An easy Sausage and White Bean Cassoulet that can be prepared in 45 minutes or less.

Steps:
- In a medium skillet cook sausages in oil over moderate heat, turning them, until browned on all sides and cooked through, about 8 minutes, and transfer to paper towels to drain.
- In fat remaining in skillet cook onions and garlic, stirring, until golden, and stir in herbs (including bay leaf), scallions or parsley, tomatoes with juice, and salt and pepper to taste. Boil mixture, stirring, 5 minutes. Cut sausage into 1/4-inch-thick slices. Add sausage and beans to tomato mixture and cook, stirring, until heated through. Discard bay leaf and keep "cassoulet" warm, covered.
- Make topping:
- In a small skillet heat oil over moderately high heat until hot but not smoking and sauté bread until pale golden. Stir in garlic, parsley, and salt and pepper to taste and sauté, stirring, 1 minute.
- Transfer "cassoulet" to a 1-quart serving dish and cover evenly with topping.
VEGETARIAN CASSOULET

Steps:
- Make cassoulet:
- Halve leeks lengthwise and cut crosswise into 1/2-inch pieces, then wash well and pat dry.
- Cook leeks, carrots, celery, and garlic in oil with herb sprigs, bay leaf, cloves, and 1/2 teaspoon each of salt and pepper in a large heavy pot over medium heat, stirring occasionally, until softened and golden, about 15 minutes. Stir in beans, then water, and simmer, partially covered, stirring occasionally, until carrots are tender but not falling apart, about 30 minutes.
- Make garlic crumbs while cassoulet simmers:
- Preheat oven to 350°F with rack in middle.
- Toss bread crumbs with oil, garlic, and 1/4 teaspoon each of salt and pepper in a bowl until well coated. Spread in a baking pan and toast in oven, stirring once halfway through, until crisp and golden, 12 to 15 minutes.
- Cool crumbs in pan, then return to bowl and stir in parsley.
- Finish cassoulet:
- Discard herb sprigs and bay leaf. Mash some of beans in pot with a potato masher or back of a spoon to thicken broth. Season with salt and pepper. Just before serving, sprinkle with garlic crumbs.
SAUSAGE AND WHITE BEAN CASSOULET

- Wash the beans well and put them in a large stockpot. Add water to the beans to cover by 2 inches and set over high heat. Bring to a boil for 2 minutes, remove from the heat, cover and let stand 1 hour.*
- Preheat the oven to 375 degrees F.
- Put the duck sausage on a baking sheet and place it in the oven for 15 to 20 minutes. Remove and let cool. The sausage will not be fully cooked through.
- Add the whole onion, whole carrot, 2 of the thyme sprigs and 3 of the bay leaves to the beans. Add more water to the pot to cover again by 2 inches. Bring to a boil, lower the heat and let simmer until the beans are mostly tender but with still a little bite to them, about 50 to 60 minutes. The beans will have soaked up all most all of the liquid you cooked them in.
- Meanwhile, pour the olive oil into a large skillet and place over medium heat. Add the bacon and cook stirring every now and then until crispy, about 2 to 3 minutes. Using a slotted spoon remove the crispy bacon pieces to a paper towel lined plate and reserve. To the same skillet, add the diced onion, sliced carrots and garlic and sweat the mixture for 20 minutes, until the onion begins to turn translucent.
- Slice the duck sausage on the bias into 1/2-inch thick pieces and add them to the vegetable mix. Add the remaining bay leaves, thyme sprigs and sliced kielbasa and cook, stirring, for 5 minutes. Next add the wine, beef broth, tomato paste and salt and pepper. Raise the heat to high, bringing the mixture to a boil. Stir well to dissolve the tomato paste and lower the heat. Allow to simmer for 5 minutes.
- Remove the whole onion and carrot from the beans, add the vegetable sausage mixture to the stockpot and return to a low heat. Stir well and cover. Let the cassoulet simmer for 15 to 20 minutes, or until most of the wine mixture has been absorbed by the beans. Spoon into a casserole dish, sprinkle the top of each serving with some of the reserved crispy bacon and serve with a crusty baguette on the side.
WHITE BEAN & VEGETARIAN SAUSAGE CASSOULET
This savory, satisfying cassoulet is the perfect recipe for two. And unlike traditional cassoulets, this one doesn't take hours upon hours to make. It's also easy to put together. First, the leeks, celery, carrot, sweet potato, garlic, and dried thyme are cooked until softened. Add the vegan, meatless sausage links and cook until those are browned (if you're not vegetarian, feel free to use your favorite type of sausage). Stir in vegetable broth, cannellini beans, and a bit of salt to finish it off. Simply top with a crunchy panko, butter, and garlic mixture, let it bake for about 10 minutes, and your delicious cassoulet is ready to serve to you and your special someone.

