This has saffron and some other nice spices with some red pepper for a little zing. This is from a cookbook in my pre-Zaar days so I'm afraid I don't know which one.

1 1/4 cups basmati rice
1/2 teaspoon salt
1/4 teaspoon ground cardamom
1/4 teaspoon turmeric
1/4 teaspoon cayenne pepper
1/8 teaspoon cinnamon
1 dash saffron
2 1/2 cups water

Steps:

  • Combine all ingredients in a medium saucepan.
  • Bring to a boil, and stir.
  • Cover, reduce heat, and simmer 20 minutes.
  • Remove from heat and let rice stand 5 minutes.

1 cup uncooked long-grain (white) basmati rice (recommended: Texmati)
1 3/4 cups water
3/4 teaspoon kosher salt
1 tablespoon unsalted butter
2 tablespoons minced fresh curly parsley leaves
1 tablespoon minced fresh dill leaves
1 tablespoon minced fresh scallions, white and green parts
Pinch freshly ground black pepper

Steps:

  • Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan. Bring to a boil over high heat; reduce the heat to low, stir once, and simmer, covered tightly, for 15 minutes. (I need to pull the pot half off the burner to keep it from boiling over.) Turn off the heat and allow the rice to sit covered for 5 minutes. Add the parsley, dill, scallions, and pepper. Fluff with a fork, and serve warm.

1 tablespoon olive oil
1/2 large sweet onion, finely diced
2 Fuji or Gala apples, diced
1 1/2 cups basmati rice
2 tablespoons fresh thyme leaves
2 1/2 cups chicken stock
1/2 cup apple juice
2 tablespoons unsalted butter
1 tablespoon apple cider vinegar
Kosher salt

Steps:

  • Heat a Dutch oven over low heat and add the oil. Add the onions and sweat until translucent, 8 to 10 minutes. Increase the heat to medium, add the apples, tossing well, and cook until they start to brown. Add the rice and thyme. Cook for 1 to 2 minutes, then add the chicken stock, apple juice, butter, vinegar and some salt and bring to a simmer. Cover, reduce the heat to low and cook until the rice is tender, about 20 minutes.
  • Fluff with a fork and adjust the salt as needed.

1 piece cinnamon stick (2 inches long)

Steps:

  • Bring juice, water and salt to a boil in medium saucepan.
  • Add remaining ingredients; reduce heat to low. Cover; simmer 25-30 minutes or until liquid is absorbed.
  • Remove ginger and cinnamon stick; discard.

This recipe came from a book about the healing properties of food. The main healing ingredient is turmeric. I could not tell you why though. My recipe card smells of turmeric from when I make this recipe. I serve this with my Recipe #254228. My husband says this meal cures a sore throat. This is one of my all time favorite meals.

2 cups basmati rice, rinsed and soaked for an hour
3 tablespoons olive oil
3 tablespoons pine nuts
2 large onions, diced
1 cup raisins
1/2 teaspoon turmeric
1 teaspoon salt

Steps:

  • Heat the oil in a 2 quart sauce pan.
  • Toast pine nuts until they are fragrant, about 3 minutes.
  • Add onions and cook until soft.
  • Add raisins, rice, turmeric and salt.
  • Add water until rice is covered. boil and cook until the water has mostly absorbed. Keep this up until the rice is cooked, about 25 minutes (almost like cooking a risotto).

1 (2 inch) piece cinnamon stick
2 pods green cardamom
2 whole cloves

Steps:

  • Place rice into a bowl with enough water to cover. Set aside to soak for 20 minutes.
  • Heat the oil in a large pot or saucepan over medium heat. Add the cinnamon stick, cardamom pods, cloves, and cumin seed. Cook and stir for about a minute, then add the onion to the pot. Steps:

  • Rinse the rice under cold water. Combine the rice, water, coconut milk, ginger, soy sauce, lemongrass, and curry leaves in a saucepan and stir. Steps:

  • Place rice in a fine strainer, and rinse with cold water until water runs clear. Transfer to a medium saucepan. Add 1 cup water, coconut milk, chicken broth and salt. Cover, and place over medium-high heat. Bring liquid to a boil, then reduce and simmer until liquid has been absorbed and rice is tender, about 15 minutes.
  • Remove from heat, and stir in scallions and ginger. Add a little more coconut milk if rice is too dry. Season to taste with salt. Serve.

  • RINSE AND SOAK: Place the rice in a mesh sieve. Rinse under cold running water for at least 2-3 minutes. When the water runs clear, place the rice in a medium bowl and fill the bowl up with cold water. You want there to be at least 3 cups of water for 1 cup of rice. Allow the rice to soak for 30-45 minutes. During the last 15 minutes, bring the 8 cups of water to a boil in a 3-quart saucepan (or larger.)
  • BOIL: When the water is boiling, lower the heat for just a second and add the salt and vinegar. Once the ingredients are added, kick the heat back up to medium-high. Drain the rice using a sieve. Add the rice to the boiling water and cook for 5-9 minutes. Check the rice every minute after the 5 minutes are up. You want it to be a hair underdone to your ideal preference. If you prefer softer rice, it’ll take you closer to 6-9 minutes. For a more al dente rice, aim for 4-6 minutes. Drain the rice in the same mesh sieve and do a quick rinse under cold running water. Let the rice drain while you prepare the saucepan.
  • STEAM: Make sure there’s no water remaining in the saucepan. Place the pan over medium heat and drizzle with oil. Add drained rice to the pot, cover with a tight-fitting lid and lower the heat to medium-low. Listen to the rice to see when it just starts to gently sizzle. That’s when you can lower the heat to the lowest setting and continue to steam the rice for 6 minutes. Turn off the heat and allow the rice to sit for 5 minutes before plating and serving.
