley and oregano and season with salt and pepper and honey, if needed. Remove from the heat.
  • For the eggplant: Heat the canola oil in a 12-inch skillet over medium-high heat. Season the eggplant slices on both sides with salt and pepper. Working in batches, add the eggplant slices and fry until tender and lightly golden brown on both sides, about 5 minutes. Transfer the eggplant slices to paper towels.
  • For the bechamel: Melt the butter in a medium saucepan over medium heat. Add the flour and cook, whisking constantly, until pale and smooth, 2 minutes. Still whisking constantly, add the milk and bay leaf and cook until thickened. Season with salt, pepper, and nutmeg and discard the bay leaf. Let the sauce cool for 5 minutes. In a small bowl, whisk together the egg yolks, goat cheese, and lemon zest and whisk into the bechamel sauce until smooth.
  • Preheat the oven to 400 degrees F. Butter a 3-quart baking dish or casserole dish.
  • To assemble: Put half the eggplant slices in the dish and cover with half the meat sauce. Top the sauce with the remaining eggplant slices, and then the remaining meat sauce. Pour the bechamel over the top of the meat sauce and spread evenly with a rubber spatula. Sprinkle Romano evenly over the top, place the dish on a baking sheet, and bake until browned and bubbly, 45 to 50 minutes. Top with more chopped parsley, if desired. Let cool for at least 20 minutes before serving.

1 1/2 cups whole, peeled, canned tomatoes (with puree), roughly chopped
1 bay leaf
5 tablespoons unsalted butter

3 cups whole milk, room temperature
1 1/2 teaspoons kosher salt

1 large egg
2 large egg yolks
1/2 cup dried breadcrumbs

Steps:

  • Bake the eggplant: Preheat the oven to 475 degrees F. Brush the eggplant slices on both sides with the oil and lay on 2 small or 1 large foil-lined baking sheet. Season with salt and pepper. Cover with foil and bake until the eggplant is soft, about 25 minutes. Set aside covered.
  • Make the meat sauce. Heat the olive oil in a large skillet over medium-high heat. Add the onion and cook, stirring with a wooden spoon, until lightly browned, about 4 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 1 minute. Add the beef, oregano, allspice, cloves, and cinnamon. Break the meat up into small pieces and season with the 1/2 teaspoon salt and pepper to taste. Cook, stirring occasionally, for about 2 minutes. Lower the heat to medium and cook, stirring, until just cooked but still slightly pink inside, about 1 minute more. Add the tomato and bay leaf and bring to a simmer. Cover, and cook until the sauce is thickened and fragrant, about 20 minutes.
  • Make the custard sauce. Melt the butter in a medium saucepan over medium heat. Whisk in the flour until smooth. Cook, stirring, for 1 minute. Remove the pan from the heat and add the milk, salt, and nutmeg. Return to the heat and while whisking constantly, bring to a boil. Simmer 2 minutes. Transfer the sauce to a bowl and stir to cool. When the sauce is cool, whisk in the egg and yolks.
  • Assemble the moussaka. Lower the oven to 350 degrees F. Brush a 9 x 13 x 2-inch casserole dish with the oil. Scatter the breadcrumbs over the bottom of the pan. Lay half of the eggplant in the pan, overlapping the slices if needed. Cover with half of the meat sauce and smooth with a rubber spatula. Repeat with the remaining eggplant and meat sauce. Pour the custard sauce over the layered mixture and smooth with a rubber spatula. Sprinkle with the Pecorino Romano and bake, uncovered, until lightly browned and the custard is set, about 1 hour.
  • Remove the moussaka from the oven and let rest for 10 minutes. Use a slotted spoon or spatula to serve.

This recipe for moussaka is adapted from one found in David Rosengarten's book "Taste" which includes an entire section devoted to the classic Greek casserole. In the book, Mr. Rosengarten claims that his is "the lightest, least oily, least tomatoey, most eggplanty, most refined moussaka that you've ever tasted." Isn't that just what you want as you plan a dinner party? Mr. Rosengarten writes with bravado, but he certainly persuaded me to try his recipe. And it delivered.

4 large eggplants, about 1 1/2 pounds each
6 tablespoons Greek olive oil, plus a little for coating the eggplants
Kosher salt, to taste
4 medium onions, chopped
6 garlic cloves, chopped
1 28-ounce can crushed tomatoes in tomato puree
1/4 cup parsley, minced
2 teaspoons dried oregano
1/2 teaspoon ground cinnamon
2 tablespoons red wine vinegar
2 pounds ground lamb
1/2 cups dry white wine
Black pepper to taste
4 pinches freshly grated nutmeg
6 tablespoons unsalted butter
4 tablespoons flour
2 cups hot, scalded milk
White pepper, to taste
4 eggs
10 tablespoons fresh bread crumbs
1 cup grated kefalotyri cheese or pecorino Romano

Steps:

