Steps:
- Combine eggs, milk, flour, and baking powder.
- Beat well.
- Add spinach and cheese; mix well.
- Pour melted butter into a 13 x 9" pan.
- Pour spinach mixture over butter and combine. Bake at 350 degrees for 35 minutes.
- Cool 10 minutes before cutting into squares.

Steps:
- Cook spinach according to package instructions and drain.
- Preheat oven to 350.
- Melt butter in a 9x13" baking pan (don't let it burn).
- Remove from oven.
- Combine remaining ingredients with spinach and mix well.
- Turn into pan with melted butter, stirring in butter and spreading evenly.
- Bake 30 minutes.
- Cool 5 minutes.
- Cut into large 3"x3" squares to serve as a side dish or 1 1/2" squares to serve as an appetizer.

Steps:
- Drain the spinach well by pressing between layers of paper towels.
- In a big mixing bowl, add the spinach, rice, green onions, and Swiss cheese; stir to combine and set aside.
- In another bowl, add the mushroom soup and next 5 ingredients; stir to combine.
- Add to the spinach mixture; stir to combine.
- Spoon into a lightly greased 8-inch square baking pan.
- Mix together the bread crumbs, parmesan cheese, and melted butter.
- Sprinkle evenly over the spinach mixture.
- Bake at 325° for 30 minutes or until thoroughly heated.
- Let rest for 10 minutes before cutting into squares.
- Serve warm.

CHEESY SPINACH SQUARES
My mother used to make these for Thanksgiving and Christmas. They are easy to make and is great for holiday meals. You will love this recipe even if you don't like spinach!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13-inch baking dish.
- Bring a large pot of water to a boil and add spinach. Cover, reduce heat, and cook until heated through, 5 to 6 minutes. Drain well, squeezing out excess moisture with your hands. Set aside to cool.
- Melt butter in a saucepan over medium heat; stir in onion and cook until soft and translucent, 5 to 10 minutes.
- Transfer onions to a double boiler; mix in milk, Cheddar cheese, flour, and ground black pepper; cook and stir until blended and smooth, about 5 minutes. Remove from heat; fold in eggs and spinach. Pour the spinach mixture into baking dish and smooth top.
- Bake, uncovered, in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes. Cool briefly before cutting into squares.

I found this in my mother's collection of recipe clippings, from the 1960's. The only change I made was to reduce the salt to one-half teaspoon. You could probably substitute frozen chopped spinach to save time. I think these taste great at room temperature.

Steps:
- Preheat oven to 350 degrees.
- Melt butter in a 9 X 13 pan. Either melt butter in microwave and then pour into pan, or place baking pan with butter into oven for a minute or two; then remove from oven and tip the pan so that the butter coats evenly on bottom and sides.
- Beat eggs.
- Mix flour into beaten eggs.
- Stir in milk, salt and baking powder.
- Add cheese and spinach, mixing well.
- Add onion and seasonings, stirring thoroughly.
- Spread into baking pan and bake at 350 degrees for 35 minutes.
- Cool 30 minutes before serving.
- Cut 6 across and 9 down for the perfect sized finger-food appetizer.

- Heat oven to 350ºF.
- Bake butter in 9-inch square baking dish in 2 min. or until melted. Remove dish from oven; brush butter onto bottom and sides of dish.

I got this reciepe from a friend over 20 years ago and have made it for my kids and now grandkids,it's a great way to get them to eat their vegetables.You can use either Spinach or Broccoli in this...Hope it's as big a hit in your family as it has been in mine..Enjoy !!

- 1. Open the boxes of Spinach OR Broccoli and place in colander overnight so that they are completely thawed and squeeze out the juices with your hands or by pressing down with wooden spoon.DO NOT COOK.
- 2. Place Thawed Spinach OR Broccoli into a large mixing bowl,set aside.
- 3. In a medium sized bowl,beat the 3 Eggs,add the milk,then all the dry ingredients as well as the onions
- 4. Pour over the Spinach OR Broccoli,then begin to mix with hands or wooden spoon,slowly adding the cheese to incorporate it into the mixture
- 5. Heat oven to 350 degrees.Place 1/4 Cup of butter into a 13x9 inch baking dish and place into the oven and melt,watching carefully so it doesn't burn.Remove pan from oven.
- 6. Now pour mixture into pan over the top of the melted butter.Do not mix ,just spread evenly with a wooden spoon
- 7. Bake at 350 degrees for 1 hour or until edges begin to brown and there's a nice golden brown top,remove from oven and cool for 30 minutes and then cut into squares.Cut into Brownie size squares if using as a side dish or smaller squares if using for appetizers
- 8. You can freeze any leftovers,as these freeze well for future use.Or store in fridge for up to 3 days
