Steps:
- Preheat oven to 350ºF.
- Melt the margarine in a saucepan.
- Stir in the flour until well mixed.
- Pour in the milk, stirring until thickened. Stir in 1-1/2 cups of the cheese and mix well.
- Stir ham into the cheese sauce; then stir the cheese sauce into the macaroni in a casserole dish.
- Top with the remaining cheese. Bake for 30 minutes.

- Preheat oven to 350ºF. Prepare Dinners as directed on package. Stir in Singles, peppers, spinach and ham. Spoon into greased 2-qt. baking dish.
- Meanwhile, cook onions in butter in large skillet on medium-high heat 5 to 7 min. or until tender, stirring frequently. Remove from heat. Stir in crushed crackers. Sprinkle over Dinner mixture.

- Heat a large pot of salted water to a boil, drop in pasta. Cook pasta to just shy of al dente.
- Heat sauce pot with butter over medium heat, whisk in flour and cook for 1 minute, whisk in stock then milk, allow the sauce to thicken, and season with salt, pepper and nutmeg. Stir in cheeses in a figure eight motion. Stir in Dijon and ham and remove the sauce from heat. Drain pasta and combine with sauce.

- In large saucepan, melt 1/4 cup butter.
- Blend in flour, brown sugar, mustard, salt, and pepper.
- Add milk all at once.

CRUSTY BAKED MACARONI AND CHEESE
I happen to love a "crusty" top on my Baked Macaroni and Cheese, so came up with the following variation as an alternative to the "creamy" variety. I use Ziti or Rigatoni, instead of elbow macaroni, for a chewier texture. I also do one layer of the pasta and the cheese in as large a shallow casserole (glass, ceramic, rectangular metal pan) as needed, to get as much "cheese crust" as possible. You can easily double, triple, etc. the recipe, in which case I do two layers of macaroni with butter and cheese over each layer.

- Pre-heat oven to 400ºF.
- Boil pasta al dente.
- Drain and put the pasta in one layer in a large shallow casserole.
- Whisk the milk and flour until well blended. Salt and pepper to taste.
- Pour the milk & flour mixture over the pasta.
- Dot the butter all over the pasta.
- Sprinkle the cheese over the top of the pasta to cover it fully.
- Bake for 30-40 minutes until top is browned and crusty.
- If desired, after about 20 minutes, you can put the casserole under the broiler to brown the top faster.

- White sauce:.
- In medium saucepan, combine cornstarch, salt and pepper; using wire whisk, stir in milk until smooth. Add butter. Stirring constantly with rubber spatula, bring to boil over medium-high heat and boil 1 minute. Remove from heat.
- Stir dry mustard into white sauce; add 1 3/4 cups grated cheese and stir until melted (reserve 1/4 cup cheese for topping). Cook elbow macaroni for six minutes; drain. Add cheese sauce to macaroni; stir. Turn into a greased, 2-quart casserole dish; stir in ham cubes. Top with reserved grated cheese.
- To freeze:.
- Cover casserole with aluminum foil; seal dish in jumbo freezer bag. Freeze.

- Melt the butter in a saucepan. Add the flour and cook for 1 minute, stirring constantly. Slowly pour in the milk, whisking all the time. Add the bay leaf and bring to the boil.
- Reduce the heat and simmer very gently for about 5 mins until smooth and thickened, stirring occasionally.
- Remove from the heat, remove the bay leaf and add the mascarpone, mustard and cheddar. Mix until smooth, then season. Cover the surface of the sauce with plastic wrap to prevent a skin forming.
- Preheat the oven to 400°F.
- Bring a large pan of salted water to the boil. Add the pasta, stir to separate and cook for 1 min less than the time suggested on the packaging. Drain thoroughly and return to the pan.
- Pour the cheese sauce over the cooked pasta and add the ham and parsley. Mix thoroughly and tip into a shallow ovenproof dish.
- Combine the breadcrumbs and parmesan and scatter over the pasta. Bake on the middle shelf of the oven for about 20 mins until the top is golden brown and bubbling.

- Preheat oven to 350 degrees.
- Cook macaroni until it is al dente; drain.
- Melt 2 tablespoons butter in a saucepan; add the flour and cook, stirring constantly over low heat 2-3 minutes.
- Add the milk gradually, mixing the ingredients to incorporate the flour mixture and make a smooth sauce.
- Add the salt, pepper, and nutmeg.

- Grate onion, drain juice, set aside. Cube most of Velveeta, shred remaining 2 oz. Put a pot of water on to boil. Heat oven to 350 degrees. Melt 4 tablespoons butter in small dish (for breadcrumbs), and melt 6 tablespoons butter in another large saucepan.
- When butter in large saucepan is melted, sauté onion until golden. Add breadcrumbs to the 4 tablespoons of butter, and stir well, on medium heat, until golden brown (will take a while, keep stirring). When onion is golden, add flour, stir well and cook (while stirring) about 2 minutes. Add dry mustard and Worcestershire sauce. Then add milk gradually, while stirring.
- Cook on medium heat until sauce comes to a boil and thickens, stirring often. Add salt, then cubed Velveeta. Then add all shredded cheddar except 1 ½ cups. When cheese is melted taste to see if more salt is needed. Add ham and stir well. Cook macaroni about 6 or 7 minutes, should still be a little firm. Drain well and add to cheese sauce mixture. Spray a 9 X13 pan with nonstick cooking spray. Fill with cheese macaroni mixture, and spread evenly. Dot top with remaining Velveeta, then mix remaining cheddar with bread crumbs and spread evenly on top of macaroni mixture. Bake at 350 degrees until bubbly 20 to 30 minutes.
