1 (4 1/4 ounce) can chopped black olives
4 green onions, chopped
1/4 lb monterey jack cheese, shredded
1 tomatoes, chopped
1/2 cup Italian salad dressing
1/4 cup chopped cilantro

Steps:

  • Combine all ingredients and refrigerate until served.
  • Serve with tortilla chips.

1 tomatoes, diced (We've found we like to substitute a can of Rotel tomatoes)
1 bunch green onion, chopped
1 (4 ounce) can green chilies, chopped
1 (4 ounce) can black olives, chopped
1 (2/3 ounce) package dried Italian salad dressing mix, Good Seasons

Steps:

  • Grate cheese.
  • Combine with remaining ingredients, toss well and enjoy!

2 lbs monterey jack cheese
1/4 cup flour
1 1/3 cups beer
1/2 cup chopped fresh cilantro
1 pickled jalapeno pepper, minced
2 cloves garlic, minced
1/4 teaspoon ground cumin
salt
white pepper

Steps:

  • Grate the cheese and toss with flour in a large bowl.
  • In a large saucepan, bring the beer to a boil.
  • Reduce the heat to low and add cheese gradually, at about 1/2 cupful at a time, constantly stirring.
  • Stir in the cilantro, jalapeno, garlic, cumin, and salt and pepper to taste.
  • It's easiest to serve this in a fondue pot, to keep it warm, with wedges of bread, tortilla chips, or raw veggies alongside.
