Time 1h25m

Number Of Ingredients 23

12 oz. thin white rice noodles (use very thin vermicelli or ones that are a bit thicker
4 to 6 c. sliced romaine or iceberg lettuce
1 to 2 large carrots, julienned (this julienne peeler works great)
half of a large English cucumber, sliced into thin rounds
1 c. bean sprouts
1 bunch fresh cilantro (coursely chop or tear, if desired)
1 bunch fresh mint (coursely chop or tear, if desired)
fresh lime wedges
1-1/2 c. water
1/4 c. rice vinegar
1-1/2 T. fish sauce
3 T. sugar
1 medium garlic clove, minced
1/2 tsp. kosher salt
1 pinch crushed red pepper
1 lb. pork tenderloin
3 T. sugar
1 T. fish sauce
3 T. sesame oil, divided
1 T. soy sauce
2 tsp. ground black pepper
1 tsp. kosher salt
1 large clove garlic, minced

Steps:

  • for the pork: Place pork tenderloin in freezer to chill for 30 minutes. Remove from freezer and cut crosswise into very thin slices, about 1/8" thick. Then cut each slice in half lengthwise. Place pork pieces in a wide shallow bowl or large zip-top baggie.
  • In a small bowl, stir together sugar, fish sauce, 1 tablespoon of the sesame oil, soy sauce, black pepper, salt, and garlic. Pour mixture over pork pieces and fold several times to ensure the marinade is thoroughly mixed in with the pork. Cover bowl and place in refrigerator to marinate for 1 hour. Meanwhile, prepare the sauce and noodles.
  • for the sauce: In a small saucepan over medium to medium-high heat, stir together all sauce ingredients. Once sugar and salt have dissolved, remove from heat to cool to room temperature.
  • for the noodle salad: Bring a large saucepan of water to a boil. Add rice noodles, stir, and turn off heat. Let noodles soften according to the package directions, then drain and rinse in cold water in a colander. Shake very well to remove water and leave sit in colander at room temperature.
  • Divide noodles amongst four low wide bowls or plates. Top each with lettuce, carrots, cucumber, bean sprouts, cilantro, mint, and lime.
  • Remove pork from refrigerator. Heat a large cast iron skillet over medium-high to high heat. When hot, add remaining 2 tablespoons of the sesame oil and swirl around the bottom of the skillet. When oil is shimmering, carefully add pork. Separate pork pieces to cover bottom of skillet. Let pork sit without stirring for about 1 minute, to caramelize. Fold and repeat until pork is cooked through, about 5 minutes. Total cook time will depend on how thin the pork is cut, etc.
  • Divide hot pork amongst each of the four bowls. Serve with sauce to pour over individual bowls.

Yield 4-6 serving(s)

Number Of Ingredients 17

8 ounces rice vermicelli
1 head boston lettuce, torn into bite-size pieces (8 ounces)
1 English cucumber, peeled, quartered lengthwise, seeded and sliced thin on bias
1 cup fresh cilantro leaves, chopped
1 cup fresh mint leaves, torn if large (can add or sub Thai basil)
1 small Thai chile, stemmed and minced
3 tablespoons sugar
1 garlic clove, minced
2/3 cup hot water
5 tablespoons fish sauce
1/4 cup lime juice (2 limes)
1 large shallot, minced
1 tablespoon fish sauce
1 1/2 teaspoons sugar
1/2 teaspoon baking soda
1/2 teaspoon pepper
1 lb ground pork

Steps:

  • FOR THE NOODLES AND SALAD: Bring 4 quarts water to boil in large pot. Stir in noodles and cook until tender but not mushy, 4 to 12 minutes. Drain noodles and rinse under cold running water until cool. Drain noodles very well, spread on large plate, and let stand at room temperature to dry. Arrange lettuce, cucumber, cilantro, and mint (and/or basil) separately on large platter and refrigerate until needed.
  • FOR THE SAUCE: Using mortar and pestle (or on cutting board using flat side of chef's knife), mash Thai chile, 1 tablespoon sugar, and garlic to fine paste. Transfer to medium bowl and add hot water and remaining 2 tablespoons sugar. Stir until sugar is dissolved. Stir in fish sauce and lime juice. Set aside.
  • FOR THE PORK PATTIES: Combine shallot, fish sauce, sugar, baking soda, and pepper in medium bowl. Add pork and mix until well combined. Shape pork mixture into 12 patties, each about 2 1/2 inches wide and 1/2 inch thick.

