CREAMY ZUCCHINI & SPINACH RIGATONI

Steps:
- Heat oven to 375ºF.
- Cook pasta as directed on package, omitting salt.
- Meanwhile, heat oil in large skillet on medium heat. Add zucchini, mushrooms and garlic; cook 3 to 4 min. or until zucchini is crisp-tender, stirring frequently. Add flour and seasonings; cook and stir 1 min. Stir in broth; cook 2 to 3 min. or until thickened, stirring frequently. Add Neufchatel; cook and stir 2 to 3 min. or until melted.
- Drain pasta. Add to zucchini mixture along with the spinach, Parmesan and 1/2 cup mozzarella; mix lightly. Spoon into 2-qt. casserole sprayed with cooking spray; top with remaining mozzarella.
- Bake 10 min. or until mozzarella is melted.

Steps:
- Melt the butter in a large saute pan; add in the chopped zucchini, onions, and salt; saute over medium ehat for 10-15 minutes, until the veggies are very soft without browning; set aside to cool for 20 minutes.
- In batches, puree the zucchini-onion mixture with the parsley; return the sauce to a clean saute pan; place over low heat.
- Bring a big pot of water to a boil; add salt and then add the rigatoni; cook to al dente.
- Drain, reserving ½ cup of pasta water.
- Toss the pasta in the sauce, adding some of the pasta water if the sauce is too thick.
- Serve right away sprinkled with shredded zucchini and Parmigiano-Reggiano and a drizzle of olive oil.

- Heat the oil in a large skillet over medium heat. Add the onion, carrot, celery, and oregano and cook, stirring occasionally, until slightly softened, 4 to 5 minutes. Add the beef and garlic and cook, breaking the beef into smaller pieces with a wooden spoon, until the onion and beef are lightly browned, 9 to 10 minutes. Pour in the wine and cook until it is nearly evaporated, 1 to 2 minutes. Add the crushed tomatoes, tomato paste, and zucchini; bring to a simmer and cook, stirring often, until slightly thickened, 2 minutes.
- Stir in the rigatoni, salt, pepper, and 3 cups water; bring to a simmer and cook, stirring often, until the sauce is somewhat thickened, about 18 minutes. Add 1 cup water and continue cooking until the pasta is tender, 9 to 10 minutes more.
- Serve the rigatoni topped with the Romano and basil.

- Preheat the oven to 350°. In a large saucepan, cook 6 tablespoons of the butter over moderately high heat until lightly browned, about 2 minutes. Whisk in the flour and cook over high heat, whisking constantly, until foaming. Gradually whisk in the milk and bring the white sauce to a simmer over moderate heat, whisking frequently. Continue cooking until the sauce is thickened and no floury taste remains, about 10 minutes. Stir in the tomato sauce and nutmeg and season with salt and pepper. Remove from the heat.
- Melt the remaining 2 tablespoons of butter in a large skillet. Add the mushrooms and cook over high heat, stirring occasionally, until dry and just beginning to brown, about 8 minutes. Add the onion and cook, stirring frequently, until softened, about 5 minutes longer. Stir the mushrooms and the prosciutto into the sauce.
- In large pot of boiling salted water, cook the rigatoni until barely al dente, about 8 minutes. Drain the pasta and return it to the pot. Add the tomato sauce and all but 1/2 cup of the Fontina and toss well. Transfer the pasta to a 9-by-13-inch glass or ceramic baking dish. Sprinkle the reserved 1/2 cup of Fontina over the top.
- Cover the pasta loosely with foil and bake for about 30 minutes, or until heated through. Remove the foil and bake until the pasta is golden, about 15 minutes longer.