  • Preheat oven to 375 degrees. Prick eggplants several times with a fork. Rub a little olive oil into their skins. On a large baking sheet, roast eggplants until soft, about 30 minutes, turning frequently. Remove from oven and let cool. Cut into 1/2-inch-thick round slices.
  • In a saute pan, heat 4 tablespoons olive oil over high heat and brown eggplant slices lightly on each side. Do this in batches, adding more oil as necessary. Drain on paper towels and sprinkle with salt. Set aside.
  • In a saucepan heat 1 tablespoon olive oil over medium heat. Add 1 chopped onion and 2 chopped garlic cloves, and saute until tender. Add tomatoes and their puree, squeezing them into coarse chunks. Add parsley, oregano, cinnamon and vinegar. Stir well. Simmer, uncovered, for 25 minutes. Reserve.
  • In a large saute pan, heat 1 tablespoon olive oil over medium-high heat. Add remaining onions and garlic. Saute for 5 minutes. Add lamb, in stages if necessary, and brown well, breaking up pieces with a wooden spoon. Add wine and bring to a boil. Cook until wine has nearly evaporated. 5. Season lamb with salt, black pepper and 2 pinches of nutmeg. Stir in 1 cup of reserved tomato sauce. Bring to a boil, reduce heat and simmer, covered, for 1 hour.
  • In a large saucepan, melt 4 tablespoons of butter over medium-low heat, and gradually whisk in flour. Cook for 2 minutes, whisking constantly. Do not let this brown. Add hot milk and whisk rapidly to combine. Bring to a slow boil, whisking constantly. Reduce heat and simmer for 25 minutes, stirring frequently, until smooth and thickened. Season with salt, white pepper and remaining 2 pinches nutmeg. Let cool slightly.
  • In a mixing bowl, beat eggs and whisk in a spoonful of bechamel. Whisk in remaining bechamel in a thin stream, and adjust seasoning.
  • Preheat oven to 350 degrees. Assemble moussaka: Sprinkle 2 tablespoons of bread crumbs across the bottom of a large baking dish (18-by-8-by-3 inches) and cover crumbs evenly with half the eggplant slices. Drain as much oil from lamb mixture as possible, and spread the meat over the eggplant layer. Top meat with half the cheese, then with half the remaining bread crumbs. Place remaining eggplant slices on top of the bread crumbs, then add the bechamel, remaining cheese and remaining bread crumbs in even layers. Dot with remaining butter.
  • Bake for 45 minutes, until well browned. Remove from oven and let cool slightly, about 15 minutes. Cut into 3-inch squares to serve. Serve with the extra tomato sauce.

4 eggplants, cut lengthwise into 1/3-inch slices
salt to taste
4 cups milk
1 stick butter
6 tablespoons all-purpose flour
3 egg yolks, beaten
7 tablespoons olive oil, divided
2 onions, grated
3 cloves garlic, finely chopped
1 pound lean ground beef
½ teaspoon ground allspice
½ teaspoon white sugar
1 pinch ground cinnamon
salt and ground black pepper to taste
1 (14 ounce) can tomato sauce
4 tablespoons chopped fresh parsley
1 egg white, lightly beaten
1 ½ cups freshly grated Parmesan cheese

Steps:

  • Sprinkle eggplant slices with salt and place in a colander set in the sink or over a plate. Let sit for 30 minutes to 1 hour so the salt can draw out any bitterness.
  • Meanwhile, make bechamel sauce. Heat milk in a saucepan almost to a boil. Melt butter in a skillet over medium heat. Whisk in flour until a smooth paste forms. Lower heat and gradually pour in hot milk, whisking constantly until bechamel sauce thickens. Season with salt. Remove from heat and allow to cool slightly.
  • Rinse eggplant slices under cold running water. Squeeze out liquid and pat dry with paper towels. Whisk egg yolks into the cooled bechamel.
  • Heat 3 tablespoons olive oil in a large skillet and cook eggplant slices in batches until each side is lightly browned, about 3 minutes per side. Drain on a large plate lined with paper towels.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish with olive oil.
  • Heat remaining 4 tablespoons olive oil in a large skillet over low heat. Cook grated onion until soft, about 4 minutes. Add garlic and cook for 1 minute. Increase heat to medium-high and add ground beef. Cook and stir until browned and crumbly, about 5 minutes. Season with allspice, sugar, cinnamon, salt, and pepper.
  • Stir in tomato sauce and bring to a simmer. Cook until all excess liquid has evaporated and mixture appears dry, 15 to 20 minutes. Stir in parsley and remove from heat. Allow to cool slightly, then stir in the egg white.
  • Arrange a layer of eggplant in the prepared baking dish. Cover eggplant with all of the beef mixture and sprinkle with 1/3 of the Parmesan cheese. Cover with remaining eggplant and sprinkle another 1/3 of Parmesan cheese on top. Pour bechamel sauce over the top and sprinkle with remaining Parmesan cheese.
  • Bake in the preheated oven until the top of the moussaka is set and golden, 45 minutes to 1 hour. Remove from oven and let rest at room temperature for 10 to 15 minutes before slicing and serving.

The very best traditional Greek Moussaka recipe. Imagine layers of juicy beef mince, sweet eggplants, and creamy béchamel sauce baked to perfection!

