BLACK BEAN, LENTIL AND EGGPLANT CHILI



Black Bean, Lentil and Eggplant Chili image

Number Of Ingredients 17

1/2 pound dried black beans, picked through
4 dried pasilla chiles or New Mexico chile peppers, stemmed (remove seeds for less heat)
3 bay leaves
4 large cloves garlic, diced
3 dried cascabel or guajillo chile peppers, stemmed (remove seeds for less heat)
2 dried chipotle chile peppers, stemmed (remove seeds for less heat)
2 tablespoons extra-virgin olive oil
1 onion, diced
1 tablespoon ground cumin
1 poblano chile pepper, diced
1 small eggplant (1 pound), cut into 1/4-inch cubes
Kosher salt
1/2 15-ounce can crushed tomatoes
1/2 15-ounce can diced tomatoes
1 tablespoon vegetable bouillon
1/2 cup dried green lentils
Juice of 2 Key limes (or the juice of 1 lime)

Steps:

  • Put the black beans in a large bowl and cover with cold water; set aside to soak overnight, then drain.
  • Combine the soaked black beans, 2 pasilla chiles, the bay leaves and half of the garlic in a large wide pot and add enough water to cover by 3 inches. Bring to a boil, then reduce the heat to medium low and simmer until soft, about 1 1/2 hours; remove from the heat and set aside.
  • Meanwhile, add the remaining 2 pasilla chiles and the cascabel and chipotle chiles to a food processor and pulse until finely chopped.
  • Heat the olive oil in a large skillet over medium-high heat. Add the onion, the chopped dried chiles and the cumin and saute until the chiles are soft, about 7 minutes. Add the remaining garlic and the poblano and cook, stirring occasionally, 5 more minutes. Add the eggplant, season with salt and cook, stirring occasionally, until tender, about 8 minutes.
  • Add the crushed and diced tomatoes, 4 cups water, the bouillon and green lentils to the pot. Bring to a boil, then reduce the heat to medium low and simmer, stirring occasionally, until the lentils are almost tender, about 30 minutes.
  • Add the prepared black beans and their cooking liquid and simmer until the lentils are soft, about 30 more minutes. (The longer you let the chili simmer, the thicker it will get.) Season with salt and add the lime juice. Remove the whole pasilla chiles and bay leaves before serving.

3 tbsp olive oil
2 sweet potatoes, peeled and cut into medium chunks
2 tsp smoked paprika
2 tsp ground cumin
1 onion, chopped
2 carrots, chopped
2 celery sticks, chopped
2 garlic cloves, crushed
1-2 tsp chilli powder (depending on how hot you like it)
1 tsp dried oregano
1 tbsp tomato purée
1 red pepper, cut into chunks
2 x 400g cans chopped tomatoes
400g can black beans, drained
400g can kidney beans, drained
lime wedges, guacamole, rice and coriander to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Put the sweet potato in a roasting tin and drizzle over 1½ tbsp oil, 1 tsp smoked paprika and 1 tsp ground cumin. Give everything a good mix so that all the chunks are coated in spices, season with salt and pepper, then roast for 25 mins until cooked.
  • Meanwhile, heat the remaining oil in a large saucepan over a medium heat. Add the onion, carrot and celery. Cook for 8-10 mins, stirring occasionally until soft, then crush in the garlic and cook for 1 min more. Add the remaining dried spices and tomato purée. Give everything a good mix and cook for 1 min more.
  • Add the red pepper, chopped tomatoes and 200ml water. Bring the chilli to a boil, then simmer for 20 mins. Tip in the beans and cook for another 10 mins before adding the sweet potato. Season to taste then serve with lime wedges, guacamole, rice and coriander. Will keep, in an airtight container in the freezer, for up to three months.To make in a slow cookerHeat the oil in a large frying pan over a medium heat. Add the onion, carrot and celery. Cook for 8-10 mins, stirring occasionally until soft, then crush in the garlic, tip in the sweet potato chunks and cook for 1 min more. Add all the dried spices, oregano and tomato purée, cook for 1 min, then tip into a slow cooker.Add the red pepper and chopped tomatoes. Give everything a good stir then cook on low for 5 hrs. Stir in the beans and cook for another 30 mins to 1 hr. Season to taste and serve with lime wedges, guacamole, rice and coriander.

¼ cup olive oil
2 cups chopped onions
2 medium red bell peppers, coarsely chopped

Steps:

  • Drain black beans, reserving 1/2 cup liquid. Set aside.

