WAFFLED TOMATO-GRILLED CHEESE
Waffling your grilled cheese is a quick alternative to standing over your stove waiting for your bread to brown. It also ensures even delicious goldenness! Each bite tastes like tomato soup and grilled cheese at the same time.

- Preheat the oven to 300 degrees F. Arrange the tomatoes on a baking sheet cut-side down. Drizzle with olive oil and sprinkle with salt. Slow-roast until the tomatoes are soft and wrinkled, about 1 hour. Set aside to cool. (The tomatoes can be made and refrigerated up to 1 day ahead.)
- Preheat a waffle iron to medium-high. Brush one side of each bread slice with melted butter. Lay the bread out on a clean work surface, dry-side up. Spread each slice of bread with some of the mayonnaise. Top 4 bread slices with 2 tomato halves, slightly smashing them into the bread. Top with 3 cheese slices each and the remaining bread slices.
- Place two sandwiches at a time in the waffle iron and gently close the lid (don't press down). Cook until the cheese is melted and the sandwiches are golden-brown, 6 to 10 minutes. Repeat with the remaining sandwiches. Cut in half and serve.

- Heat griddle to medium.
- In a food processor pulse chop the salad and olives into a fine relish. Spread 4 slices of bread with relish and top each with 2 slices cheese and 4 more slices of bread. Butter the outside of the sammies with softened butter and grill until golden on both sides, 4 to 5 minutes total. Cut and serve.
WAFFLE-GRILLED HAM AND CHEESE

- Lay 2 of the waffles on a counter or cutting board. Place a half-slice of cheese on top of each waffle. Spread some mustard over the cheese if using. Fold each ham slice in half, and place on top of the cheese slices. Layer another half-slice of cheese over each piece of ham. Top with the remaining waffles to form a sandwich.
- Heat a nonstick skillet or cast-iron pan over medium heat.
- Grease the skillet with some butter. Place the sandwiches in the pan, and cook until golden on the underside and the cheese starts to melt, 2 to 3 minutes. Flip the sandwiches, and cook until golden on other side and the cheese fully melts, about 2 more minutes. Serve hot or wrap in foil to pack for a school lunch or picnic.
- Make it Your Own: For an Italian spin on this sandwich, swap in prosciutto for the ham and mozzarella for the Swiss.

More method than recipe, I heated up my panini maker one night to make a grilled cheese, only to find out that I'd left the waffle plates inside. Instead of changing out the plates, I used them anyway and I loved the outcome. The sandwich gets super crispy but the cheese is still soft and gooey inside the little squares.