6 eggplants
5 potatoes (optional)
vegetable oil (for frying the eggplants)
750g beef or lamb mince (26 oz)
2 red onions (chopped)
2 cloves of garlic (chopped)
1 tin chopped tomatoes (400g / 14oz)
2 tbsp tomato paste
1 teaspoon sugar
1 glass of red wine
Pinch of sea salt and freshly ground black pepper
1 bay leaf
A pinch of cinnamon or one cinnamon stick
1/4 of a cup olive oil
900ml milk (31 fl.oz)
120g butter (4 oz)
120g flour (4 oz)
a pinch of nutmeg
2 egg yolks
100g Parmigiano-Reggiano or Kefalotyri or your favourite hard cheese (3.5oz)
salt to taste

Steps:

  • To prepare this Greek moussaka recipe, begin by preparing the eggplants. Remove the stalks from the eggplants and cut them into slices, 1 cm thick. Season with salt and place in a colander for about half an hour.
  • and squeeze with your hands, to get rid of the excessive water. Pat them dry and fry in plenty of oil, until nicely colored. Place the fried eggplants on some paper, in order to absorb the oil. (For a lighter version of the traditional Greek moussaka try drizzling the aubergines with some olive oil and bake them for 20 minutes instead of frying them). Set aside when done.
  • If you are adding potatoes to your moussaka, now its time to slice them into 0.5cm, half a finger width slices. Fry them or bake them in the same way as the eggplants. Season with some salt and set them aside when done.
  • for the moussaka. Heat a large pan to medium-high heat and add the olive oil. Stir in the chopped onions and sauté, until softened and slightly colored. Stir in the mince breaking it up with a wooden spoon and sauté. When it starts to brown, add the the garlic and tomato paste and sauté until the garlic starts to soften. Pour in the red wine to deglaze the meat juices and wait to evaporate. Add the tinned tomatoes, the sugar, a pinch of cinnamon, 1 bay leaf and a good pinch of salt and pepper. Bring to the boil then turn the heat down and simmer with the lid on for about 30 minutes or until most of the juices have evaporated. Set aside when done.
  • for the moussaka. Use a large pan to melt the butter over low-medium heat. Add the flour whisking continuously to make a paste. Add warmed milk in a steady stream; keep whisking in order to prevent your sauce from getting lumpy. If the sauce still needs to thicken, boil over low heat while continuing to stir. Its consistency should resemble a thick cream.
  • Remove the béchamel pan from the stove and stir in the egg yolks, salt, pepper, a pinch of nutmeg and the most of the grated cheese. Reserve some cheese to sprinkle on top! Whisk quickly, in order to prevent the eggs from turning an omelette! Season with salt to taste. Take one spoon full of béchamel and stir it in the meat sauce. Set the béchamel sauce aside.
  • Now its time to assemble the moussaka. For this moussaka recipe you will need a large baking dish, approx. 20x30cm / 8x12inch and 8cm/3 inch deep). Butter the bottom and sides of the pan and layer the potatoes first (if you're using them), then half the eggplants. Pour in all of the meat sauce and spread it out evenly. Add a second layer of eggplants, top with all of the béchamel sauce and smooth out with a spatula.
  • . Preheat you oven at 180C/350F and bake your musaka for about 60 minutes or until its crust turns light golden brown. Even though it will be really hard to do so, you should wait for the moussaka to cool down and be just warm to the touch before cutting into pieces. This will prevent the béchamel sauce from pouring out when you're cutting your pieces.
  • Serve the Moussaka with a refreshing Traditional Greek Salad and enjoy over a glass of wine!

Moussaka With Roasted Mushrooms image

In this Balkan style Moussaka I have substituted the roasted mushroom mix for half the meat. But you can also make a vegetarian version with no meat at all. It is delicious either way, with a complex, slightly sweet Eastern Mediterranean sauce spiced with a little cinnamon, a pinch of allspice and a few cloves. Greek moussaka is topped with béchamel, which can be heavy, even gummy. But this one has a light, fluffy topping made with yogurt and eggs. There are a few steps involved here and the sauce is a long-cooking one, but you can get that started while the eggplant is roasting in the oven to speed things along or make the sauce the day before.

2 tablespoons extra virgin olive oil
1/2 pound minced or ground lamb or lean beef
2 tablespoons extra virgin olive oil
2 medium onions, finely chopped
2 to 4 large garlic cloves, minced (to taste)
1/2 pound roasted mushroom mix, or for a vegetarian version 1 pound
2 pounds tomatoes, peeled and chopped, with juice, or 1 28-ounce can, pulsed in a food processor with juice
1/2 teaspoon sweet paprika
1/4 rounded teaspoon ground cinnamon
3 cloves, ground
Pinch of allspice (2 or 3 berries), ground
1/2 teaspoon sugar
1 bay leaf
1/2 to 1 cup hot water
Salt to taste
freshly ground pepper to taste
1/2 cup chopped flat-leaf parsley
1 egg, beaten
4 eggs, beaten
1 1/4 cups plain Greek yogurt
pinch of Salt
pinch of pepper
pinch of paprika
1/2 cup freshly grated Parmesan, kefalotyri or kashkaval cheese

Steps:

