Sausage balls are a classic party appetizer for a crowd and they couldn't be simpler--just mix, shape and bake. We've included thinly sliced scallions in our version for subtle onion flavor and a touch of color.

1 pound ground pork sausage, such as Jimmy Dean, at room temperature (see Cook's Note)
2 cups biscuit baking mix, such as Bisquick (see Cook's Note)
1/2 cup thinly sliced scallions, optional
One 8-ounce package sharp Cheddar, grated

Steps:

  • Preheat the oven to 350 degrees F and line 2 baking sheets with parchment.
  • Combine the sausage, baking mix and scallions if using in a large bowl and gently knead with your hands until the baking mix is fully incorporated. Add the Cheddar and continue to mix until the cheese is evenly distributed.
  • Using a tablespoon to scoop, divide the mixture into walnut-size pieces and shape into balls with your hands. Arrange on the lined baking sheets about 2 inches apart, about 20 balls per baking sheet.
  • Bake until the sausage balls are golden brown and cooked through, about 26 minutes. Serve warm or at room temperature.

2 16 ounce rolls pork sausage (such as Jimmy Dean)
1 1/2 cups all purpose baking mix (such as Bisquick)
4 cups shredded cheddar cheese
1/4 cup onion (finely grated)
1 teaspoon minced garlic
1/4 cup milk
1/2 teaspoon black pepper
1 tablespoon chopped parsley
cooking spray

Steps:

  • Preheat the oven to 375 degrees F. Coat a rimmed sheet pan with cooking spray.
  • Place the sausage, baking mix, cheese, onion, garlic, milk and black pepper in a bowl; stir until thoroughly combined. A stand mixers works great for this!
  • Roll the meat mixture into 1 inch balls and place on the baking sheet. Bake for 20-25 minutes or until browned. Sprinkle with parsley then serve immediately with a dipping sauce of your choice.

1/2 pound bulk pork sausage
2 cups shredded sharp Cheddar cheese
1/4 cup milk
1 1/2 cups buttermilk, pancake and waffle mix
2 tablespoons dry onion soup mix
1/8 to 1/4 teaspoon ground hot red pepper

Steps:

  • Mix together sausage, cheese, milk and egg in a large bowl. Add buttermilk pancake and waffle mix with onion soup mix and ground red pepper. Blend well. Pinch off bits of dough and shape into 1- inch balls. Place on lightly greased baking sheets, spacing 1 1/2 inches apart, and sprinkle lightly with paprika. Bake 10 to 15 minutes at 375 degrees until deep golden brown, turning the balls over at halftime. Remove from baking sheets and serve.

I have to make these once or twice during the holidays. I don't know why only during the holidays, because they are good any time of year. They are great cold, but I love to pop a few into the microwave for a few seconds and eat them hot.

1 lb bulk sausage (regular or mild)
2 c sharp cheddar cheese, grated
2 c original bisquick
1/4 c milk

Steps:

  • 1. Preheat oven to 350*
  • 2. Place all ingredients into large mixing bowl. Mix by hand. I use latex gloves and just keep mashing it until I get everything mixed in well. It will be stiff, but you can add a little more milk if you feel you need it to get it all mixed together.
  • 3. Roll into 1 inch balls (I wear the gloves for this too. Keeps it from sticking to your hands). Place onto non-stick cookie sheet. They can be placed close together, but not touching because they don't get a lot bigger than the original size.
  • 4. Bake for 20 minutes until they start to become brown. Sometimes the bottoms will brown quicker because of the sausage and cheese, but they are just dark, not burnt.
  • 5. I usually double this recipe so I can take some to work and leave some for home. Enjoy!

1 pound spicy Italian sausage, casings removed
4 cups grated extra-sharp Cheddar
2 cups baking mix, such as Bisquick
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • In a large bowl, combine the sausage, Cheddar, baking mix, garlic powder and salt and knead with your hands until a homogenous dough forms (this will take about 5 minutes). Pinch off golf ball-size pieces of dough, roll them into balls and arrange them 1 inch apart on the prepared baking sheets.

4 Granny Smith apples
1 tablespoon unsalted butter
1 tablespoon canola oil
1 pound ground pork sausage
4 cups grated sharp Cheddar
3 cups instant pancake mix
2 tablespoons minced fresh chives
Kosher salt and freshly ground black pepper

Steps:

  • For the applesauce: Preheat the oven to 375 degrees F.
  • Peel the apples, then thinly slice around the core. Place in a microwave-safe bowl and cover with plastic wrap. Microwave until the apples are tender, about 5 minutes. Place in a blender with the butter and puree. Set aside.
  • For the sausage balls: Grease a rimmed baking sheet with the oil. Combine the sausage, cheese, pancake mix, chives, a big pinch of salt and a few grinds of black pepper in a large bowl and mix well. Roll into 1 1/2-inch balls (about the size of a Ping-Pong ball). Place on the prepared baking sheet in an even layer, leaving 1 inch between balls. Bake until cooked through and browned, 20 to 25 minutes. Serve with the applesauce.

6 to 8 Yukon gold potatoes (or 4 large baking potatoes, like russets), peeled and diced into 1-inch pieces
4 cups chicken stock
2 pounds hot sausage, out of the casing
1 1/2 cups diced onion
1 3/4 cups finely diced celery
4 ounces butter
1 quart heavy whipping cream
3 or 4 tablespoons balsamic vinegar (white or dark)
1 tablespoon vanilla
4 tablespoons finely chopped flat-leaf parsley
Salt and pepper, to taste

Steps:

  • To a large stock pot, add potatoes and chicken stock. Bring to a simmer and cook until potatoes are fork tender, about 20 minutes.
  • To a saute pan over medium heat, add sausage and chopped onion in pan and saute until completely cooked. Drain sausage mixture, add celery, and saute a few additional minutes. Add sausage mixture to stockpot with butter. Add cream and extra broth if needed. Add vinegar, vanilla, and parsley at end of cooking. Season, to taste, with salt and pepper.

1 cup white sugar
2 cups shortening
2 egg yolks
1 cup molasses
5 ½ cups all-purpose flour
2 teaspoons cream of tartar
4 teaspoons baking soda
2 teaspoons salt
1 tablespoon ground cinnamon
1 tablespoon ground ginger
1 cup sour milk
1 ½ cups white sugar
½ teaspoon distilled white vinegar
½ cup water
18 large marshmallows
2 egg whites
1 ½ cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • In a large bowl, cream together 1 cup white sugar and shortening until smooth. Stir in the egg yolks and molasses. Combine the flour, cream of tartar, baking soda, salt, cinnamon and ginger; stir into the molasses mixture alternately with the sour milk. Cover and chill for 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). On a lightly floured surface roll the dough out to 1/8 inch thickness. Cut into rectangular shapes (I like to use a Spam can). Place cookies 1 inch apart onto an ungreased baking sheet.
  • Bake for 8 to 10 minutes in the preheated oven, until lightly browned. Remove from baking sheets to cool on wire racks.
  • To make the frosting, combine 1 1/2 cups sugar, vinegar, water and marshmallows. Mix well and place over a pot of simmering water. when the marshmallows have melted, stir in the egg whites. Remove from heat and beat with an electric mixer for 7 minutes. Stir in the vanilla and confectioners' sugar until well blended. Frost cooled cookies.
