Steps:
- Preheat an oven to 425 degrees F (220 degrees C).
- Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.
- Bake in the preheated oven 30 minutes, flipping the fries halfway through baking. Return the fries to the bowl with the olive oil, sprinkle with 1/2 cup Parmesan cheese and parsley. Toss to coat, then spread again onto the baking sheet. Return to the oven, and bake until the Parmesan cheese melts, about 10 minutes. Sprinkle the fries with the remaining 1/4 cup Parmesan cheese and 1/4 teaspoon seasoned salt to serve.

Steps:
- In a deep heavy pot or a deep fryer, add the oil and heat to 325 degrees F.
- Cut the potatoes lengthwise into 1/4-inch sticks. Put them in a bowl of cold water and let soak for 15 minutes. Drain and dry them well.
- Carefully drop the potatoes, in batches, in the hot oil. Cook until golden brown and cooked through, about 5 minutes. Drain well on brown paper. Let cool.
- Increase the oil temperature to 350 degrees F. When you are ready to serve, fry the potatoes again in the hotter oil until golden brown and crispy, 3 to 5 minutes. Drain well on brown paper. Meanwhile, in a small pot, melt the butter with the garlic.
- In a large bowl, toss a large handful of fries with some of the garlic butter. Sprinkle with the Parmesan, parsley, and salt while hot. Serve immediately.

- Prepare the fries according to the package’s directions using either an air fryer or the oven until very crisp. That may require cooking them longer than indicated.
- Meanwhile, combine the garlic and oil in a small pan. Sprinkle with salt, then turn the stove to medium heat. Cook, stirring occasionally, until the garlic is translucent and tender and the oil is foaming all around and over it, 5 to 7 minutes. Remove from the heat.
- When the fries are done, transfer them to a large bowl. Use a spoon to scoop the garlic out of the pan and onto the fries. Leave behind most of the oil; whatever ends up in the spoon naturally is fine. Sprinkle with salt and toss well until the fries are evenly coated. Top with the parsley and eat hot.

- Rinse and scrub your potatoes clean. Use a vegetable peeler to peel the skin off. Cut the potatoes into quarters lengthwise. Then cut further into thinner slices (as thick or thin as you like). Thoroughly pat dry your fries using a paper towel or kitchen towel. Make sure they're as dry as they can be.
- Place the fries in a large pan or a medium pot. Cover the fries with enough oil so that the fries are fully immersed. Turn on the heat to medium low, and let the fries cook for 30 to 35 minutes, or until they're golden and crisp.
- Transfer the cooked fries to a paper towel-lined plate to briefly rest. Drop in your minced garlic into the hot oil to cook for about 30 seconds or so. Remove them before they've turned golden.
- Toss the fries with a drizzle of olive oil in a large bowl before adding the minced garlic, chopped parsley, and grated parmesan. Add a pinch of salt, toss, and taste; add more salt if needed. Serve immediately.