- Preheat oven to 400°F. Coat 1-quart gratin dish or baking dish with nonstick spray.
- In medium saucepan over medium-high heat, place broth and bring to boil. Boil broth until reduced to 11⁄2 cups, 7 to 8 minutes. Remove from heat and whisk in tomato paste; set aside.
- In medium nonstick skillet over medium heat, warm oil. Add leek, celery, carrot, sweet potato, 1 garlic clove, and thyme; cook, stirring occasionally, until vegetables are slightly softened, about 4 minutes. Stir in sausages and cook until they start to brown, about 3 minutes. Pour in broth and bring to simmer. Cook, stirring occasionally, until sweet potato is tender, 4 to 5 minutes. Add beans and salt; cook 2 minutes. Transfer to prepared baking dish.
- In cup, combine breadcrumbs, butter, and remaining 1⁄2 garlic clove and mix well. Sprinkle over bean mixture in even layer. Bake until filling is bubbly and top is golden and crisp, 10 to 11 minutes. Let cool 5 minutes before serving.
- Serving size: 1/2 of casserole, about 1 3/4 cups

DH and I made this recipe from the Field Roast website a few days ago. We thought it was pretty good for being so easy and quick to make. Field Roast is a brand that makes very good vegetarian sausages, among other vegetarian products. It can be found at Whole Foods. For the mixed herbs, I used sage, chives, and thyme.

- Combine all ingredients in a food processor and puree until smooth.
- Preheat the oven to 400 degrees F.

- Set a Dutch oven over medium-high heat, and add the olive oil to the pan.
- Season the chicken with 2 teaspoons of the Creole seasoning, 1 teaspoon of the salt, and 1/2 teaspoon of the pepper.
- Place the chicken in the pan and sear until well browned, about 4 to 5 minutes.
- Turn over and sear on the second side for an additional 4 to 5 minutes.
- Remove the chicken pieces from the pan and set aside.
- Place the sausage in the pan and cook until well caramelized, stirring occasionally, about 5 minutes.
- Add the onions, peppers and celery to the pan and cook until soft, about 4 to 5 minutes.
- Add the garlic and saute until fragrant, about 30 seconds.
- Add the beans, stock, fresh thyme and bay leaf and bring to a boil then reduce to a simmer.
- Cook the beans for 1 hour.
- Add the chicken back to the pan, and season with the remaining Creole seasoning, salt and pepper.
- Continue to cook the beans until they are tender, and the chicken is cooked through, about 1 hour.
- Stir in the chopped parsley.

- Set the slow cooker to low (ours had a 5-litre capacity). Heat the oil in a large frying pan over a high heat and brown the sausages on each side - you don't have to cook them all the way through. Set aside on a plate. Put the lardons, onion and celery in the pan and cook over a medium heat for 8-10 mins until the onion is translucent and the lardons crisp. Stir in the garlic, paprika and thyme, and fry for 3 mins.
- Pour in the wine and simmer until reduced by half, around 5-10 mins. Tip in the chopped tomatoes, stock, both lots of beans, the sugar and vinegar. Stir until combined and bring to the boil. Pour into the slow cooker with the sausages. Cover and cook for 6-8 hrs. Serve with crusty bread.

- Heat oil in a large nonstick skillet over medium-high heat. Add carrot, fennel, onion, and garlic; saute five minutes. Spoon carrot mixture into a 11 x 7 inch baking dish. Stir in beans and next five ingredients (through pepper).

VEGAN BEAN CASSOULET
An easy veggie cassoulet. I hate to use 2 pots, so if you have a cast iron casserole that goes stove top to oven, use that (although it is nice to have a big surface area for the bread topping). Update Jan 2011 - I forgot to give proper credit for this recipe, I believe it came from the original Moosewood cookbook, adapted from there. Having made this a few times now and as one reviewer mentioned below, you could take or leave potatoes in this. It's more filling with them, but they don't add a whole lot. When including them be sure to cut in a fairly small dice because they've got to cook through in about 45 mins. If the pieces are too large they won't be done. I've really come to love this recipe though, find a nice blend of herbes de provence, it really makes it. Bon Apetit!

- Preheat oven to 325°F In a large skillet, sauté onion, carrot and potato in olive oil over medium-high heat 5 minutes. Add garlic, herbes de Provence, salt and pepper and sauté another minute.
- Combine vegetables with bay leaf, beans, tomatoes and vegetable broth in a large, lightly oiled casserole dish. Bake uncovered 20 minutes.
- To make the bread crumb topping - combine olive oil, bread, parsley and garlic in a food processor; puree on high until finely crumbled.
- Remove cassoulet from oven and take out bay leaf. Raise oven temperature to 400°F (205°C). Sprinkle half the bread crumbs on top; bake another 15 minutes.
- Remove cassoulet from oven; stir bread crumb topping into beans. Top with remaining bread crumbs. Bake another 15 minutes or until topping is lightly browned. Serve immediately.