  • FOR A GAS GRILL: Turn all burners to high, cover, and heat grill until hot, about 15 minutes. Leave all burners on high.
  • Clean and oil cooking grate. Cook patties (directly over coals if using charcoal; covered if using gas) until well charred, 3 to 4 minutes per side. Transfer grilled patties to bowl with sauce and gently toss to coat. Let stand for 5 minutes.
  • Transfer patties to serving plate, reserving sauce. Serve noodles, salad, sauce, and pork patties separately.

Categories     One Dish Meal

Time 1h40m

Yield 4 serving(s)

Number Of Ingredients 15

2 tablespoons sugar
5 tablespoons water
1 lb ground pork
1 large shallot, minced as small as possible
3 tablespoons fish sauce
1/4 teaspoon fresh ground black pepper
2 tablespoons fish sauce
2 tablespoons rice vinegar
1 -2 teaspoon brown sugar
1 cup water
1/2 teaspoon minced garlic (or grated)
1 red Thai chile, minced
1 lb thin rice noodles
1/2 head lettuce, torn into small pieces (use soft leaf lettuce, red adds more color, but green is fine)
2 cups loosely packed of a mixture of asian herbs (such as cilantro, mint, shiso, Thai basil, etc.)

Steps:

  • In a small saucepan, combine the sugar with 3 tablespoons water and cook over high heat until a dark brown caramel forms, about 8 minutes. Remove from the heat and add 2 tablespoons cold water, swirling the pot.
  • In a large mixing bowl, combine the pork, shallot, fish sauce, caramel sauce, and pepper, and marinate in the refrigerator for 90 minutes to six hours.
  • Meanwhile, combine all ingredients for the sauce in a large mixing bowl.
  • When the pork is through marinating, remove from the refrigerator and shape into small patties, about 15 to 20 in all. Heat a charcoal grill or a broiler to high. Bring a pot of water to a boil and cook the noodles according to the directions on their package. Drain, then rinse under cold water to halt the cooking process.
  • Meanwhile, grill or broil the pork patties until fully cooked and slightly charred, about 4 minutes per side.
  • Spoon the sauce into four bowls, then place the pork patties over the sauce. Place the herbs and lettuce in one large communal bowl and the noodles into another large communal bowl. To eat, dip some of the noodles into the sauce and eat with the patties and herbs.

VIETNAMESE NOODLE SALAD WITH PORK PATTIES

VIETNAMESE NOODLE SALAD WITH PORK PATTIES image

Categories     Salad     Pork

Yield 2-3 servings

Number Of Ingredients 14

8 or 9 oz. rice vermicelli noodles (thin rice sticks)
Kosher salt
1/2 cup very thin carrot strips (julienne)
1/2 cup very thin daikon radish or jícama strips (julienne)
3 tsp. granulated sugar
1 tsp. red-wine vinegar
Vietnamese Dipping Sauce (nuoc cham)
1 lb. ground pork (ask the butcher for coarsely ground pork butt)
5 small or 4 large scallions, thinly sliced
1-1/2 tsp. fish sauce
Freshly ground black pepper
6 large leaves romaine lettuce, torn into bite-size pieces
1 cup roughly chopped fresh mint
1 cup roughly chopped fresh cilantro

Steps:

  • Soak the rice vermicelli in a large bowl of warm water for 15 min. Meanwhile, bring about 2 quarts water and 1 tsp. kosher salt to a boil in a large saucepan over high heat. Drain the noodles and add them to the boiling water, stirring with chopsticks to gently separate the strands. When the water returns to a boil (after about 2 min.), drain the noodles in a colander (push the strands against the sides of the colander with chopsticks to help them drain completely). Put the noodles on a platter and fluff them with chopsticks. Set aside until cool, at least 30 min. and up to 2 hours. Put the carrots and daikon or jícama in a colander. Sprinkle on 1 tsp. of the sugar, the vinegar, and 1/4 tsp. kosher salt and mix well. Let the colander sit in the sink for 10 min., and then gently squeeze the vegetables to get rid of the liquid. Add the vegetables to the bowl of dipping sauce. Put the pork in a bowl. Add the scallions, the remaining 2 tsp. sugar, the fish sauce, 1/8 tsp. kosher salt, and 1/8 tsp. pepper and mix gently with your hands. Shape the meat into small patties about 2 inches wide and 3/4 inch thick; you should have ten patties. Grill the patties over a medium- hot gas or charcoal grill, (or in an oiled grill pan or skillet over medium-high heat) until they're well browned outside and cooked through but still moist inside, 8 to 10 min. on a grill; 15 min. on a grill pan (cut into one to check-it's fine if the pork is still a little pink inside). Add the cooked patties, still warm, to the bowl of sauce and vegetables and let sit for 5 to 10 min. before serving. Serve the noodles on the platter, along with the lettuce, mint, and cilantro. Remove the pork patties from the sauce and put them on a different platter. Give everyone a large bowl and let people serve themselves noodles, lettuce, and herbs, then top that with pork patties and a generous drizzle of the dipping sauce and the vegetables in it. Toss gently.

NEM NUONG (VIETNAMESE GRILLED PORK PATTIES)

Nem Nuong (Vietnamese Grilled Pork Patties) image

The Vietnamese names confuse me, but not the taste. It's all good! Recipe inspired by The Ravenous Couple blogspot.

Provided by gailanng

Categories     Pork

Time 1h40m

Yield 4-6 serving(s)

Number Of Ingredients 20

2 lbs ground pork
1 whole head of garlic (cloves, peeled but can use more or less according to taste)
1/3 cup sugar
1/2 tablespoon salt
1/2 tablespoon pepper
4 teaspoons baking powder (optional and see Instruction 2)
1/4 cup water
1 drop red food coloring (optional) or 1 teaspoon caramel syrup (optional)
2 garlic cloves, minced
2 tablespoons sugar
1/2 cup water
1/4 cup asian fish sauce
1/4 cup fresh lime juice
2 tablespoons white vinegar
1 -2 red Thai chile, thinly sliced
1 (14 ounce) bag vermicelli
fresh herb (optional)
pickled carrots and daikon radish (optional)
fried shallots (optional)
chopped roasted peanuts

Steps:

  • Using food processor, process garlic until finely pureed. Combine pork, garlic, salt, pepper and sugar in mixing bowl and mix well. In a separate bowl, combine baking powder and water and stir. Mixture will bubble and foam. Add one drop of food coloring or caramel syrup (this adds color to the pork when grilled).
  • Fold the baking powder into mixture and allow meat to chill for about 30 minutes to 1 hour or longer. The baking powder forms air bubbles and adds more bouncier or spongier texture.
  • Refrigerate meat mixture a few hours to let it set for easier handling while forming patties, balls or flattened mini sausages. Keep a bowl of water handy and your hands wet for easy handling.
  • Grill or pan fry about 4-5 minutes per side.
  • Serve with Nuoc Cham and vermicelli (bean thread), if desired.
  • To make Nuoc Cham: In a bowl, mash the garlic with the sugar. Add remaining ingredients and mix well.
  • To make Bun Nem Noung: Place vermicelli in boiling water for about 6-8 minutes, stirring regularly to keep from sticking to the bottom of the pot. To check for doneness, take a strand and taste. It should be still slightly firm but easily breaks apart. Drain and flush with cold water to stop the cooking process.
  • Combine vermicelli in bowls with nem nuong (pork patties), fresh herbs, pickled carrots and daikon, fried shallots and/or crushed roasted peanuts and dress with Nuoc Cham (sauce).
