BISTRO-STYLE SHORT RIBS

3 tablespoons extra-virgin olive oil
4 pounds short ribs, in 1 long piece or at least in pairs
Kosher salt and freshly ground black pepper
1 medium onion, chopped
2 carrots, chopped
1 large tomato, quartered
3 ribs celery
1/2 head garlic, peeled
1/4 bunch fresh thyme
1 1/2 cups dry red wine
2 cups low-sodium, organic beef stock
4 tablespoons chopped flat-leaf parsley

Steps:

  • Preheat a cast iron grill or outdoor grill.
  • Season the short ribs with salt and pepper, drizzle with a little extra-virgin olive oil, and brown on all sides.
  • Place the onion, garlic, celery, carrot, and tomato into a food processor and blend until you reach a consistent, smooth pulp.
  • Take a large Dutch oven and place over medium-high heat. Add a 3-count of extra-virgin olive oil and add the thyme to infuse the oil. Next add the vegetable pulp, season with salt and pepper, to taste, and cook for about 10 minutes. Pour in the red wine and stock and bring it to a boil. Using tongs take the ribs and nestle them into the braising mix; the liquid should just about cover the meat. Place the lid loosely on top, reduce heat to a simmer and cook until the meat is very tender, approximately 2 1/2 to 3 hours.
  • When the ribs are about finished, remove about 1 to 2 cups of liquid and strain into a small saucepan over medium-high heat. Heat the sauce until slightly reduced and thickened, about 5 minutes.

1 (3-rib) prime rib beef roast, about 6 pounds
5 garlic cloves, smashed, plus 2 heads garlic, halved
1/2 cup grated fresh or prepared horseradish
1/2 cup sea salt
1/4 cup freshly ground black pepper
1/2 cup extra-virgin olive oil
2 carrots, peeled and chopped
2 parsnips
1 red onion, halved
1 tablespoon unsalted butter
Extra-virgin olive oil
2 pounds assorted mushrooms, such as cremini, oyster, shiitake, chanterelle, or white, trimmed and sliced
Leaves from 2 fresh thyme sprigs
Sea salt and freshly ground black pepper
1/2 cup Cabernet Sauvignon
1/4 cup reserved beef broth (drippings from roast) or low-sodium canned broth
1/4 cup heavy cream
1 tablespoon minced fresh chives

Steps:

  • Preheat the oven to 350 degrees F.
  • Lay the beef in a large roasting pan with the bone side down. (The ribs act as a natural roasting rack.) In a small bowl mash together the garlic, horseradish, salt, pepper, and olive oil to make a paste. Massage the paste generously over the entire roast. Scatter the vegetables and halved garlic around the meat and drizzle them with a 2-count of oil. Put the pan in the oven and roast the beef for about 1 1/2 to 2 hours for medium-rare (or approximately 20 minutes per pound). Check the internal temperature of the roast in several places with an instant-read thermometer; it should register 125 degrees F. for medium-rare. Remove the beef to a carving board and let it rest for 20 minutes. The internal temperature of the meat will continue to rise by about 10 degrees. Remove the vegetables and set aside. Pour the pan juices into a fat separator or small bowl and set aside to allow the fat and beef juices to separate. Pour off and discard the fat. You will use the tasty beef juices for the mushrooms.
  • Place a clean skillet over medium heat. Add the butter and a 2-count drizzle of oil. When the butter starts to foam. add the mushrooms and thyme; and season with salt and pepper. Stir everything together for a few minutes. Add the red wine, stirring to scrape up any stuck bits; then cook and stir to evaporate the alcohol. When the wine is almost all gone, add the reserved beef juices. Let the liquid cook down and then take it off the heat. Stir in the cream and chives, and season with salt and pepper.

2 bacon slices
4 sprigs fresh thyme
1/2 onion, chopped

1 cup peach preserves
2 tablespoons Dijon mustard
2 tablespoons brown sugar
1/4 cup molasses
2 tablespoons red wine vinegar
1 teaspoon ground cumin
1 teaspoon paprika

Steps:

  • Preheat oven to 250°F. Place the ribs on baking sheet, season with salt, pepper and drizzle with olive oil. Stick them in the oven and let the ribs bake low and slow for 1 ½ hours. Meanwhile, make the sauce. Wrap the bacon around the middle of the thyme sprigs and tie with kitchen twine so you have a nice bundle. Heat a 2 count of oil in a large saucepan over medium heat. Add the thyme bundle and cook slowly for 3 to 4 minutes to render the bacon fat and give the sauce a smoky flavor. Add the onion and garlic and cook slowly, without coloring, for 5 minutes. Add all the rest of the sauce ingredients, give the sauce a stir, and turn the heat down to low. Cook slowly for 20 minutes for the flavors to meld. Put some sauce in a separate bowl for basting, reserving the remaining for serving. Baste the ribs with the sauce and continue cooking, basting twice more for 30 minutes. When the ribs are cooked, take them out of the oven. You can let them hang out like this until youre ready to eat. When you're ready to eat, preheat the broiler for 5 minutes. Broil the ribs, basting with the sauce, until they are crisp and browned somewhat, or to your liking.

