Sausage gravy was always one of my favorite meals for breakfast, delicious but so fattening! Now that I am cooking for my family, I'm trying healthier versions of my favorite recipes. Enjoy!

3 tablespoons salted butter
1 cup diced onion
½ pound ground turkey sausage
½ teaspoon ground black pepper
¼ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon red pepper flakes
3 tablespoons all-purpose flour
2 cups whole milk

Steps:

  • Melt butter in a skillet over medium-low heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Add sausage, pepper, salt, garlic powder, and red pepper flakes. Cook and stir until sausage is browned and crumbly, about 10 minutes.
  • Stir in flour until well blended and cook for about 2 minutes. Increase heat to medium and slowly add milk, stirring as you go. Cook and stir until gravy thickens and is heated through, about 5 minutes.

Deliciously flavorful, Turkey Sausage Breakfast Gravy is lighter and made from scratch! Lean ground turkey is mixed with seasoning and browned before being turned into a thick gravy and served over biscuits!

1 pound ground turkey (93% lean )
3/4 teaspoon kosher salt (plus more to taste)
3/4 teaspoon rubbed sage
1/2 teaspoon black pepper (coarse freshly ground )
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/8 to 1/4 teaspoon red pepper flakes
2 teaspoon olive oil
3 tablespoons unbleached all-purpose flour
2 cups milk (2% or whole)
1/2 teaspoon black pepper (freshly ground)
8 biscuits (for serving)

Steps:

  • In a mixing bowl, combine the turkey, salt, rubbed sage, black pepper, onion powder, garlic powder and red pepper flakes. Use a fork to mix until combined.
  • Meanwhile, heat olive oil in a large deep sided skillet over medium-high heat. Add in the turkey breakfast sausage. Using a wooden spatula, break the meat up into small crumbles.
  • Cook until the meat is no longer pink and is browned. Sprinkle in flour, stir and cook until absorbed.
  • Pour in the milk stir and bring to a low boil. Reduce the heat to low and continue stirring until thickened. Season with kosher salt and black pepper to taste.
  • Spoon turkey sausage gravy over biscuits with extra black pepper.

CLASSIC TURKEY GRAVY

Number Of Ingredients 11

2 tablespoons unsalted butter
1 medium onion or leek, or 2 shallots, sliced
Neck and giblets from your turkey (discard the liver)
8 cups low-sodium chicken broth
3 sprigs thyme, parsley, rosemary and/or sage
1 bay leaf
Turkey drippings from your roasting pan
1/2 cup all-purpose flour
Dash of Worcestershire sauce
Kosher salt and freshly ground pepper
2 tablespoons cold Flavored Butter, recipe follows (optional)

Steps:

  • When your turkey goes into the oven, start the broth: Melt the butter in a large saucepan over medium-low heat. Add the onion and turkey neck and giblets; cook, stirring, until the giblets are browned, about 15 minutes. Add the chicken broth, herb sprigs and bay leaf; cover and simmer while the turkey roasts, about 2 hours. Strain the broth and keep warm; reserve the neck and giblets, if desired.
  • When your turkey is done, transfer it to a cutting board and pour all the pan drippings into a degreasing cup. Add 1/2 cup of the prepared broth to the roasting pan and scrape up the browned bits with a wooden spoon. (If the bits are stuck, put the pan over a low burner to loosen them.) Add the bits and liquid to the degreasing cup.
  • Let the fat rise to the top of the degreasing cup, then spoon off 1/2 cup fat and transfer to a large saucepan over medium heat. Make a roux: Sprinkle the flour into the pan and cook, stirring constantly with a wooden spoon, until the flour browns slightly, about 4 minutes.
  • Gradually add the hot broth to the roux, whisking constantly to prevent lumps. Bring to a boil, then reduce the heat to medium low. Pour the dark roasting juices from the degreasing cup into the gravy, discarding any remaining fat. If desired, chop the giblets and shred the neck meat; add to the gravy. Simmer, whisking occasionally, until the gravy thickens, about 10 minutes. Add the Worcestershire sauce and season with salt and pepper. Stir in the flavored butter, if desired.
  • Start with cold heavy cream and mix on high speed.
  • After about 3 minutes, you'll have whipped cream; continue mixing.
  • After about 6 more minutes, the butter will clump and separate from the liquid. Strain and wrap the butter in cheesecloth, then squeeze out the liquid.
  • Tip: To make perfect rounds, shape flavored butter into a log using parchment paper; wrap and chill, then slice.
  • Pumpkin
  • Mash 1/4 cup canned pure pumpkin, 1 stick softened butter, 1/4 teaspoon orange zest, 1/2 teaspoon each sugar and pumpkin pie spice, and a pinch of salt.
  • Spiced Cranberry
  • Simmer 1/2 cup cranberries with 1 tablespoon water, 1/4 cup sugar, 1 strip lemon zest, 1 cinnamon stick and 1 clove, 6 to 8 minutes. Discard the zest, cinnamon and clove; let cool. Pulse in a food processor with 1 stick softened butter and a pinch of salt.
  • Bourbon-Raisin
  • Microwave 1/2 cup raisins with 1 tablespoon bourbon, covered, 45 seconds; let cool. Pulse in a food processor with 1 stick softened butter, 1 tablespoon chopped chives and a pinch of salt.
  • Sage Brown Butter
  • Melt 1 stick butter over medium heat and cook until browned. Add 1/4 cup sage and fry 30 seconds; drain on paper towels, then chop. Let the brown butter cool; mash with 1 stick softened butter, the sage and a pinch of salt.

You know me, I am always trying to find an easier, somewhat healthier way to make those all-time favorite foods. Obviously, when it comes to the salt and pepper, you can use more or less to taste. I have been told I have bland taste buds, so my amounts may leave you wanting more. The cinnamon stick comes from a game I play with my kids. Whoever gets the cinnamon stick on their plate wins!

1 lb turkey sausage, ground
1/8 teaspoon maple extract
5 cups skim milk
1/4 cup cornstarch
1 teaspoon pepper
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon garlic powder
1 dash red pepper
1 cinnamon stick
8 Pillsbury Grands refrigerated buttermilk biscuits

Steps:

  • Cook biscuits according to package instructions.
  • In a large frying pan, brown sausage. Do not drain yet!
  • Add maple extract and stir well to ensure it is distributed evenly.
  • Drain to remove any fat (not that there is much using turkey). Return sausage to pan.
  • Add skim milk and bring to a soft boil over medium heat.
  • Stir in cornstarch and simmer to thicken.
  • Add seasonings and cinnamon stick.
  • Serve over biscuits.

7 links turkey breakfast sausage
1/4 cup chopped onion
2 cups skim milk
3 tablespoons whole wheat flour
1/3 teaspoon ground pepper

Steps:

  • Remove casings from breakfast sausage and set aside.
  • Heat a large non-stick skillet over medium heat.
  • Add onions and cook 1-2 minutes.
  • Add sausage and use a spatula or wooden spoon to break sausage into small pieces as it cooks completely - approximately 5 minutes.
  • Add half of the skim milk and continue cooking.
  • Stir occasionally so it doesn't stick to the bottom of the skillet.
  • Meanwhile place the rest of the milk and the flour in a jar or other container and shake thoroughly to get the lumps out.
  • Add to sausage mixture.
  • Bring to a boil, stirring constantly until gravy is desired thickness. (Gravy will thicken as it heats up).
  • Add pepper.
  • Serve hot over biscuits.

1 pound Italian turkey sausage links, casings removed
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon ground mustard
1/4 teaspoon salt

2-1/2 cups whole milk
1 tablespoon Worcestershire sauce

Steps:

  • Bake biscuits according to package directions. Meanwhile, crumble sausage into a large saucepan; cook over medium heat until no longer pink.