  • Heat oven to 450 degrees with racks positioned in the middle and lower third. Slice eggplants lengthwise, about 1/3 inch thick. Line 2 baking sheets with foil and brush foil with olive oil. Place slices on the foil, season to taste with salt, and brush with olive oil. Place in oven and roast until soft and browned in spots, about 20 minutes, switching the pans top to bottom after 10 minutes. When done slices will look dry on the surface but when you pierce them with a knife you should be able to see that the flesh is soft. Remove from oven and carefully fold foil up over eggplant to make a foil packet, taking care not to burn yourself. It doesn't matter if the eggplant slices pile onto each other. Crimp edges of foil so that eggplant is sealed in the packet and leave to steam inside foil for 20 to 30 minutes.
  • Meanwhile make the meat and tomato filling. In a large, deep skillet or casserole heat olive oil over medium heat and add onions. Cook, stirring often, until tender, about 5 minutes, and add garlic. Cook, stirring, until fragrant, about 30 seconds, and raise heat to medium-high. Stir in ground beef or lamb and brown for about 3 minutes. Stir in roasted mushroom mix, tomatoes, paprika, cinnamon, allspice, cloves, sugar, bay leaf, salt and enough water to barely cover meat. Bring to a simmer, reduce heat to low, cover and simmer 45 minutes to an hour, stirring occasionally. The mixture should be thick and very fragrant. Cook uncovered for another 5 to 10 minutes, until liquid in pan is just about gone. Remove bay leaf, taste and add salt and pepper, and remove from heat. Allow mixture to cooled slightly, then stir in 1 beaten egg and parsley.
  • Heat oven to 350 degrees. Oil a 3-quart baking dish or gratin dish. Make an even layer of half the eggplant slices over the bottom, and spread all of meat sauce on top in one layer. Top with remaining eggplant. Bake for 30 minutes.
  • Meanwhile, beat together eggs and yogurt, season with salt (about 1/2 teaspoon) and stir in pepper and paprika. Pour over top of moussaka, scraping out every last drop with a rubber spatula. Sprinkle grated cheese evenly over the top. Return to oven and bake for another 25 to 30 minutes, until puffed and golden. Serve warm.

3 1/2 pounds eggplant, unpeeled, cut into 1/2-inch-thick rounds
1/2 cup (about) olive oil
1 large onion, thinly sliced
1 cup finely chopped peeled carrots
1 cup finely chopped celery
4 garlic cloves, minced
12 ounces portobello mushrooms, cut into 1/2-inch pieces
1 teaspoon dried oregano
1/2 teaspoon ground cinnamon
1 28-ounce can crushed tomatoes with added puree
1/4 cup chopped fresh Italian parsley
1 cup grated Parmesan cheese
6 tablespoons (3/4 stick) butter
7 tablespoons all purpose flour
3 1/2 cups whole milk
4 large egg yolks

Steps:

  • Cover 2 baking sheets with paper towels. Sprinkle both sides of eggplant rounds with salt. Arrange eggplant in single layer atop towels. Let stand 30 minutes.
  • Position first rack in bottom third of oven and second rack in top third of oven and preheat to 425°F. Remove eggplant and paper towels from baking sheets. Pat eggplant dry. Oil same baking sheets. Brush both sides of eggplant rounds with 1/4 cup oil. Arrange in single layer on baking sheets. Bake 10 minutes. Turn eggplant and rotate pans in oven. Continue baking until tender, about 15 minutes longer. Cool. Reduce oven temperature to 350°F.
  • Meanwhile, heat 1/4 cup oil in heavy large skillet over medium-high heat. Add onion, carrots and celery. Sauté until onion is very tender, about 12 minutes. Mix in garlic, then mushrooms. Sauté until juices evaporate, about 10 minutes. Mix in oregano and cinnamon. Add tomatoes and parsley. Cook until mixture is thick, about 10 minutes. Season with salt and pepper.
  • Lightly oil 13x9x2-inch glass baking dish. Arrange half of eggplant rounds in single layer in dish. Spoon half of tomato mixture evenly over eggplant. Sprinkle with 2 tablespoons cheese. Repeat layering with remaining eggplant, tomato mixture and 2 tablespoons cheese.
  • Melt butter in heavy medium saucepan over medium heat. Whisk in flour. Stir 2 minutes. Gradually whisk in milk. Simmer until sauce thickens, stirring constantly, about 5 minutes. Whisk in 1/2 cup cheese. Season with salt and pepper. Whisk yolks in large bowl to blend. Gradually whisk in hot sauce. Pour sauce over vegetables in dish. Sprinkle 1/4 cup cheese over sauce. (Can be made 1 day ahead. Cover; chill.)
  • Bake moussaka until heated through and sauce is golden brown on top, about 45 minutes (or about 55 minutes for refrigerated moussaka). Cool 15 minutes.