1 cup water
2 yellow onions, halved

1 bunch baby carrots
2 celery ribs, sliced
1 cup button mushroom (stems removed and sliced in half)

Steps:

  • Season all sides of the beef with a fair amount of salt and pepper.

2 cups grated gruyere

12 soft hoagie rolls
extra virgin olive oil
1/2 lb rib eye steak, finely sliced

1 large fennel bulb, fronds removed and halved
1/2 lemon, juice of

3 tablespoons sour cream
8 ounces coleslaw mix
2 tablespoons chopped fresh tarragon leaves

1 tablespoon extra virgin olive oil

Steps:

  • MAKE THE BRECHAMEL SAUCE:.
  • Melt the butter in a saucepan over medium heat.
  • Add the flour and stir constantly to incorporate - you do not want any color.
  • Gradually pour in the milk as you stir, and whisk out any lumps.
  • As the mixture thickens up continue to stir until it reaches a boil - this ensures the flour is cooked completely.
  • Dump in the cheese and stir for another minute until the cheese is completely melted.
  • Stir in the horseradish and season with salt and pepper, then set aside to keep warm.
  • MAKE ARUGULA MAYONNAISE:.
  • Put arugula in a food processor with the lemon juice and salt and pepper.
  • Top with mayonnaise and process until well combined.
  • Give it a taste and adjust seasoning if required.
  • PREPARE THE STEAK:.
  • Take the finely sliced steak and shingle it out into 2 portions on a clean cutting board lined with parchment.
  • Put the shingled meat between 2 pieces of plastic wrap and pound out using either a saute pan or a meat mallet.
  • After first pounding, remove the plastic wrap, fold in the edges, replace plastic and pound the meat some more.
  • Store wrapped in plastic in the refrigerator.
  • Now the meat is ready when you want to cook it.
  • Heat a large, flat grill-pan over medium heat.
  • Split hoagie rolls in half, drizzle with olive oil and place onto griddle.
  • Take the meat out of the refrigerator.
  • Peel off 1 side of the plastic wrap and season with salt and pepper.
  • Put this side down in the pan and then quickly peel off the other side of the plastic wrap and season again.
  • Cook slowly in the pan until juicy and tender and just past pink in color.
  • Turn the meat over and then fold with some of the cheese sauce.
  • MAKE FENNEL SLAW:.
  • Finely slice fennel using a mandoline, or the grater attachment on your food processor.
  • In a large mixing bowl combine the lemon juice, mayonnaise, and sour cream and stir to combine.
  • Add the finely sliced fennel and coleslaw mix, herbs, and olive oil and fold together.
  • Season with salt and pepper.
  • ASSEMBLE:.
  • Smear each half of the roll with arugula mayonnaise.
  • Top the bottom with the steak and cheese, then lay a scoop of fennel slaw over the top.

4 lbs beef brisket (fresh brisket, not corned beef)
kosher salt

1 head garlic
2 medium onions
1 head garlic, cut in half across the cloves
2 celery ribs
2 carrots
1/2 bunch fresh thyme
2 sprigs rosemary
1/2 bunch fresh parsley
1 bay leaf
1 (28 ounce) can whole tomatoes
2 cups low sodium beef broth
2 1/2 cups fruity red wine

Steps:

  • Heat oil in the bottom of a heavy Dutch oven until it almost smokes. Season the brisket with salt and pepper. Carefully lay brisket in pot, fat side down. When browned, flip over.
  • Cut garlic head in half across the cloves. Chop onion, celery and carrots into 2" pieces. Tie thyme, rosemary, parsley and bay leaf together with cotton twine to form a bouquet garni.
  • When browned, remove meat to a plate. Put the onion, garlic, celery, carrot and bouquet garni into the pot and allow to caramelize and cook down, 10-15 minutes.
  • Add tomatoes, beef broth and red wine to pot. Stir well, scraping up any browned bits (fond) at the bottom of the pot. Return meat (and any accumulated juices) to the pot. Cover tightly and bake in a preheated 325°F oven for 3 hours.
  • Remove brisket from pot to a platter. Let rest 10 minutes, then slice across the grain. Strain the juices from the pot, discarding the solids, and serve alongside the meat.

