VEGAN COFFEEHOUSE HERMITS
I got this recipe from my new cookie cookbook called "Vegan Cookies Invade Your Cookie Jar" and they came out addictive and delicious! The only thing I changed in the recipe is that I used all whole wheat flour instead of all-purpose, but you can use either. They aren't really sweet so not for everyone, but I love the spicy flavor--the only problem is that I eat way too many of them! p.s. the longer you let them sit before baking, the more delicious they get!

Steps:
- In a large bowl, whisk together the oil, coffee, molasses, and sugar until thick.
- Sift in the flour, baking powder, baking soda, cinnamon, cloves, ginger, black pepper, and salt. Fold in the dry ingredients till almost completely moistened, then fold in the raisins till a soft dough forms.
- Chill the dough in the refrigerator for 30 minutes.
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
- After dough is chilled lightly moisten hands and divide dough in half. Make it into two logs about 13 inches long and 3 1/2 inches wide.
- Sprinkle the tops with sugar.
- Bake 24 to 26 minutes till edges are lightly browned and the logs feel firm. Its okay if they crack.
- Cool 15 minutes.
- Cut the logs into approximately 2 inch slices (or however you like them).
- Cool on wire racks.

Steps:
- In a large bowl, combine the flour, baking soda, salt, and spices; stir well to mix. In the bowl of a standing electric mixer fitted with the paddle attachment, beat together the butter and brown sugar until combined. Beat in the egg until the mixture is smooth. Lower the speed and beat in half the flour mixture, then all the cold coffee. Scrape the bowl and beaters well, then beat in the remaining flour mixture. Stir in the raisins and walnuts. Cover the bowl with plastic wrap and chill the dough for 1 hour.
- About 20 minutes before you are ready to bake the cookies, set the racks in the upper and lower thirds of the oven and preheat to 400 degrees. Drop teaspoonfuls of the dough 2 or 3 inches apart onto the prepared pans. Bake the cookies for 10 to 12 minutes, or until they spread and become firm. Slide the papers off the pans onto racks. After the cookies have cooled, detach them from the paper and store them between sheets of parchment or waxed paper in a tin or plastic container with a tight-fitting cover.

WOW !! What a wonderful cookie. This is my mom's recipe. I made it for the first time today. It has everything a cookie lover would want. Again, the cookie jar will be SO empty.

- In a large bowl cream shortening, sugar.
- Beat eggs, pumpkin and vanilla inches.
- Sift dry ingredients together into a bowl.
- Stir into creamed mixture.
- Add in raisins,chips,dates and nuts.
- Drop by teaspoons on greased sheet.
- Bake 10-12 minutes till golden brown.

A kid friendly desert or sweet side dish at your next pot luck. Called "Cookie Salad" where we live, it is fast & easy to make, and easily doubled or tripled for a crowd. My family prefers "Cookie Salad" without the canned fruit you'll find in most recipes.

- Crush 12 Oreo Cookies into coarse pieces, set aside.
- In a bowl, mix buttermilk & pudding mix together.
- Mix in Cool Whip until smooth.
- Stir in crushed Oreo Cookies.
- Chill to set.
- Top with 6 whole Oreo Cookies immediately prior to serving.

This is a cookie I modified to vegan, as I love Moroccan and Algerian semolina cookies called "Ghoribia". These cookies are delicious, and no one will know they are vegan unless you say so!

- Preheat oven to 350 degrees. Combine flours, baking powder, salt, and allspice in a bowl and mix well. In a separate bowl, place oil, sugar, water and extracts and mix well. Slowly sift dry mixture into the wet mixture. Do not overmix. Roll quarter size balls out of mixture and place on parchment paper/baking pan. Once lined up properly, you can push a nut or topping of your choice into the cookie ball. This helps to flatten the ball a bit as well as add flavor and eye candy. Bake for 10 minutes at 350 and allow to rest for 5 minutes before putting them on a cool plate.