2 large potatoes
300g mushrooms
2 aubergines
250g cherry tomatoes
4 garlic cloves
30g oregano
30g mint
½ tsp cinnamon

650g yoghurt
½ tsp nutmeg
2 tins chopped tomatoes
100g grated Cheddar cheese
2 courgettes
100g mixed salad leaves
2 lemons
Olive oil
Salt & pepper

Steps:

  • Preheat your oven to 190℃/gas 5. Halve the onions then peel and chop through the root into thin wedges. Scrub eht potatoes and chop into bite-sized pieces - not too large, so they cook in time. Toss both onion and potato in a large roasting tim in 2 tbsp olive oil. Season and roast for 10 mins, while you continue.
  • Clean and quarter the mushrooms. Chop the aubergine into 1cm discs, then chop the discs in half. Halve the cherry tomatoes, unless, very small, then leave them whole.
  • Toss the aubergine, mushrooms and cherry tomatoes into the roasting tin, with a splash more oil. Roast it all for 10 mins.
  • Peel and finely chop or grate the garlic. Roughly chop 1 good tablespoon of oregano leaves. Shred a tsp of mint leaves.
  • After 10 mins, toss the veg with the garlic, chopped oregano, mint and cinnamon. Roast for 10 mins.
  • In a bowl, whisk the eggs together with a fork, then stir in the yoghurt and the nutmeg.
  • Toss the roasting veg with the tinned tomatoes and roast for 5 more mins, then check the seasoning before transferring it all to a reasonably snug-fitting baking dish. Spread the yogurt mix over the top, sprinkle with the cheese and bake for approx 3--45 mins, until the top is golden and just set - this will depend a lot on your oven and dish.
  • Shred a little more mint, approx 1 tsp. Peel long ribbons of courgette, working down and round, stopping when you reach the seedy middle. Just before serving, toss the courgette and mint with a handful of salad leaves to your liking, a squeeze of lemon, pinch of salt and a little olive oil to taste. Serve with the moussaka.

Steps:

  • Salt the eggplant lightly and bake on an oiled cookie sheet at 350 degrees for 15 minutes or until tender.
  • Saute the mushrooms in the 3 tbps. of butter along with the onions and garlic.
  • Add the tomato paste, parsley, oregano, basil, salt, pepper, cinnamon and wine. Simmer until the liquid is absorbed.
  • Add the bread crumbs, parmesan and beaten eggs. Remove from heat.
  • Make a white sauce. Melt the 1/2 cup of butter over a low flame. Whisk in the flour. Then whisk in the milk. Keep whisking until thick.
  • Beat in the egg yolks.
  • Butter a large casserole dish. Cover the bottom with eggplant slices, then half the mushroom sauce. Add remaining eggplant and cover with remaining mushroom sauce. Top with white sauce. Sprinkle with bread crumbs and extra grated cheese if desired.
  • Bake at 350 degrees for 35 minutes, covered with foil. Remove foil and bake 15 minutes longer.

600-700g mushrooms, chopped (25 oz.)
1 medium red onion, finely chopped
1-2 cloves of garlic, chopped
1/4 of a cup white wine

1 tin chopped tomatoes
1 tsp sugar
one cinnamon stick
salt and freshly ground pepper
chopped parsley (optional)
875ml milk (3 and 1/2 cups)
100g butter (3.5 ounces)
100g flour (3.5 ounces)
a pinch of nutmeg
2 egg yolks
100g Parmigiano-Reggiano or Kefalotyri (3.5 ounces)
salt to taste

Steps:

  • To prepare this vegetarian moussaka recipe, begin by preparing your eggplants. Remove the stalks from the eggplants and cut them into slices, aprrox.1 cm thick. Season with salt and place in a colander for about half an hour.
  • Rinse the eggplants with plenty of water and squeeze with your hands, to get rid of the excessive water. Pat them dry and fry in plenty of oil, until nicely colored. Place the fried eggplants on some paper, in order to absorb the oil. For a healthier version of this vegetarian moussaka recipe try drizzling the eggplants with some olive oil and bake them for 15 minutes at 200C instead of frying them.
  • Now it's time to prepare a delicious mushroom based sauce for your vegetarian moussaka. Heat a pan to medium-high heat and add the olive oil. Stir in the chopped mushrooms and sauté, until most of the juices have evaporated. Add the chopped onions and garlic and sauté. Pour in the wine and wait to evaporate. Add the tinned tomatoes, mushing them with a wooden spoon, the sugar, cinnamon and a good pinch of salt and pepper. Bring to the boil, turn the heat down and simmer for about 15 minutes until most of the juices have evaporated and the sauce thickens.
  • Lastly prepare the béchamel sauce for the vegetarian moussaka. Use a deep pan to melt the butter over low-medium heat. Add the flour whisking continuously to make a paste and add warmed milk in a steady stream. Keep whisking in order to prevent your sauce from getting lumpy. If the sauce still needs to thicken, boil over low heat while continuing to stir. Remove the pan from the stove and stir in the egg yolks, salt, pepper, a pinch of nutmeg and the grated cheese. Whisk really quickly, season with salt to taste and set aside while you assemble the dish.
  • For this vegetarian moussaka recipe you will need a large baking dish, approx. 20*30 cm. Butter the bottom and sides of the pan and sprinkle with some breadcrumbs (this will help absorb the extra juices). Layer the eggplants. Pour in the mushroom sauce and even out. Add a second layer of eggplants, top with the béchamel sauce and smooth out with a spatula.
  • Sprinkle with grated cheese and bake the vegetarian moussaka in preheated oven at 180-200C for about 25-30 minutes, until crust turns light golden brown. Even though it will be really hard.. you should wait for the moussaka to cool down for a while before cutting into pieces.
  • Serve this delicious vegetarian moussaka with a refreshing Greek salad aside. Enjoy!

