Categories     Side Dish     Rice Side Dish Recipes

Time 1h

Yield 8

Number Of Ingredients 10

1 tablespoon olive oil
½ cup sofrito
2 cloves garlic, chopped
1 (1.41 ounce) package sazon seasoning with achiote
½ tablespoon adobo seasoning
2 cups medium-grain white rice
2 cups chicken broth
1 ½ cups water
1 (15 ounce) can gandules (pigeon peas), drained and rinsed
2 tablespoons chopped fresh cilantro

Steps:

  • Heat olive oil over medium heat in a medium-sized caldero or nonstick pan. Stir in sofrito, garlic, sazon, and adobo; cook for 4 minutes, making sure not to burn garlic. Stir in rice until coated well; pour in chicken broth and water and stir once more.
  • Bring mixture to a boil and cook over medium-high heat until all liquid has been absorbed and rice looks like it has little holes throughout, 20 to 25 minutes. Reduce heat to low. Stir in peas and cilantro gently from bottom to top, once or twice only. Cover and let sit for 10 minutes.
  • Turn off heat and let rice sit, uncovered, for 10 minutes more.

ARROZ CON GANDULES RECIPE BY TASTY

Arroz Con Gandules Recipe by Tasty image

A traditional Puerto Rican dish, arroz con gandules is rice cooked with green pigeon peas. This orange-hued dish is full of flavor from the herby, peppery sofrito and pairs nicely with stewed chicken, pork, or red beans. Don't worry if the bottom layer burns a bit as you finish cooking the rice--this crispy layer is called pegao and is one of the best parts of the dish!

Categories     Sides

Time 1h15m

Yield 6 servings

Number Of Ingredients 16

½ small bunch fresh cilantro
½ small bunch culantro
¼ white onion, roughly chopped
¼ red bell pepper, roughly chopped
¼ green bell pepper, roughly chopped
4 cloves garlic
½ teaspoon ground cumin
½ teaspoon dried oregano
¼ cup canola oil
10 pimento-stuffed spanish olives, thinly sliced into rounds
1 tomato sauce
2 teaspoons dried adobo seasoning
2 packets Sazón with culantro and achiote seasoning
1 can pigeon peas, drained
3 cups water
3 ⅓ cups medium grain white rice

Steps:

  • To the bowl of a food processor, add the cilantro, culantro, onion, red and green bell peppers and garlic. Pulse until combined. Add the cumin and oregano and pulse a few more times to incorporate. The sofrito should have the consistency of a tapenade.
  • Heat ¼ cup of canola oil in a large pan over medium-high heat. When the oil is shimmering, add the sofrito and fry, stirring constantly, until deepened in color but not brown, about 3 minutes. Add the olives, tomato sauce, adobo seasoning, Sazón seasoning, pigeon peas, and water, and stir to combine.
  • Bring the mixture to a boil, then add the rice. Cook for 15-20 minutes, until the liquid is fully evaporated and the rice around the edges of the pot looks dry.
  • Stir, then reduce the heat to low, cover, and cook the rice for another 30 minutes, stirring every 10 minutes, until the rice is tender and fluffy.
  • Serve the arroz con gandules warm alongside dishes of your choice.
  • Enjoy!

VEGAN ARROZ CON GUANDULES (RICE WITH PIGEON PEAS)

Vegan Arroz con Guandules (Rice with Pigeon Peas) image

Creamy, hearty, and flavorful, this Vegan Arroz con Guandules is a classic Puerto Rican dish. Perfect as a side, but also delicious enough for a main!

