PASTA WITH BROCCOLI RABE (CIMA DI RAPA)
This is a very popular winter dish in Italy. Broccoli rabe is sauteed then tossed with anchovies, garlic, bread crumbs and grated Pecorino Siciliano cheese. This version was given to me by a Sicilian friend. Enjoy with a nice hearty red wine and you'll be ready for any winter weather! Garnish with a little more bread crumbs and grated cheese.

- Bring a large pot of lightly salted water to a boil. Cook tortiglioni in the boiling water, stirring occasionally until tender yet firm to the bite, 10 to 12 minutes.
- Meanwhile, heat 1 tablespoon oil in a large saute pan over medium-high heat. Add anchovies and garlic. Saute until slightly brown, 3 to 4 minutes, but do not overcook garlic, as this will make the dish bitter. Add broccoli rabe and stir to coat. Alternately add 1/2 of the bread crumbs and 1/2 of the Pecorino Siciliano cheese, stirring constantly, adding 1/2 tablespoon oil while mixing.
- Drain pasta and fold into the mixture, taking care not to break the pasta. Fold in remaining cheese and bread crumbs gently. Top with remaining oil. Transfer to serving plates and sprinkle with red pepper.

BROCCOLI RABE PASTA
This Broccoli Rabe Orecchiette Pasta recipe is a classic example of how simple ingredients come together perfectly to create a great Italian pasta dish.

Steps:
- Over high heat, bring a large pot of salted water to a rolling boil.
- Add the broccoli rabe and cook until tender. This should take 4-5 minutes.
- Strain and gently squeeze out excess moisture. Coarsely chop and set aside.
- Bring a large pot of salted water to a rolling boil. Please note that you can use the same water to cook your pasta. My preference is to start with a fresh pot of water.
- Add the orecchiette slowly and stir. Cook according to package directions or until almost al dente.
- While the pasta is cooking, heat the oil in a large frying pan over medium-low heat.
- Add the chopped garlic and 2 anchovy fillets. Do not allow the garlic to brown.
- Mash the anchovy with the back of a spoon for about 1-2 minutes.
- If using, add red pepper flakes and stir for 30-60 seconds.
- Carefully, add the cooked broccoli rabe and stir to combine. Adjust seasonings and heat through.
- Add 1 ladle of pasta water and stir occasionally for 4-5 minutes. Add more water if the mixture dries out.
- When pasta is almost al dente, drain, reserving 2-3 ladles of the water.
- Add pasta to the pan along with some pasta water and continue to cook. Taste for doneness.
- Turn off heat. Add the grated cheeses and toss everything together.
- Continue to shake the pan back and forth for a few minutes, until a sauce forms.
- Plate and garnish with more grated cheese, if desired.
- Serve immediately.

SALSICCIA CON CIMA DI RAPA: SAUSAGE WITH BROCCOLI RABE

Steps:
- Cook the rapini in boiling salted water for 2 to 3 minutes. Drain.
- In a saucepan, heat 4 tablespoons of extra-virgin olive oil. Add the garlic and chili peppers, and cook until the garlic is golden brown. Add the rapini to the saucepan, and saute for a few minutes. Season with salt to taste.
- In another saucepan, heat 1 tablespoon of olive oil, and add the sausages. Cook the sausage for a few minutes, turning frequently, before piercing with a knife in order to release some of the fat. If the sausages are sticking to the pan, add a few tablespoons of water instead of adding more oil. Continue cooking until the sausages are golden brown and fully cooked.
- Add the cooked sausages to the rapini, and cook together for a few minutes. Transfer the mixture to a warm plate and serve hot.

- In a large frying pan add oil, garlic, cooked broccoli rabe** , salt (start with a 1/4 teaspoon) and hot pepper flakes to taste, combine with two forks smash down a bit on the broccoli rabe, heat thoroughly on medium/high heat for about 2-3 minutes, turn off heat, then immediately add cooked pasta, a half ladle of pasta water and cook tossing pasta until liquid has evaporated. Serve immediately with freshly grated parmesan cheese.
- In a large pot of boiling water cook broccoli rabe until tender, remove from pot and drain well, do not throw out the water, add salt and bring to a boil and cook pasta until al dente.
- To clean broccoli rabe, leave the flower and a small part of the stem and a couple of leafs (the tender parts of the vegetable) , boil in unsalted water for approximately 10 minutes (you want it tender but not mushy, if the stem gives when pinched it is done)

- Clean the broccoli rabe by removing the hardest and thickest stems and the larger leaves (you can keep the flowers). Break the greens into pieces and wash well.
- Boil the broccoli rabe and the orecchiette together in salted water until the pasta is al dente then drain. (if using fresh orecchiette, let the broccoli rabe cook for 5 minutes first then add the pasta)
- In a frying pan or skillet, heat the olive oil and add the peeled and chopped garlic. Let the garlic soften a little and then add the peperoncino (if you are using it) and the anchovies and stir until the anchovies melt. Keep the heat low so nothing burns.

- In a bowl, add the durum wheat semolina flour. Then add the hot water and start incorporating the two, first with a fork, then with your hands.
- Transfer the dough onto a worktop and start kneading vigorously with your hands for about 10 minutes, or until you get a smooth dough ball. The dough should be quite compact and NOT sticky at all. If your dough is too sticky, then add more durum wheat semolina flour until is not anymore.
- Shape the orecchiette like shown in this video. NB: if your dough is too elastic and hard to shape, then let it rest for 20 minutes on your worktop, covered with a kitchen cloth. This way the gluten will relax, and the dough will be easier to work with.
- Then set them aside on a worktop covered with a thin layer of durum wheat semolina flour. You can now either let them dry for 12 to 24 hours and store them in a jar, or cook them straight away.
