SUGAR-FREE BANANA BREAD
This recipe is naturally sweetened with fruit and an optional drizzle of agave syrup meaning less added sugar is required in this banana bread

Steps:
- Grown ups: Preheat the oven to 180C/ 160C fan/ gas mark 4. Grease and line a 450g loaf/1lb tin with baking parchment.
- Children: Weigh the flour, baking powder, cinnamon and sultanas into a bowl and mix with a wooden spoon. Then weigh the butter, vanilla essence, egg, milk and mashed bananas and put into another bowl or jug and mix with a small balloon whisk or fork. Pour the 'wet' banana mixture into the 'dry' flour mixture and combine thoroughly with a wooden spoon. Weighing needs to be very accurate when baking so help older children to measure carefully. Younger children can also get involved by spooning or pouring into the scales with adult supervision. Younger children can also beat the egg with a fork and mash the banana with a potato masher.
- Grown ups: Pour the cake mixture into the prepared tin and bake for 30 - 40 mins or until a skewer inserted in the middle comes out clean. Remove from the oven, allow to cool in the tin for 10 mins then turn out.
- Children: Drizzle with agave syrup if using.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Mix all-purpose flour, rice flour, stevia powder, baking powder, baking soda, and salt in a bowl.
- Beat bananas, almond milk, vegetable oil, and egg together in a bowl using an electric mixer until smooth. Stir banana mixture into flour mixture; fold in pine nuts and flax seeds. Pour batter into the prepared loaf pan.
- Bake in the preheated oven until a knife inserted in the center of the loaf comes out clean, about 1 hour.

My 11 month old had a little taste test of banana bread and he loved it so I searched for a sugar free banana bread recipe. He loves this bread and so does the rest of the family!

Steps:
- Preheat oven to 350 degrees.
- Combine the flour, baking powder, baking soda and cinnamon in a bowl. Stir to blend.
- Place bananas in blender and puree until smooth.
- Add the bananas and rest of ingredients to flour mixture and mix well.
- Pour into a greased loaf pan.
- Bake for 40-50 minutes or until a knife inserted comes out clean.
- Cool on a wire rack.
- ENJOY!

- Adjust an oven rack to the lower-middle position and heat the oven to 350 degrees F (175 degrees C) degrees. Grease the bottom and sides of a 9 by 5-inch loaf pan; dust with flour, tapping out the excess.
- Spread the walnuts on a baking sheet and toast until fragrant, 5 to 10 minutes. Set aside to cool.
- Whisk the flour, sugar, baking soda, salt, and walnuts together in a large bowl; set aside.
- Mix the mashed bananas, yogurt, eggs, butter, and vanilla with a wooden spoon in a medium bowl. Lightly fold the banana mixture into the dry ingredients with a rubber spatula until just combined and the batter looks thick and chunky. Scrape the batter into the prepared loaf pan.
- Bake until the loaf is golden brown and a toothpick inserted in the center comes out clean, about 55 minutes. Cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature. (The bread can be wrapped with plastic wrap and stored at room temperature for up to 3 days.).

ADDED SUGAR-FREE BANANA BREAD
Banana bread recipe which is squidgy, with optional bran, oats and seeds. Only uses fruit to sweeten!

- Preheat oven to 180 degrees (fan). Heat a little water in a small pan over a low heat and add the dried fruit, and let it simmer for around 10 mins. To this pan add the mixed spice and vanilla. Keep adding water to prevent it drying out, but let it all evaporate away at the end. Take the pan off the heat and set it aside.
- In a large bowl, mash the 3 bananas. Easily done using a whisk or fork.
- Add the now plump dried fruit (and the small amount of water) to the bananas. Put the pan back on a very low heat and add the milk and bran. Mush them up over the heat until the bran is very soft. This should take around 10 minutes. Set this aside.
- To the banana mixture add the oats, flour, baking powder, lemon zest/juice and salt. Beat thoroughly with a wooden spoon, before adding the bran/milk mixture.
- Grease the loaf tin with margarine or oil thoroughly.
- Add the fat-free yoghurt and check the temperature of the mixture. If it isn't much hotter than room temperature, you can add the egg.
- Beat the entire mixture and transfer it to the loaf tin. Finish with a sprinkling of seeds or nuts (I used pumpkin) and bake for 30 mins. Check the loaf at 20 minutes by sticking in a knife. The finished loaf will come out a little squidgy, but will solidify as it cools.