extra virgin olive oil
2 slices bacon

1 tablespoon ground cumin
3 bay leaves
vegetable oil, for deep frying
6 fresh medium corn tortillas
kosher salt
3 cups finely shredded white cabbage
1/4 bunch fresh cilantro leaves
1 (28 ounce) can whole tomatoes, drained, reserving the juice (recommended ( San Marzano)
1 small red onion, roughly chopped
1 serrano chili
1 garlic clove, roughly chopped
2 limes, juice of
1/2 cup chopped fresh cilantro leaves
kosher salt
freshly cracked black pepper
extra virgin olive oil, for drizzling
6 ripe avocados
3 limes, juice of
1 medium yellow onion, chopped
1 garlic clove, smashed then minced
2 serrano chilies, cut into rounds
1/2 cup fresh cilantro, with stems finely chopped
extra virgin olive oil
kosher salt & freshly ground black pepper

Steps:

  • Season all sides of the beef with a fair amount of salt and pepper. In a large Dutch oven, or other heavy pot that has a tight cover, heat 2 tablespoons of olive oil over moderately high heat. Add the garlic and the beef to the pot, browning the meat on all sides, taking the time to get a nice crust on the outside. Add the onion and allow to lightly brown, about 3 to 4 minutes. Add the crushed tomatoes, plus 1 tomato can of water, spices, season with salt and pepper, to taste, and add enough water to cover the meat. Bring to a boil then reduce heat and simmer with a lid for 3 hours until the meat is fork tender. Let meat cool in the liquid. Shred meat and set aside.
  • Heat a large pot of oil over medium heat. When oil reaches 350 degrees F, fry the corn tortillas 1 at a time. Place the tortilla in the oil and wait about 30 seconds. Then use the handle of a wooden spoon to press down into the center of the tortilla and fold it in the middle. Hold down for a few seconds waiting for the tortilla to form into taco shell and then drain on paper towels. Season with salt.
  • For the simple salsa:
  • To make salsa, pulse all the ingredients, except the tomato juice, in a food processor. Add the reserved tomato juice if the salsa is too thick. Drizzle salsa with olive oil, cover with plastic wrap and set aside, allowing the flavors to marry.
  • To assemble the tacos: Lay some shredded cabbage as a base. Top with some shredded beef. Serve alongside Guacamole and salsa. Garnish with fresh cilantro leaves.

  • Guacamole: Halve and pit the avocados. With a tablespoon, scoop out the flesh into a mixing bowl. Mash the avocados using either a fork or potato masher, leaving them still a bit chunky. Add the remaining ingredients, and fold everything together. Drizzle with a little olive oil, adjust seasoning with salt and pepper and give it 1 final mix with a fork.
  • Lay a piece of plastic wrap tight on the surface of the guacamole so it doesn't brown and refrigerate for at least 1 hour before serving.

I got this off the food network site. I haven't tried these but my hubby loves fish and chips. He grew up overseas and used to be able to get them regularly. I showed him several recipes, including zaar ones, and this was the one he said to make!

4 large russet potatoes
2 cups flour
1 tablespoon baking powder
1 teaspoon salt, plus more for seasoning
1/2 teaspoon fresh ground black pepper, plus more for seasoning
1 large egg, lightly beaten
1 (12 ounce) can soda water
1/2 cup rice flour, for dredging
2 (8 ounce) cod fish fillets or 2 (8 ounce) haddock fillets, cut in 1/2 on an angle
malt vinegar, for serving
1 cup mayonnaise
1 tablespoon capers, chopped
1 tablespoon cornichon, chopped
2 tablespoons flat leaf parsley, finely chopped
1/2 lemon, juiced
1 dash hot sauce

Steps:

  • Heat 3 inches of the oil in a deep fryer. Or you can heat 3 inches of oil in a deep pot. Peel the potatoes and cut them into chips, about the size of your index finger.
  • Put the potatoes in the oil. Fry the chips for 2 to 3 minutes; they should not be crisp or fully cooked at this point. Remove the chips with a spider strainer or slotted spoon, to a paper towel-lined platter to drain.
  • Put the chips back in the fryer for 4 to 5 minutes until crispy and brown. Take out and drain.
  • In a large mixing bowl, combine the flour, baking powder, salt, pepper, and egg. Pour in the soda water and whisk to a smooth batter.
  • Spread the rice flour on a plate. Dredge the fish pieces in the rice flour and then dip them into the batter, letting the excess drip off.
  • Now submerge the battered fish into the bubbling oil for 4 to 5 minutes until crispy and brown.
  • Remove and drain the fish with the chips on paper towels; season lightly with salt. Serve wrapped in a newspaper cone with malt vinegar and/or tartar sauce.
  • Tartar Sauce (about 1-1/4 cups): In a small mixing bowl, combine all tartar sauce ingredients. Chill before serving to let the flavors combine.
