16 oz of dry pinto beans and red beans
2 lbs smoked pork neck bones
8 cups water
1 medium onion (chopped)
2 jalapeno peppers (chopped and seeds removed)
1 tbsp garlic powder
2 tsp onion powder
1 tsp salt
1/2 tsp ground black pepper

Steps:

  • Slow cook the neck bones along with 8 cups of water in a slow cooker for 4 hours. Transfer the neck bones and liquid to a large pot. Place the pot over medium high heat, and add in the onions and peppers. Then stir the ingredients.
  • DO a quick soak for the beans, then drain. Add the beans to the pot, and stir.
  • Cover the pot, and cook for 45 minutes. Be sure to occasionally stir!
  • Add in the seasonings, then cook uncovered for an additional 10 minutes over medium heat.
  • Turn the heat off, and let sit for 5 minutes before serving.

1 pound dry red kidney beans
1 tablespoon vegetable oil
12 ounces andouille sausage, diced
1 cup finely diced onion
¾ cup chopped celery
¾ cup poblano peppers
4 cloves garlic, minced
2 quarts chicken broth, or more as needed
1 smoked ham hock
2 bay leaves
1 teaspoon freshly ground black pepper
1 teaspoon dried thyme
½ teaspoon cayenne pepper, or to taste
hot sauce to taste
4 cups cooked white rice
2 tablespoons chopped green onion, or to taste

Steps:

  • Place beans in a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse.
  • Heat vegetable oil in a large pot over medium heat. Cook and stir sausage in hot oil until oils slightly release from sausage and edges brown, 5 to 7 minutes. Stir onion, celery, and poblano pepper into sausage; cook and stir until vegetables soften and start to turn translucent, 5 to 10 minutes. Stir garlic into sausage mixture; cook and stir until fragrant, about 1 minute.
  • Stir red beans, chicken broth, ham hock, bay leaves, black pepper, thyme, cayenne pepper, and hot sauce into the sausage mixture; bring to a boil, reduce heat to low, and simmer gently, stirring occasionally, for 1 1/2 hours. Add salt and continue simmering until beans are soft, meat is tender, and desired consistency is reached, 1 1/2 to 2 hours more. Season with salt.
  • Spoon rice into bowls, ladle red beans mixture over rice, and top with green onion.

8 ounces dried red beans
3 cups chicken stock
2 cups beef stock
1 onion, chopped
1 small smoked ham hock
1/2 green bell pepper, chopped
2 tablespoons minced garlic
1 tablespoon salt
1/2 teaspoon coarsely ground black pepper
1/2 teaspoon cayenne pepper
1 tablespoon grapeseed oil
1/2 pound smoked sausage, diced
Steamed white rice, for serving

Steps:

  • In a large Dutch oven over medium heat, add the beans, chicken and beef stock, onions, ham hock, green pepper, garlic, salt, black pepper and cayenne. Stir and bring the mixture to a boil. Reduce the heat and simmer for approximately 2 hours.
  • In a medium saute pan over high heat, add the grapeseed oil. When the oil is hot, add the smoked sausage and brown evenly for 2 to 3 minutes. Add the sausage to the pot with the beans. Continue simmering the beans until tender, about 20 minutes more. Transfer to a serving bowl and serve over hot rice.

2 ts Dried thyme
6 Neck Bones
1 1/2 ts Garlic powder
14 c Water
1 1/2 ts Dried oregano
2 1/2 c Celery
1 ts Cayenne pepper
2 c Onion
1/2 ts Black pepper
2 c Green bell pepper
1 tbs Tabasco sauce
1 lb Kielbasa

Steps:

  • Place the neck bones, 10 cups of water, the celery, onions and bell pepper, bay leaves and seasoning in the crockpot on high. Cover and and simmer until meat is tender, about 1-2 hours. Remove the neck bones and set aside. Add beans and 4 cups of water to the crockpot: simmer on high 1-2 hours, stirring occasionally. Stir in kielbasa and continue to simmer up to 1-1/2 hours: scrape bottom of the crockpot if needed. Add neck bones , stir, simmer for 4 hours more. To serve, mound rice, place neck bone on one end, cover and surround with beans and kielbasa.