Beef Moussaka with Eggplant & Zucchini image

1 eggplant
1 zucchini
2 tbsp. biodynamic extra virgin olive oil
To taste salt & pepper
1 onions, yellow
8-10 oz. ground beef (harley farms)
1 cup tomato sauce
1 tbsp. greek spice mix (oregano, garlic powder, parsley)
½ cup parmesan
1 half-dozen hope eggs
¼ cup non-fat plain greek yogurt
2 multigrain pita

Steps:

  • Roast the Veggies • Preheat the oven to 425ºF and line a baking sheet with aluminum foil. • Rinse the eggplant and zucchini and slice them into ¼- inch thick rounds. Add them to a medium bowl and toss with 1 tbsp. olive oil and salt and pepper to taste. • Pour the veggies onto the baking sheet and bake until tender, about 15 minutes. Remove from oven and set aside. Set the oven to broil. Make the Sauce • While the veggies roast, heat 1 tbsp. olive oil in a large pan over medium-high heat. • Dice the onion and add it to the pan. Cook for 2 minutes. • Add the ground beef and cook for 8 minutes, stirring occasionally to break up the beef. • Stir in the Greek Spice Mix and tomato sauce. • Simmer until the mixture thickens, about 10-12 minutes. Bake the Moussaka & Pita • Rinse the medium bowl used for the veggies earlier. • Grate the Parmesan and add it to the bowl. • Add the egg and Greek yogurt, and mix well. • Wrap the pita in aluminum foil and set aside. • Transfer the beef mixture into a large baking dish, smoothing the surface with the back of a spoon. • Arrange the roasted eggplant and zucchini slices in an overlapping fashion on top. Pour the egg-yogurt mixture over the veggies, smoothing it evenly. • Broil the moussaka in the oven until the topping has turned golden-brown, about 3-5 minutes. • At the same time, place the foil-wrapped pita directly on an oven rack and bake along with the moussaka. • Watch carefully that nothing burns. Bring It All Together • Carefully remove the moussaka and pita from the oven and let cool slightly before evenly dividing both between two plates to serve!

1/2 cup parsley, chopped

1 tablespoon garlic, finely chopped
1 tablespoon oregano

6 tablespoons flour
1/8 teaspoon nutmeg
1/4 teaspoon white pepper

3 lbs eggplants
4 eggs, beaten
2 cups ricotta cheese
1 cup dry breadcrumbs
2 cups kefalotyri or 2 cups parmesan cheese, grated

Steps:

  • First make the tomato sauce: peel and mince onions. Saute onions in 2 Tbsp oil and 2 Tbsp butter, over moderate heat, until they are soft and lightly colored (about 8 minutes). Add mush- rooms and saute. Stir in tomatoes, tomato paste, wine, parsley, seasonings and sugar.
  • Reduce heat to low and simmer uncovered, for 30-45 minutes, stirring occasionally, until most of the liquid has evaporated, and the mixture is quite thick. Remove skillet from heat and let it cool completely.
  • Start seasoning the eggplants: peel eggplants and slice vertically, 1/8 to 1/4 inch thick. Sprinkle lightly with salt and let sit for 30 minutes.
  • Now make the Bechamel Sauce. NOTE: The Bechamel-egg-ricotta mixture will overflow all but the largest (professional size) food processors. Use a mixer or blend by hand.Place the milk in a saucepan, and heat it just until tiny bubbles appear along the edges. Remove and set aside.
  • Melt the butter in 3-quart saucepan over very low heat until foamy, being careful not to brown. Slowly add the 6 Tbsp flour, stirring constantly until smooth (3-4 minutes), and still being careful not to let it brown.
  • Add the milk slowly, whipping with a wire whisk. When the mixture is thick and smooth, remove it from the heat and stir in seasonings.
  • Stir ricotta cheese until it is smooth and creamy. Gently fold it into the Bechamel sauce. Stir in beaten eggs until thoroughly incorporated.
  • Back to the eggplant: Rinse well with cold water; squeeze gently and pat dry. Dredge the eggplant in 1 1/2 cups flour, and saute each in olive oil until it is brown on both sides.
  • Remove and discard any excess oil that has risen to the top of the tomato mixture. Lightly grease a 16x10 baking pan that is at least 3 inches deep, and sprinkle the bottom with a few breadcrumbs.
  • Place a layer of eggplant in the pan, following with a layer of tomato mixture. Sprinkle with breadcrumbs and grated cheese. Repeat as many times as you have eggplant to last. Pour the Bechamel-ricotta sauce over the top and bake at 300 deg. F for one hour, or until a golden-brown crust has formed on top.
  • Remove moussaka from oven and let it stand undisturbed 20-30 minutes; the delay allows the layers to fuse.