Provided by Caitlin Shoemaker

Categories     Side

Time 45m

Number Of Ingredients 18

2 tbsp Neutral Cooking Oil (can sub with Water or Veggie Broth)
½ Yellow Onion, diced
¼ each Red, Yellow, Green Peppers
3 cloves of Garlic, minced
2 tbsp Tomato Paste
1 cube of Vegan Chicken-Flavored Bouillon
2 tsp Capers
2 Bay Leaves
1 tsp Salt-Free Seasoning Blend*
1 tsp Cumin
½ tbsp Badia's Sazon Tropical
1 tsp Goya's Sazon con Azafran
2 tbsp Tamari
1 15.5 oz can Guandules Secos, with liquid ("Dry Pigeon Peas," NOT Green!)
1 13.5 oz Can Full-Fat Coconut Milk
2 cup White Rice
1 bunch Cilantro, coarsely chopped
Black Pepper and Oregano, to taste (Optional)

Steps:

  • First, add the cooking oil to a medium pot and raise to medium-high heat. Add the Onion, diced Bell Peppers, ½ of the bunch of chopped Cilantro, Bay Leaves, and Garlic to the pot. Sauté until the Onions are translucent, about 3-5 minutes. Use a wooden spoon to cook everything; plastic and metal affect the final flavor of the dish!
  • Add the Vegan Chicken-Flavored Bouillon and Tomato Paste to the pot and use the spoon to "mash" them into the Vegetables. Sauté for an additional 2-3 minutes.
  • Then, add the Capers, entire can of Guandules Secos, Tamari, Cumin, and Sazon con Azafran. Sauté until the spices are fragrant and evenly distributed, about 3 minutes.
  • Add ½ of the remaining Cilantro to the pot along with the can of Coconut Milk and remaining spices, then bring everything to a simmer over high heat.
  • Rinse the Rice under cold water, then immediately add it to the simmering mixture. Once a few grains of rice start to float to the top of the mixture, add the rest of the Cilantro, mix well, and cover. Reduce the heat to low and let simmer for 20 minutes. Fluff with a fork, serve, and enjoy! Leftovers will keep in the fridge for up to 5 days.

ARROZ CON GANDULES

Authentic Puerto Rican rice - great side dish, or serve with recipe #220415 and have as a main dish. When I serve it this way, I double the beans and top with shredded lettuce, tomato and avocado. You can substitute other meat for the sausage - ham, chicken or pork. Credit for this recipe goes to my good friend Michelle.

Arroz con gandules is a combination of rice and pigeon peas cooked in the same pot with sofrito. This is Puerto Rico's national dish along with roasted pork. This rice dish is a must for all family events, gatherings or even a day at the beach.

Arroz con Gandules is a combination of rice, pigeon peas, and pork, cooked in the same pot with sofrito. This is Puerto Rico's national dish along with roasted pork.

Provided by Mike Gonzalez

Categories     Side Dish

Time 30m

Number Of Ingredients 16

1 tbsp olive oil
⅓ cup country ham or bacon (diced (optional))
⅓ cup sofrito homemade is best!
3 cups water or low sodium chicken broth
1 packet sazón con achiote y cilantro
1 cube chicken bouillon or more if needed
2 tbsp tomato paste or 1/3 cup tomato sauce
¼ tsp marjoram
¼ tsp oregano
¼ tsp rosemary
¼ tsp thyme
¼ cup cilantro (chopped optional)
2-3 bay leaves
2 tbsp pimento stuffed olives optional
15 oz can Pigeon Peas/Gandules drained and rinsed
2 cups parboiled rice

Steps:

  • Heat your caldero or Dutch oven to medium heat, and add your olive oil, bacon/ham (if using) and sofrito. Stir constantly until fragrant and tender, but not browned, about 4 minutes.
  • Next add in the Sazon, tomato sauce or paste and chicken bouillon. Stir to combine.
  • Add in the drained pigeon peas, marjoram, oregano, rosemary, and thyme, bay leaves, and water/broth.
  • Add the cilantro and/or olives, if using.
  • Allow the liquid to come up to a boil, and taste it for salt. If it needs more saltiness, add in another chicken bouillon cube. You want this liquid to be highly seasoned, as it will determine the final seasoning of the rice.
  • Once the mixture is boiling, add the rice. Stir the rice to get it submerged and distribute the pigeon peas throughout.
  • Cover and allow the rice to absorb all the visible liquid. Once most of the visible surface liquid is absorbed, stir the rice, and cover again.
  • Lower the flame to low, and allow it to steam for 20-25 minutes. It's done with all the liquid is absorbed and the grains are fluffy and fully cooked.