4 garlic cloves, finely chopped
2 large onions, chopped
3 tbsp sweet pimenton (Spanish paprika) or mild chilli powder
3 tbsp ground cumin
3 tbsp cider vinegar

2 x 400g (2 x 14oz) cans chopped tomatoes
2 x 400g (2 x 14oz) cans black beans, rinsed and drained

  • In a large pot, heat the olive oil and fry the garlic and onions for 5 mins until almost softened. Add the pimenton and cumin, cook for a few mins, then add the vinegar, sugar, tomatoes and some seasoning. Cook for 10 mins.

Steps:

  • If using canned beans, drain and rinse. I mix it up sometimes and add other bean varieties. In this picture, I used black beans and red kidney beans.
  • Next, defrost the frozen corn by placing in a colander and running warm water over it.
  • Combine beans, corn, and salsa in a pot and cook over medium heat for 5 minutes to heat thoroughly. If you like it with a little more liquid, add veggie broth. I never add broth unless serving with cornbread. That's because I like to crumble the cornbread and let it soak up the seasoned juices.
  • Top with cilantro and fresh lime juice. Serve warm and enjoy!
  • To make this in a crockpot, simply add all ingredients to a large cooker after draining and rinsing canned beans. No need to run corn under warm water, because they will defrost in a slow cooker. Allow to cook on low for 1 hour.

Steps:

1 onion (diced)
1 red bell pepper (seeded and diced)
2 zucchini (green squash, sliced into 1/2-inch pieces)
2 celery ribs (diced)
1 carrot (chopped)

2 tbsp chili powder
1 tbsp ground cumin
1 tbsp dried oregano
1 tsp cayenne pepper
1 cup vegetable stock
1 28 oz can whole tomatoes (I love San Marzano)
1 15.5 oz black beans (drained and rinsed)
1 cup corn kernels
1½ tsp Kosher salt
⅓ tsp black pepper
¼ cup fresh cilantro (chopped)
Monterey jack cheese and scallions for garnish (optional)

Steps:

  • Heat the oil in a large sauce pan, or pot (a Dutch oven) or medium heat.
  • Add the onion, bell pepper, zucchini, celery, celery, carrot, jalapeno and garlic and cover.
  • Cook, stirring occasionally, until the veggies are softened, about 10 minutes.
  • Add the chili powder, cumin, oregano, cayenne and stir well.
  • Add the vegetable stock.
  • Add the tomatoes, breaking them apart with your fingers as you drop them into the pot. Add their juices and bring to a simmer. Add in the salt and pepper.
  • Reduce the heat to low and simmer until the sauce has thickened slightly, about 20 minutes.
  • Stir in the beans and corn and cook until they are heated through, about 10 more minutes.
  • Stir in the cilantro.
  • Serve with Monterey jack cheese and scallions sprinkled on top.

1 14.5 oz can sliced carrots
1 14.5 oz can diced tomatoes
1 8 oz can tomato sauce
1 cup frozen corn
1 teaspoon salt
1 tablespoons chili powder

Steps:

  • In a medium-sized soup pot over medium high heat add in garlic, onion, green pepper and olive oil. Cook until garlic is fragrant and onion is translucent, about 3-5 minutes.
  • Add black beans, carrots, tomatoes, tomato sauce, corn, salt and chili powder to pot. Stir and bring the ingredients to a boil.
  • Once boiling, reduce to low heat and simmer for 20 minutes. Serve in bowls with shredded cheese on top (cheese is optional but highly recommended!).

1 medium yellow onion
3 cloves garlic
2 tablespoons olive oil
1/3 cup dry quinoa
1 cup water
3 15-ounce cans black beans, drained (not rinsed)
2 28-ounce cans diced tomatoes, fire roasted if possible
4 tablespoons salted butter (replace with 2 tablespoons olive oil or refined coconut oil for vegan)
1 15-ounce can corn (or 1 1/2 cups frozen corn)
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce
1/2 cup ketchup
2 tablespoons each chili powder and dried oregano
1 tablespoon each garlic powder and cumin
1 1/2 teaspoons kosher salt
1 teaspoon smoked paprika

Steps:

  • Dice the onion. Mince the garlic.
  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onions and garlic and sauté for 5 to 7 minutes, until tender.
  • Add all other ingredients except for the smoked paprika. Simmer for 25 minutes, then stir in the smoked paprika. Serve immediately with toppings of your choice. Store leftovers refrigerated for up to 3 days, or frozen for 3 months.
  • Follow the instructions above, but remove the smoked paprika (the fire will add smoky flavor). If you're taking it camping, prep the minced onion and garlic and place in a sealed container. Place the ingredients from water through kosher salt in another large sealed container (keep out the dry quinoa and add when cooking). Keep everything cool until making the chili.