Moussaka is the iconic hearty Greek dish composed of layers of eggplants, saucy ground meat and topped with Béchamel sauce.

1½ lb ground beef ((or ground lamb))
4 potatoes
2 eggplants
2 onions (, diced)
1½ cup extra-virgin olive oil
2 tablespoons tomato paste
2 cloves garlic (, crushed)
½ cup red wine
½ bunch parsley (, finely chopped)
Salt
Pepper
4 cups milk
1 cup flour
½ cup butter
2 egg yolks
½ teaspoon ground nutmeg
Salt
Pepper

Steps:

  • Peel potatoes and cut them into ¼ inch (5mm) slices.
  • Slice off stalk and bottom ends of eggplant. Cut them lengthwise into ¼ inch (5mm) slices.
  • Place eggplant slices in a large bowl filled with salty water and leave to soak for 30 minutes, then remove eggplant from water and leave to dry well on paper towel.
  • Over medium heat, add ¼ cup (100ml) of olive oil to a large frying pan and fry the sliced potato in batches. Make sure to turn them over to cook both sides. The potato slices should be fried until slightly soft, about 4-5 minutes on each side.
  • When the potato slices are cooked, remove from the hot oil and place them on paper towels.
  • In the same frying pan, add ¼ cup (100ml) of olive oil and over a medium heat, start frying the eggplant slices in batches, adding olive oil regularly.
  • Remove each batch from the hot oil and place them on spread paper towels.
  • In the same pan, add ¼ cup (100ml) oil and sauté the diced onion until translucent. Add ground meat to the onions in the frying pan and mix well to break up the meat.
  • Stir meat continuously over medium-high heat for 10 minutes.
  • Add red wine, garlic, parsley, salt and pepper to the pan and stir well to mix.
  • Dilute tomato paste in ½ cup (100ml) of water and add to pan.
  • Bring to a boil and reduce the heat to medium-low. Simmer uncovered for 30 minutes, stirring occasionally, until liquid is entirely reduced.
  • Grease the sides and bottoms of a baking pan with olive oil.
  • Cover the bottom completely with a layer of potato slices by overlapping where necessary to ensure a complete covering. Cover with a layer of eggplant slices.
  • Spoon out a little more than half of the meat mixture and spread to cover the bottom layers evenly.
  • Cover meat layer with remaining potato slices, then cover completely with another layer of eggplant slices, overlapping as necessary to ensure complete coverage.
  • Spread remaining meat mixture out evenly to cover the eggplant layer. Using a spatula, press down gently on the layers to compact them.

Steps:

  • Start off by putting your tofu on to press. If you have a tofu press, then this is perfect to use, but if not, you can place the block of tofu on a plate, with another plate on top of it and then place something heavy on top of that, like a heavy pot or a heavy stack of books. Let it press for 20 minutes.
  • While the tofu is pressing, preheat your oven to 350°F (180°C). Slice the eggplant into round slices about 1/4 inch thick and place them onto parchment lined baking sheets (we used two half sheet trays).
  • Brush the eggplant slices with olive oil and sprinkle on salt and pepper.
  • Place the eggplant into the oven and bake for 25 minutes, turning them over at the halfway mark.
  • Add walnuts to the food processor and process into crumbles. Add to a mixing bowl.
  • Add sliced mushrooms to the food processor and process until finely chopped. Add to the mixing bowl.
  • When the tofu is pressed, mash it with a fork and add it to the mixing bowl.
  • Add the lentils to the mixing bowl and toss everything together.
  • Add olive oil, chopped onion, celery and red bell pepper to a pot and sauté until softened.
  • Add crushed garlic, paprika, cumin, oregano, rosemary and cinnamon. Sauté for a minute to lightly toast the spices.
  • Now add the walnut, mushroom, tofu and lentil mix and toss together with the vegetables and spices.
  • Add tomato paste, marinara sauce and soy sauce and fry for about 8 minutes until you have cooked off any excess liquid and have a delicious soft mince texture.
  • Add coconut sugar, black pepper and sea salt to taste.
  • Add olive oil to a pot and heat it. Add the flour and fry it in the oil briefly. Add in all the soy milk at once and stir vigorously until well combined.
  • Alternate between a wooden spoon and a whisk while heating to remove any lumps. It can tend to stick to the bottom of the pot so make sure you are scraping the bottom of the pot constantly and then whisking it in.
  • Keep stirring and whisking until it reaches a rolling boil and then let it boil while you continue to stir until it thickens.
  • When it's thickened, add black pepper and salt to taste.
  • Preheat the oven to 350°F (180°C). Place half of the roasted eggplant along the bottom of a 9x13 oven-safe dish. Add all the vegan mince on top of the eggplant and smooth it down into a thick layer.
  • Top the vegan mince with the remaining sliced eggplant. Add all of the bechamel sauce on top and smooth it down with the back of a spoon.
  • Place into the oven to bake for 40 minutes switching to grill for the last 5 minutes so that it can brown on top.
  • Let it cool for 10 minutes on the countertop before serving.
  • Decorate with sprinkles of dried oregano, paprika, ground black pepper and sprigs of fresh rosemary.

