1 pound refrigerated pizza dough
Coarse cornmeal, for dusting
4 ounces cream cheese, at room temperature
1 cup shredded pepper jack cheese (about 4 ounces)
Kosher salt
1/2 cup spicy marinara sauce
1/2 cup shredded part-skim mozzarella cheese (about 2 ounces)
Extra-virgin olive oil, for brushing
2 jalapeno peppers (red and/or green), thinly sliced

Steps:

  • Put a pizza stone or inverted baking sheet on the middle oven rack and preheat to 425 degrees F for 1 hour. Meanwhile, bring the pizza dough to room temperature. Sprinkle a 15-inch round pizza pan with cornmeal.
  • Mix the cream cheese, 1/2 cup pepper jack and 1/4 teaspoon salt in a medium bowl until combined.
  • Stretch the dough almost to the edge of the pizza pan, pressing with your fingertips (lightly oil your hands if the dough is too sticky). Spoon the cream cheese mixture in a thin border around the edge of the dough, about 1/2 inch from the edge. Fold the edge of the dough over the cream cheese mixture and pinch to seal.
  • Put the pan on the hot stone and bake until the crust is lightly golden, 5 to 8 minutes. Remove from the oven, spread the sauce in the middle and top with the mozzarella and the remaining 1/2 cup pepper jack. Brush the crust with olive oil and top with the jalapeno slices. Bake until the crust is browned and crisp and the cheese is bubbling, 8 to 12 more minutes.

1 (15- ounce) pizza dough
8 ounces cream cheese, room temperature
1/3 cup sour cream
1 (1- ounce) package dry Ranch seasoning
1 ½- 2 cups grated cheddar or mozzarella (or a combination of the two)
1 cup sliced fresh jalapeños or jarred jalapeños

Steps:

  • Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
  • Mix the cream cheese, sour cream and ranch seasoning together until smooth. Side aside.
  • Press the pizza dough into a large rectangle on the parchment paper, about 1/4- inch thick.
  • Spread the cream cheese mixture on top of the dough leaving 1/2- inch at the edge as the crust.
  • Sprinkle the grated cheese evenly on top of the cream cheese layer. Place the jalapeños evenly on top of the grated cheese.
  • Bake the pizza for 25 minutes until the dough is golden brown and the cheese is melted.
  • Serve immediately.

¾ cup chopped onion
2 cloves garlic, chopped
½ teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon ground black pepper
1 (8 ounce) package reduced-fat cream cheese, cut into cubes
¼ cup sour cream
1 prepared 16-inch pizza dough pastry
1 cup shredded mozzarella cheese, or more to taste
½ cup shredded reduced-fat Cheddar cheese
4 jalapeno peppers, sliced into thin rings
1 tablespoon dried parsley flakes

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove bacon with a slotted spoon to drain on paper towels, reserving drippings in the pan.
  • Saute onion in bacon drippings until translucent, 5 to 7 minutes. Add garlic; continue to saute until garlic is golden, 2 to 3 minutes. Season the onion mixture with cumin, oregano, and black pepper. Stir cream cheese and sour cream into the onion mixture until smooth and spreadable.
  • Spread the cream cheese mixture evenly over the pizza dough; top with mozzarella and Cheddar cheeses. Arrange bacon and jalapeno pepper rings over the cheese layer. Sprinkle parsley over the entire pizza.

1 teaspoon vegetable oil
10 slices bacon
4 burrito-size flour tortillas
1 cup pizza sauce
3 cups shredded mozzarella cheese (about 12 ounces)
1/2 cup pickled jalapeno slices, plus 2 teaspoons brine
2 ounces cream cheese
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 500˚. Set a wire rack on each of 2 rimmed baking sheets. Heat the vegetable oil and bacon in a large nonstick skillet over medium-high heat. Cook, turning occasionally, until crisp, 8 to 10 minutes. Transfer the bacon to paper towels to drain, then chop. Pour the drippings into a small bowl and wipe out the skillet.
  • Return the skillet to medium-high heat. Lightly brush 1 tortilla with the reserved bacon drippings. Add to the skillet and cook until lightly browned on the bottom, about 2 minutes. Flip and cook, rotating the tortilla and gently pressing it with a spatula, until crisp, about 3 minutes. Transfer to one of the racks, crisp-side down. Repeat with the remaining tortillas and bacon drippings, reducing the heat if the tortillas are browning too quickly.
  • Spread the pizza sauce on the tortillas, then sprinkle with the mozzarella, chopped bacon and pickled jalapenos. Working in batches, bake the pizzas, 1 baking sheet at a time, until the cheese is melted and bubbling, about 8 minutes.
  • Microwave the cream cheese in a small microwave-safe bowl until runny, about 30 seconds. Stir in the jalapeno brine and season with salt and pepper. Drizzle on the pizzas. Cut into wedges.

