Ground Beef and Vegetable Stew image

This is a stew made with ground beef. My family loves this rich and hearty stew. Good on a cold night.

1 pound ground beef
1 small onion, finely chopped
1 clove garlic, finely chopped
4 cups water
2 tablespoons beef base
1 (8 ounce) can tomato sauce
1 tablespoon Worcestershire sauce
1 teaspoon ground black pepper
½ teaspoon celery salt
¼ teaspoon ground marjoram
5 large carrots, cut into rounds
4 medium potatoes, peeled and cubed
1 cup green beans, trimmed and cut into 1-inch pieces
3 tablespoons all-purpose flour
2 tablespoons water, or more as needed

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and garlic in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add 4 cups water and beef base; stir to combine. Add tomato sauce, Worcestershire sauce, pepper, celery salt, and marjoram; bring to a simmer.
  • Add carrots and simmer for 35 minutes. Add potatoes and green beans; cook until tender, about 15 minutes.
  • Meanwhile, mix flour and 2 tablespoons water together in a small bowl until no longer lumpy, adding more water if necessary. Stir into stew and simmer until thickened, 5 to 10 minutes.

1 1/2 lbs eye of round roast, trimmed and cut into 1-inch cubes
2 cups thinly sliced fennel bulbs (about 2 small bulbs)
1 1/2 cups chopped red bell peppers
1 large onion, cut into 1/4-inch-thick wedges (about 1 1/2 cups)
1 garlic clove, minced
3/4 lb diagonally cut carrot (about 3/4 pound)
1 cup water
2 tablespoons tomato paste
1 teaspoon fennel seed
3/4 teaspoon salt
3/4 teaspoon dried thyme
1/4 teaspoon fresh coarse ground black pepper
3 pieces orange rind, strips
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (10 1/2 ounce) can beef broth
3/4 lb diagonally cut parsnip (about 3/4 pound)
1/2 cup finely chopped fennel bulb
2 tablespoons finely chopped fennel leaves or 2 tablespoons fresh flat-leaf parsley
2 teaspoons grated orange rind

Steps:

  • To prepare stew, heat a large Dutch oven coated with cooking spray over medium-high heat. Add beef; cook 6 minutes, browning on all sides. Remove from pan.
  • Add 2 cups fennel bulb, bell pepper, onion, and garlic to pan; reduce heat to medium, and cook for 10 minutes, stirring occasionally. Add beef, carrot, and next 9 ingredients (carrot through broth). Cover, reduce heat to low, and simmer 1 hour, stirring occasionally. Add parsnip; cover and simmer 30 minutes or until beef is tender, stirring occasionally.
  • To prepare gremolata, combine 1/2 cup fennel bulb, fennel fronds, and grated orange rind in a small bowl.
  • Spoon 1 1/3 cups stew into each of 6 bowls; top each with 1 1/2 tablespoons gremolata.

750 g beef, cut into 2 cm dice
2 onions, cut into wedges
2 cloves garlic, crushed
500 ml good beef stock
2 carrots, chopped
4 tablespoons marmalade
2 1/2 tablespoons water
2 1/2 tablespoons cornflour, mixed with the water
4 tablespoons chopped parsley
1 clove garlic, crushed
2 1/2 tablespoons grated orange rind

Steps:

  • Heat the oil and brown the beef, onions and garlic.
  • Add the carrots and stock and bring to the boil.
  • Cover and cook for 40 minutes or until the beef is tender.
  • Add the marmalade and cornflour mixture and simmer until the mixture thickens.
  • Serve sprinkled with the Orange Gremolata.
  • Orange Gremolata: Mix all ingredients.

2 pounds beef stew meat, cut into 1-inch cubes
1 to 2 tablespoons canola oil
1-1/2 cups chopped onions
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (10-1/2 ounces) condensed beef broth, undiluted
3 tablespoons quick-cooking tapioca
1 garlic clove, minced
1 tablespoon dried parsley flakes
1 teaspoon salt
1/4 teaspoon pepper
1 bay leaf
6 medium carrots, cut into 2-inch pieces
3 medium potatoes, peeled and cut into 2-inch pieces
1 cup sliced celery (1-inch lengths)

Steps:

  • In an oven-safe Dutch oven, brown beef in batches in oil; drain. Return all meat to the pan. Add onions, tomatoes, broth, tapioca, garlic, parsley, salt, pepper and bay leaf. Bring to a boil. , Cover stew and bake at 350° for 1 hour. Stir in carrots, potatoes and celery. Bake, covered, 1 hour longer or until meat and vegetables are tender. Discard bay leaf.

  • In a gallon sized ziploc bag, combine the flour, salt, and pepper. Add the cubed beef and toss to coat.
  • In a large, heavy bottomed stockpot or dutch oven, heat the butter over medium-high heat. Add the beef in batches to brown on all sides. Remove to a plate to catch its juices.
  • If using a slow cooker, add the red wine to the stockpot and scrape the sides. Pour the wine and bits into the slow cooker. Add the beef and all remaining stew ingredients. Cook on low for 6-8 hours.
  • If cooking stovetop, add all the veggies before adding the wine. Add a little more butter if necessary. Cook for about 5 minutes, or until veggies have started to soften. Add the wine and simmer for 3-5 minutes, scraping the pot with a wooden spoon as the wine simmers. Add the remaining stew ingredients. Bring the stew to a boil then reduce to simmer. Let simmer for at least 1 hour, up to 2 hours.
