Number Of Ingredients 16

1 tablespoon sugar
1 tablespoon extra-virgin olive oil
3/4 teaspoon dried basil
1/2 teaspoon dried oregano
4 pounds plum tomatoes, halved lengthwise
Cooking spray
1/3 cup water
4 teaspoons extra-virgin olive oil
3/4 cup chopped onion
1 teaspoon dried basil
1/2 teaspoon dried oregano
3 garlic cloves, minced
1/3 cup dry red wine
2/3 cup water
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • 1. Preheat oven to 250°. 2. Combine first 5 ingredients in a large bowl, tossing gently to coat. Arrange tomato halves, cut sides up, on a jelly-roll pan coated with cooking spray. Bake tomatoes at 250° for 7 hours. Remove pan from oven. Add 1/3 cup water to pan, scraping pan to loosen browned bits. Place a food mill over a large bowl; spoon tomato mixture into food mill. Press mixture through food mill; keep warm. 3. Heat oil in a saucepan over medium-high heat. Add onion and next 3 ingredients (through garlic); sauté 5 minutes or until tender. Add wine; cook 3 minutes or until liquid nearly evaporates. Stir in tomato mixture and 2/3 cup water; bring to a boil. Cover, reduce heat, and simmer 15 minutes, stirring occasionally. Remove from heat; stir in salt and pepper.

Amazingly Sweet Slow-Roasted Tomatoes image

These don't look like they are going to taste as amazing as they do, and I know it might be asking a lot to have the oven on for 2 hours on a hot summer day. But it's on low and the end result will be worth it. Lean over the plate when you bite into the tomatoes, as the juice may squirt. You can eat these as a snack or a side dish, or put them through a food mill for an incredibly sweet sauce.

Yield Serves 4 as a snack, side dish or sauce.

1 pound small plum tomatoes, halved lengthwise
Coarse salt to taste
A tiny amount of sugar
1 tablespoon extra virgin olive oil

Steps:

  • Preheat the oven to 300 degrees. Put the halved tomatoes in a bowl and toss with the olive oil. Oil a rack that will fit on top of a baking sheet. Place foil on the baking sheet and oil the foil, and place the rack on top. Place the tomatoes, cut side up, on the rack. Sprinkle with coarse salt and a tiny amount of sugar. Place in the oven and roast for 2 hours. Remove from the heat and allow to cool for about 30 minutes. The tomatoes will look a little dry on the surfaces and the skin will be tough. But when you bite into the tomatoes you'll experience a rush of incredibly sweet juice and pulp. If you want to use these for a sauce, put through the fine blade of a food mill.

A rich, flavorful sauce that is healthy. Great for use in pasta, lasagna, and other casseroles. My favorite way to eat it is to pour over raw zucchini 'pasta' for an extra-fresh and tasty meal that's very healthy, too! A great recipe for using up extra-ripe tomatoes from your garden. Double the batch and freeze half; it freezes well.

3 tablespoons olive oil
½ onion, chopped
8 large tomatoes, peeled and cut into big chunks
6 cloves garlic, minced
1 bay leaf
½ cup red wine
1 tablespoon honey
2 teaspoons dried basil
1 teaspoon oregano
1 teaspoon dried marjoram
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon fennel seed
¼ teaspoon crushed red pepper
2 teaspoons balsamic vinegar, or more to taste

Steps:

  • Heat olive oil in a stockpot over medium heat. Cook and stir onion in hot oil until softened, about 5 minutes; add tomatoes, garlic, and bay leaf. Bring the liquid from the tomatoes to a boil, reduce to medium-low, and simmer mixture until tomatoes are softened, about 30 minutes.
  • Stir red wine, honey, basil, oregano, marjoram, salt, black pepper, fennel seed, and crushed red pepper into the tomato mixture; bring again to a simmer and cook until herbs have flavored the sauce, about 30 minutes more.
  • Stir balsamic vinegar into the sauce.

  • Preheat oven to 250°. Slice tomatoes and lay out on a sheet pan. Sprinkle with salt and pepper. Scatter herbs and garlic over the top. Drizzle with olive oil. Roast for 2 hours, stirring and flipping tomatoes once. (Alternatively, you can place the pan under a broiler set on high for 8-10 minutes, stirring once during the broil, and watching carefully to prevent burning—though some char is good.)
  • Remove pan from oven and discard herbs. Remove tomatoes and reserve. Strain olive oil and collected juices from the pan into a Dutch oven over low heat. Add the additional olive oil. Mince the garlic (remove skin!) and add to the pot with the pepper flakes, if using. Heat, stirring occasionally, for 2 minutes. Add grated carrot (if using); sauté an additional 2 minutes. Raise the heat to medium-high, stirring to avoid burning the aromatics. Add the fish sauce. Stir constantly until fish sauce is nearly evaporated, then add the wine.
  • When the wine is reduced by approximately half, add the reserved tomatoes and reduce heat to low. Simmer, stirring occasionally, until the sauce thickens slightly, about 30 minutes. Check the seasoning, adjusting salt and pepper if necessary. If desired, purée the sauce or remove any large pieces of tomato skin. Serve over pasta, topped with parmesan and fresh basil (if using), or store for another use.
