WATERMELON MANGO ICE POPS
This is a recipe that I came up with for a fun summer treat for my kids! You could add sugar or honey to this to make it sweeter.

Steps:
- Blend watermelon, mango chunks, raspberries, and lemon juice in a blender until smooth; pour into ice pop molds and insert handles or sticks.
- Freeze until firm, at least 4 hours.

MANGO LASSI ICE POPS

- Put the mango, condensed milk, ginger, cardamom and lime zest and juice in a blender and puree until smooth. Distribute the mixture among the paper cups, add the ice-pop sticks and freeze until firm, at least 6 hours.
WATERMELON ICE POPS
Cool and refreshing, with no artificial colors or flavors! If you don't have ice pop molds, you can use paper cups and wooden sticks.

- Run hot water over ice pop molds for a few seconds to unmold.

- Purée all ingredients in a blender until smooth, then strain through a fine-mesh sieve into a large measuring cup, pressing on and then discarding solids. Skim off any foam, then pour into molds. Freeze 30 minutes. Insert sticks, then freeze until firm, about 24 hours.
WATERMELON ICE POPS
Buying a watermelon so often leads to leftover melon. Here's a delicious way to make use of this largesse. Buy 5-oz (150 g) paper "bath cups"-they make great moulds for ice pops, as the paper just peels away. Gelatin helps keep drips at bay and also adds to smoothness. From LCBO Food & Drink Magazine. Time to prepare does not include time to freeze. Watermelon is thought to have originated in southern Africa, where it is found growing wild, because it reaches maximum genetic diversity there, resulting in sweet, bland and bitter forms.

Steps:
- Sprinkle gelatin over boiling water and immediately stir until dissolved, about a minute.
- Use an ice cream scoop to remove red watermelon flesh; measure out 4 cups and add any juice left in scooped watermelon half.
- Whirl watermelon with sugar and lemon juice in blender then strain, reserving juice.
- Thoroughly stir in dissolved gelatin. (There should be about 4 cups) Measure into cups or moulds and insert sticks or plastic spoons.
- Freeze several hours until frozen.
- Store sealed in freezer-weight plastic bag for up to 2 weeks.

- In a blender add in chopped Water Melon pieces preferably seedless along with sugar if required .Blend it into a fine puree without adding water. Now take the Popsicle mould.
- Fill the popsicles mould till half .close it with the lid and the freeze it for about 2 hours till the water Melon Layer is set .After 2 hours before taking the popsicles mould out of the fridge add in the chopped mango pieces into a blender and sugar if required. Blend it into a fine puree without adding water.
- Take the popsicle mould from fridge by this time the Water Melon layer would have set .Fill the mould with the Mango puree so the mould it filled now. Close it with a lid and freeze it for 6 hours or overnight .While unmoulding the Popsicle from mould show the mould in running tap water. Healthy Popsicle's are now ready .Serve it immediately.
