Time 3h

Number Of Ingredients 17

2 lb chicken (any cut, chopped into large 2-3" pieces)
1 1/2 lb potatoes
1/2 lb carrots
1 medium-sized onion
4 garlic cloves (finely chopped)
2 stalks lemongrass (cut into 5" pieces then split lengthwise, smashed to expose more leaves)
3 bay leaves
1/2 cup coconut milk
oil for frying
2 tsp sugar
2-3 cups chicken broth
2-3 cups water
2 tsp salt
2 tsp onion powder
2 tbsp Vietnamese curry powder
1 lemon (sliced)
1/4 tsp sambal / vinegary chile paste

Steps:

  • Cut chicken into large 2-3" chunks if using large pieces.
  • Add salt, onion powder & curry powder to chicken. Marinate for 2-4 hours.
  • Cut onions, potatoes and carrots into 1.5-2" chunks.
  • Deep fry potatoes and carrots until lightly browned so they hold their shape.
  • After marinating, brown chicken on all sides in small batches in a pot, skin side down first. Add oil if you're using skinless.
  • Remove chicken, drain fat and clean off any burned residue in the pot.
  • Add some oil to the pot on low heat and sweat onion until soft, then add garlic until lightly brown.
  • Return chicken to the pot with lemongrass, bay leaves, and sugar.
  • Add 50% water and 50% chicken broth to the pot until all ingredients are fully submerged.
  • Put the flame on high until boiling, reduce to medium-high heat to maintain a low boil.
  • After 5 minutes of low boil, taste the broth and adjust with salt, sugar, and curry powder to taste if needed.
  • Add potatoes and carrots, and more water and chicken broth to cover (50/50 ratio).
  • Return the flame to high heat until it hits a boil, then reduce to a low simmer until the chicken is fully cooked, and the potatoes and carrots reach desired doneness.
  • Add coconut milk, stir and raise the heat to high until it hits a boil, then turn off the heat.
  • Serve with bread, accent with a squeeze of lemon and sambal for heat.

VIETNAMESE STYLE VEGETARIAN CURRY SOUP

Vietnamese Style Vegetarian Curry Soup image

Vietnamese style curry powder can be found in Asian markets - especially in cities that have a large Vietnamese population. If you can't find it, use Madras curry powder. This spicy soup can be made into a thick stew by reducing the vegetable stock and water by half. Serve with rice and French bread.

1 stalk lemon grass, cut into 2 inch pieces
4 tablespoons curry powder
1 green bell pepper, coarsely chopped
2 carrots, peeled and diagonally sliced
8 mushrooms, sliced
1 pound fried tofu, cut into bite-size pieces
4 cups vegetable broth
4 cups water
2 tablespoons vegetarian fish sauce
2 teaspoons red pepper flakes

2 kaffir lime leaves
8 small potatoes, quartered

8 sprigs fresh chopped cilantro, for garnish

2 Tbs. canola oil
1 large yellow onion, finely diced
4 medium cloves garlic, minced
One 2-inch piece fresh ginger, peeled and finely grated (1 Tbs.)
1 Tbs. ground coriander
1-1/2 tsp. ground cumin
3/4 tsp. ground turmeric
1/2 tsp. cayenne
1 Tbs. tomato paste
2 cups lower-salt chicken broth or vegetable broth
1 cup light coconut milk
One 3-inch cinnamon stick
Fine sea salt and freshly ground black pepper
1 small cauliflower, broken into 1-1/2-inch florets (about 4 cups)
1 lb. sweet potatoes, peeled and cut into 1-inch cubes (about 3 cups)
2 medium tomatoes, cored, seeded, and coarsely chopped (about 1-1/2 cups)
2 large carrots, peeled and cut into 1/2-inch-thick rounds (about 1 cup)
One 15-1/2-oz. can chickpeas, drained and rinsed
4 oz. baby spinach (about 4 lightly packed cups)
2 Tbs. fresh lime juice

Steps:

