CREAMY CLAM LINGUINE
This is a fast but special entree that I made up when my sons were home from touring. They loved it so much that they request it whenever they're home. You can use the juice from the canned clams, but bottled clam juice gives a better flavor to this dish.-Margie Clevenger, Bowling Green, Kentucky

- Cook linguine according to package directions. , Meanwhile, in a large saucepan, saute onion in butter and oil. Add garlic; saute for 1-2 minutes longer. Stir in flour until blended; gradually add the broth, clam juice and cream. Bring to a boil; cook and stir for 2 minutes or until thickened. , Add the clams and seasonings; cook and stir for 2-3 minutes or until heated through. Drain linguine. Add pasta and cheese to sauce; toss to coat.

THE BEST CLAM DIP RECIPE EVER
This is my family's signature dip recipe and will make everyone a fan of clams in cream cheese whether they think they like it or not!

Steps:
- In a medium sized bowl, mash softened cream cheese with a fork until soft and creamy. Slowly add in 1 tablespoon of clam juice while mixing with fork and cream well. Add lemon juice and Worcestershire sauce.
- Add green onion and clams to mixture. Add a few dashes of Tabasco to taste. If mixture seems thick, add remaining clam juice in one tablespoon increments to desired consistency. Serve with potato chips or refrigerate for up to 2 days.

RANCH CLAM SPREAD/DIP FOR CRACKERS
I had this at Costco of all places! I came home and had to post it because it is so easy and it was very good. In fact, I had one and then I liked it so much, I came back later and had another! Don't report me! You can adjust the amount of dressing and cream cheese to suit your taste. *in light of Elissa's review that it was good but thin, I would add less ranch and more cream cheese to adjust. You can alter these 2 ingredients to your liking (and texture). It should have the consistency of tuna salad. Serve on your favorite cracker. I like Ritz for this.

Serve Clams Casino Dip/Spread warm or at room temp with buttery crackers (such as Townhouse or Ritz) or a good bread as an appetizer or snack. Mmmm delicious...perfect for a Super Bowl Party, or anytime. Great make-ahead dish, the flavors develop after several hours in the fridge (Chef John recommends at least four hours in the fridge), but best tasting warm or at room temperature so take out of fridge an hour before serving. Steps:
- Cut bacon into 1/4-inch pieces and saute in a skillet with the butter over medium heat 'til completely crisp; drain the fat and reserve the bacon to a plate.
- In same pan with about 1 teaspoon of the drippings saute the jalapeno, red bell pepper, celery, garlic and green onion over medium heat until just the veggies just barely start to soften (about 3 minutes); now add the juice from one can of clams and reduce over high heat until almost all the liquid has evaporated, about another three minutes. Remove mixture to a plate and allow to cool to room temperature before adding to the cream cheese.
- In a mixing bowl combine the cream cheese with the cooled mixture, and stir in the remaining ingredients.
- Transfer into your serving dish and garnish top with a tablespoon or so of the crisp bacon and the green onion tops.
- Serve warm or at room temperature with Ritz crackers or a good bread.

- Preheat the oven to 350°F. Grease a medium-size gratin dish and set aside.
- In a medium-size mixing bowl, combine the clams plus their liquid, the butter, onion, parsley, oregano, Tabasco, and bread crumbs and mix till well blended. Scrape the mixture into the prepared dish, sprinkle the top with the two cheeses and paprika, and bake till golden, about 20 minutes. Sreve the spread with crackers or small Melba toast rounds.

Steps:
- Add bacon to sauce pan and cook on medium low heat until crispy.
- Add onion and cook until translucent.
- Add clam juice from both cans.
- Add potatoes.
- Cook and cover until potatoes are fork tender, about 15-20 minutes.
- Stir occasionally so potatoes won't stick.
- Add clams, soup, cream, milk, and dill weed.
- Stir together.
- Add butter and let melt into the chowder.
- Cook for about 30-45 minutes or until thickened.