A simple recipe for a vegan roasted vegetable moussaka baked in the oven and served with potatoes and green veg.

1 tablespoon olive oil
1 aubergine (eggplant), sliced
1 large courgette (zucchini), sliced
3 bell peppers (red, orange or yellow), sliced and cut into chunks
6 large closed cap mushrooms, sliced
1/2 teaspoon dried parsley
1/2 teaspoon dried oregano
a good grinding of salt and pepper
1 tablespoon olive oil
1 large onion, finely chopped
2 large cloves garlic, crushed or grated
6 large closed cup mushrooms, chopped
200g (7 oz) meat-free mince
400g (14 oz) tin chopped tomatoes
1 teaspoon dried thyme
1 tablespoon balsamic vinegar
1 1/2 tablespoons vegan Worcestershire sauce (see notes below for substitutes)
250ml (1 cup) vegetable stock ( I used 3 stock cubes but you can follow the packet instructions, I use more than recommended for the quantity for a deeper flavour)
Salt and pepper to season
250ml (1 cup) oat milk (or your regular milk)
1/2 peeled onion
2 bay leaves
3 tablespoons vegan butter (or margarine)
3 tablespoons plain flour
salt and pepper

Steps:

  • Preheat the oven to 190c/170c fan/375f/gas mark 5.
  • Lay your vegetables in a single layer on one or more sheet pans or baking trays.
  • Drizzle with olive oil, scatter over the herbs and season and salt and pepper.
  • Roast for 20 - 25 minutes until the vegetables are soft and start to char at the edges.
  • Once cooked, remove from the oven and set aside.
  • While the veg is roasting, make the savoury mince. Start by sauteeing the onion and garlic in a pot with a little olive oil until soft.
  • Once the onions are soft, add the mushrooms and cook them down, seasoning them with salt and pepper as they cook.
  • Now add the meat-free mince, chopped tomatoes, and herbs and give it a good stir.
  • Add the balsamic vinegar and Worcestershire sauce and mix in, then add the hot vegetable stock. Stir and leave to cook on a medium heat for 25 minutes until it has thickened a little.
  • Season with salt and pepper and taste to check the seasoning.
  • While the vegetables and roasting and the savoury mince is cooking you can make your bechamel sauce.
  • Start by adding the milk to a measuring jug, with the onion and bay leaves and heat in the microwave. You don't want to boil it, just warm it through to help the flavour to develop. If you don't have a microwave, you can heat in a pot.
  • Now melt the vegan butter in a small pan. Keep the heat fairly low.
  • Add the flour and mix in.
  • Add some of the milk, just a generous splosh and stir in. A whisk is the best for this but you can use a wooden spoon. Keep whisking until it has thickened, then add a little more milk and whisk again until thick, keep doing this until you have added all the milk and you will have a silky sauce with no lumps.
  • Allow the sauce to come to a simmer, this will help cook out the flour., then season well with salt and pepper and taste to check the seasoning.
  • If you are making it into a cheese sauce, add a generous handful of grated vegan cheddar and vegan style parmesan and allow it to melt into the sauce.
  • In one large or two or three smaller dishes (enough to serve 6) add a layer of the soya mince (use half of it).
  • Top with a layer of the roasted vegetables (all of the veg).
  • Now add another layer of savoury mince, then top with the bechamel sauce (all of it).
  • If you are freezing the moussaka, this is the time to freeze it, once cool, before the bake.
  • Bake in your pre-heated oven for 20 - 25 minutes until bubbling and golden at the edges. Vegan bechamel sauce doesn't get as golden across the surface as a dairy sauce would but that's ok.
  • Serve with boiled or steamed potatoes and green vegetables.
  • Enjoy!

Transfer eggplant to a rimmed baking sheet (it’s okay to pile the rounds on top of each other) and roast until tender and browned, 35–45 minutes. Reduce oven temperature to 400°.
  • Meanwhile, heat remaining 2 Tbsp. oil in a large wide pot over high. Cook lamb, breaking up with a spoon, until browned on all sides and cooked through and liquid from meat is evaporated (there will be a lot of rendered fat), 12–16 minutes. Strain fat through a fine-mesh sieve into a clean small bowl and transfer lamb to a medium bowl. Reserve 3 Tbsp. lamb fat; discard remaining fat.
  • Heat 2 Tbsp. lamb fat in same pot over medium-high (reserve remaining 1 Tbsp. lamb fat for assembling the moussaka). Add onion, cinnamon, 2½ tsp. salt, and ½ tsp. pepper and cook, stirring occasionally, until onion is tender and translucent, 8–10 minutes. Add chiles and remaining garlic and cook, scraping up any browned bits from the bottom of the pot, until onion is golden brown, about 5 minutes. Add paprika and tomato paste and cook until brick red in color, about 1 minute. Add wine and cook, stirring occasionally, until slightly reduced and no longer smells of alcohol, about 3 minutes. Add tomatoes and break up with a wooden spoon into small pieces (the seeds will shoot out at you if you’re too aggressive, so start slowly—puncture the tomato, then get your smash and break on!).