1 (13 7/8 ounce) package pizza crusts (pillsbury refrigerated)
4 slices bacon, sliced
1/2 cup red pepper, finely chopped (aprox. 1 small pepper)
2 jalapeno peppers, chopped fine
4 ounces cream cheese, softened
1 cup cheddar cheese, shredded
1/2 cup corn chips, crushed

Steps:

  • Preheat the oven to 425 degrees.
  • Open the crust. DO NOT UNROLL. Place the pizza dough on a lightly floured cutting board.
  • Gently roll the log shape into a thinner cylinder measuring aprox. 11 1/2 inches.
  • Using a sawing motion, cut the dough into 24 pieces.
  • Place on a baking pan; press the dough pieces slightly (helps prevent them from rising too much).
  • Bake 11-13 minutes until golden brown.
  • Fry the bacon & remove once cooked.
  • Using 1 tsp bacon drippings, saute the red pepper & jalapenos until tender.
  • Combine cream cheese, 1/2 cup cheddar cheese, sauteed peppers & bacon; mix well.
  • Divide evenly over the crusts.
  • Combine remaining cheese w/ corn chips.
  • Sprinkle on top.
  • Bake 4-6 minutes until cheese is melted.

4 -6 slices bacon, chopped
2 jalapenos, sliced (to taste)
1 -2 teaspoon olive oil
1 shallot, sliced (can sub 1/2 white onion)
6 ounces cream cheese, softened
1 1/2 cups grated monterey jack cheese (or more to taste)

Steps:

  • Preheat the oven to 475 degrees. Lightly coat baking sheet or pizza pan with olive oil or cookng spray.
  • Heat small skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate; set aside. Note: Can cook bacon slices whole and then crumble.).
  • In small bowl, combine jalapenos and shallot with 1-2 teaspoons olive oil.
  • Roll out pizza dough into a 10-inch-diameter round. Transfer to prepared baking sheet or pizza pan. Bake the crust 5-8 minutes then remove from oven.
  • Spread the cream cheese evenly over top of pizza crust, leaving a 1-inch border. Top with monterey jack, jalapenos, shallots and bacon.

12 jalapeno chillies (we used jalapeno but other mild green chillies would work)
150g full-fat cream cheese
50g grated mozzarella
30g plain flour
2 large eggs , lightly beaten
100g fresh breadcrumbs
oil for deep frying
To serve lime wedges (optional)

Steps:

  • Take one whole chilli and using a small sharp knife make an incision along the length without cutting all the way through. Open up the cavity and using the end of a teaspoon scrape out and discard the seeds and the membrane. It's very good idea to wear gloves when you're preparing chillies in this way, and make sure you wash your hands thoroughly afterwards. Repeat with all the other chillies.
  • Mix the cream cheese with the mozzarella, season with salt and pepper then use it to fill the chillies. Push them gently to close them up and wipe off any excess.
  • Put the flour, egg and breadcrumbs in separate shallow bowls or dishes and roll the stuffed chillies first in the flour then egg then breadcrumbs then repeat so they get a good double coating.
  • Heat the oil in a large saucepan until it reaches 160C. Carefully lower the chillies into the oil using a slotted spoon and deep fry in batches for around 2-3 mins or until deep golden brown. Transfer to a plate lined with kitchen paper to soak up the excess oil.
  • Once the chillies are fried season them with pepper and salt and spread out on a plate or board so everyone can help themselves. Great with beer and a movie.