  • In a 5- to 6-quart Dutch oven or other heavy-duty pot, heat the oil over medium-high heat. Add the onion and cook, stirring occasionally, until beginning to brown, 3 to 4 minutes. Reduce the heat to medium (or medium low if necessary) and cook until the onion is richly browned, 5 to 7 minutes more. Add the garlic and ginger; cook, stirring, for 1 minute to blend the flavors. Add the coriander, cumin, turmeric, and cayenne; stir for 30 seconds to toast the spices. Add the tomato paste and stir until well blended with the aromatics, about 1 minute.Add the broth, coconut milk, cinnamon stick, 1 tsp. salt, and 1/4 tsp. pepper and bring to a boil. Reduce the heat to medium low or low and simmer for 10 minutes. Add the cauliflower, sweet potatoes, tomatoes, and carrots. Raise the heat to medium high and return to a boil. Reduce the heat to medium low, cover, and simmer until the vegetables are tender, 20 to 25 minutes. Discard the cinnamon stick. Stir in the chickpeas, spinach, lime juice, and zest; cook until the spinach has wilted, about 3 minutes more. Season to taste with salt. Serve garnished with the cilantro.

VIETNAMESE VEGETABLE CURRY

Vietnamese Vegetable Curry image

Indian merchants introduced curries to Vietnam more than ten centuries ago. The Vietnamese made curry their own by adding their own flavors such as lemongrass and ginger. For this recipe, use the Vietnamese curry powder called Golden Bells. It's milder (less cumin and fennel seeds) and won't overwhelm the lemongrass and ginger. In case it's not available, I've included a recipe for a curry powder to make at home. For a variations of this recipe, try yucca, taro, cauliflower, long beans and chayote. The recipe is adapted from the book, Pleasures of the Vietnamese Table, by Mai Pham. The Vietnamese curry recipe is from, A World of Curries, by Dave DeWitt.

VIETNAMESE SPICY VEGETABLE CURRY

Vietnamese Spicy Vegetable Curry image

This Heart Smart vegetable curry was developed by Mai Pham for her book: "Best of Vietnamese and Thai Cooking" and is served at her restaurant, "Lemongrass" in Sacramento. She substitutes low fat milk for coconut milk to keep the saturated fat content down. I suggest adding a little coconut flavoring. Also a Vietnamese brand of curry powder such as Golden Bells would be preferred, or use a brand that is low in cumin and fennel.

  • Tofu Banh Mi. The banh mi sandwich is a popular Vietnamese street food that originated in Saigon. French baguette is filled with pickled vegetables, mayo, herbs, and a type of protein, such as chicken, pate, or pork.
  • Vietnamese Curry. Curry is usually associated with Indian recipes, but Vietnamese cuisine also often makes use of this aromatic spice. This dish is further enhanced with lemongrass, lime, garlic, and ginger, giving you an abundance of flavors!
  • Pho. Pho is among the most popular dishes Vietnam has to offer, and for good reason. The many colors and flavors that go into this make it truly spectacular.
  • Vietnamese Noodle Bowls. This dish of vermicelli noodles, cucumber, lettuce, carrots, and tofu is brimming with color and flavor. The added lemongrass tofu makes it extra delicious.
  • Tofu Spring Rolls. Fresh vegetables are flavored with herbs and wrapped in soft and delicate rice paper. This is healthy living at its best! While the colorful vegetables are enough to give these rolls diverse flavors, it’s the crispy and perfectly seasoned tofu that takes it over the top.
  • Vietnamese Lime Iced Tea. Refreshments, anyone? It’s nothing fancy, really; just a glass of brewed tea made even better with honey and lime juice. And of course, let’s not forget the ice!
  • Peanut Sticky Rice. Peanuts and rice – an unusual combination, but it definitely works. Xoi dau phong is a Vietnamese delicacy that combines glutinous rice and crunchy peanuts.
  • Vietnamese Papaya Salad. Shreds of green papaya, fried onions, and roasted peanuts are dressed in lime dressing to make a crunchy and refreshing side dish.
  • Vietnamese Carrot and Radish Pickles. Carrot and radish pickles are sweet, salty, tangy, and wonderfully crunchy! I hate how some pickles are too intense to eat on their own.
  • Vietnamese Crepes. These crispy savory crepes are made of tapioca starch, coconut milk, and rice flour. It’s not just about the crepes, though. Filled with tofu, mushrooms, mung beans, sprouts, and carrots, they’re definitely overflowing with flavor!