1 lb dried red beans, rinsed and sorted
1 1/2 lbs good-quality smoked sausage, cut into chunks
1/2 lb smoked ham hocks or 1/2 lb ham shanks
1 large onion, diced
1 green pepper, seeded, deveined and diced
1 stalk celery, diced
1 garlic clove, finely chopped
1 teaspoon dried thyme, crumbled
1 teaspoon fresh ground pepper
1/2 teaspoon sage
1/4 teaspoon cayenne pepper (to taste)
salt
3 -4 cups freshly cooked rice
hot sauce

Steps:

  • Place beans in Dutch oven and cover generously with water; let soak 30 minutes.
  • Add all remaining ingredients to beans except salt, rice, and hot sauce.
  • Bring to a boil over medium-high heat.
  • Reduce heat to medium-low, cover and simmer until beans are tender, adding more water if necessary, about 2 1/2 hours.
  • Add salt to taste.
  • Discard ham bones after cutting any meat from them into bite-sized pieces; return meat to pot.
  • Remove about 1/2 cup of beans from mixture and mash to a paste.
  • Return mashed beans to pot and stir through.
  • Simmer 15 more minutes.
  • Serve hot over rice: pass hot sauce, if desired.

1 lb dried red kidney beans
2 medium onions, peeled and quartered
1 smoked ham hock, split or 8 ounces smoked pork butt
2 garlic cloves, peeled
3 bay leaves
1 -2 teaspoon salt, to taste
fresh ground black pepper

Steps:

  • Soak beans overnight in water to cover plus 2"; drain; place beans in a pot of cold, fresh water to cover plus 2"; add the onions and ham and bring to a boil; cover, reduce heat and simmer for 1 hour, skimming foam off occasionally.
  • Add the salt and continue simmering, uncovered, over low heat for 1 1/2-2 hours more, stirring frequently; season with pepper; cut meat off bones, chop and return to the pot.
  • The soup is actually best when refrigerated for a couple of days and then served.
  • May be served over rice as a main course.

1 lb. dry red beans
12 slices OSCAR MAYER Bacon, cut into 1-inch-wide pieces
1 large onion, chopped
1 large green pepper, chopped
4 cloves garlic, minced
1 smoked ham hock (3/4 lb.)
3 cups fat-free reduced-sodium chicken broth
1/4 cup minced parsley, divided
1 bay leaf
2 tsp. Cajun seasoning
1 tsp. dried thyme leaves
1/4 tsp. ground red pepper (cayenne)
2 cups long-grain white rice (preferably converted), uncooked

Steps:

  • Rinse and pick through beans, discarding any misshapen beans or debris. Place beans in large bowl. Add enough water to cover beans by at least 2 inches. Let stand overnight.
  • Drain beans, discarding soaking liquid; set beans aside. Cook bacon in Dutch oven or deep large skillet until crisp. Remove bacon from pan with slotted spoon, reserving 2 Tbsp. drippings in pan. Drain bacon on paper towels. Meanwhile, add onions, peppers and garlic to reserved drippings; cook and stir 5 min. or until crisp-tender.
  • Return bacon to pan with beans, ham hock, broth, 2 Tbsp. parsley, bay leaf and seasonings. Bring to boil; simmer on low heat 2 to 2-1/2 hours or until beans are tender and liquid is thickened, stirring occasionally. Meanwhile, cook rice as directed on package during the last 30 min. of the bean cooking time.
  • Remove ham hock and bay leaf; discard bay leaf. Shred meat from ham hock; discard bone and any fat. Stir meat into bean mixture. Serve over rice; top with remaining parsley.

Canola oil or another neutral oil
1 large onion, chopped
1 green bell pepper, chopped
2 large stalks celery, chopped
3 cloves garlic, minced
1 tablespoon smoked paprika
1 teaspoon cayenne pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Three 12-ounce cans red beans, drained and rinsed
1 smoked ham hock
4 cups chicken broth
1 1/2 cups white rice
Chopped parsley for garnish

Steps:

  • Generously coat the bottom of a large, heavy-bottom saucepan with oil. Add the onion and cook until it begins to soften, about 3 minutes. Add the bell pepper and celery. Cook, stirring occasionally, until the vegetables soften and the onions are translucent.
  • Add the garlic, smoked paprika, cayenne, oregano, basil, thyme, salt and pepper and cook, stirring, for 1 minute more. Add the beans, ham hock and broth and simmer, partially covered, for 1 hour.
  • Remove the ham hock from the pan but let the beans continue to cook. When the hock is cool enough to handle, take the meat off the bone, chop it into bite-size pieces and return it to the pan.
  • Add the rice to the pan along with 1 cup water if more liquid is needed. Cook, tightly covered, until the rice is tender, about 20 minutes. Serve in bowls garnished with parsley.
