4 (4 to 5-inches long) russet potatoes (about 2 pounds)
2 quarts canola oil
1 tablespoons fine-grain sea salt
1 teaspoon freshly ground black pepper

Steps:

  • Peel potatoes on the sides, leaving the ends with the skin on. Cut the potatoes into 1/3-inch slices and then slice into 1/3-inch sticks.
  • Fill a large bowl with water and soak potatoes, submerged, for at least 30 minutes up to 24 hours. This will help remove the excess starch from the potatoes and keep them from oxidizing.
  • Heat a heavy stock pot fitted with a deep-fry thermometer with oil to 325 degrees F.
  • Remove potatoes from the water, and pat dry to remove excess water. Add 2 handfuls of potatoes to hot oil. There should be at least 1-inch of oil above the potatoes. Par cook until potatoes are light brown, 5 to 7 minutes. Remove potatoes, gently shaking off excess oil and let drain on rack. Repeat until all of the potatoes are par cooked.
  • Raise heat of oil to 350 degrees F.
  • Cook potatoes again, 2 handfuls at a time, until golden brown, about 2 minutes. Remove from oil, shake off excess oil, and season lightly in a bowl with salt and pepper. Repeat until all potatoes are cooked.

250 grams potatoes (per person, peeled)
1 liter vegetable oil (or lard or dripping to cook - your choice)

Steps:

  • Gather the ingredients.
  • Cut the potatoes into about 1/2-inch (1-cm) slices, then slice these into 1/2-inch (1-cm) wide chips.
  • Place the chips in a colander and rinse under cold running water until the water runs clear.
  • Place the washed chips in a pan of cold water, bring to a gentle boil, and simmer for 3 to 4 minutes.
  • Drain the potatoes in a colander.
  • Drain the potatoes thoroughly and then pat dry with paper towels. Remove as much moisture off of the potatoes to avoid splatter when putting them in the oil.
  • Add about 2 to 3 inches of oil to a heavy pot or Dutch oven and attach a deep-fry thermometer. Heat the oil to 320 F/160 C. Carefully lower some chips-about 2 handfuls-into the hot oil using a slotted metal utensil or deep-fry basket. Fry for about 3 minutes. Do not brown them. Let the oil come back to temperature between batches.
  • Turn the chips out onto paper towels to drain. Keep them at room temperature until needed.
  • Reheat the oil to 375 F/190 C and fry the chips once more until golden and crisp, 5 to 8 minutes.
  • Drain and season with salt. Serve immediately and enjoy.

2 pounds unpeeled russet potatoes (about 3 large), scrubbed
Canola oil (for deep-frying)

Steps:

  • Bring large pot of salted water to boil. Line large baking sheet with several layers of paper towels. Cut 1 potato lengthwise into 1/4-inch-thick slices. Stack 2 to 3 potato slices at a time and cut lengthwise into 1/4-inch-wide sticks. Cook potato sticks in boiling water just until beginning to soften, 3 to 4 minutes. Using slotted spoon or tongs, transfer potato sticks to paper-towel-lined baking sheet to drain. Repeat cutting, blanching, and draining remaining potatoes. Pat potato sticks dry with additional paper towels. DO AHEAD: Can be made 4 hours ahead. Let stand uncovered at room temperature.
  • Pour enough canola oil into heavy large pot to reach depth of 4 inches. Attach deep-fry thermometer to side of pot; heat oil to 350°F. Working in batches, add potato sticks to oil and fry until golden brown, about 6 minutes. Transfer to clean paper towels to drain. Sprinkle with salt and pepper. Serve immediately.

These perfectly golden brown homemade french fries are crisp on the outside and hot and tender inside.

5 pounds russet potatoes (or Yukon Gold)
3+ quarts neutral oil
salt and pepper (to taste)
ketchup or dipping sauce for serving

Steps:

  • Wash and lightly peel the russet potatoes. Cut them into ⅓" - ½" thick slices and rinse them. Place the potatoes in a large bowl with 1 Tablespoon of salt. Cover with water and soak for 30 minutes.
  • Drain and rinse the potato slices then pat as dry as possible with a clean towel.
  • Add at least 4 inches of oil to a deep heavy bottomed pot. Clip a deep-frying thermometer to the side of the pot, and bring the oil temperature up to 375 degrees.
  • Working in batches, carefully lower the potato slices into the hot oil. Let them fry for 6-10* minutes, or until golden brown on the outside and soft and tender inside. Remove them from the hot oil using a slotted spoon or spider strainer.
  • Place them in a single layer on a baking sheet lined with paper towels. Season with salt and serve with ketchup or your favorite dipping sauce.

1kg Maris Piper or King Edward potatoes
vegetable oil, for deep frying

Steps:

  • Peel the potatoes and cut into 1cm-thick batons. Put into a bowl of cold water and leave to soak for at least 2 hrs to remove the starch from the potatoes - this will help them crisp while frying.
  • Drain the potatoes well and pat dry with kitchen paper. Fill a deep pan no more than a third full with oil and heat to 140C, or until a cube of bread dropped in browns in 60 seconds. Fry the French fries in batches for 6 mins per batch until golden straw-coloured, cooked through and lightly crisp. Drain well on kitchen paper.
  • Turn the heat up until the oil reaches 180C, or a cube of bread browns in 30 seconds. Fry the French fries again for 2-3 mins per batch until lightly golden and really crisp. Drain on kitchen paper and immediately season with sea salt.

Peanut or other vegetable oil, for frying
2 pounds baking potatoes, like russets
Salt, to taste

Steps:

  • Pour oil in a deep fryer or heavy saucepan to reach halfway up the sides of the pan. Heat to 325 degrees F, use a deep fry thermometer to determine this. While the oil is heating, peel the potatoes and push through a French fry cutter to form uniform sticks. As you go, place the cut potatoes in a bowl of ice water to release some of the starch and to keep them from browning.
  • Dry the potato strips thoroughly, this will keep the oil from splattering. Fry the potatoes in batches so the pan isn't crowded and the oil temperature does not plummet. Cook for 3 minutes until they are soft but not browned. Remove the potatoes with a long-handled metal strainer and drain on brown paper bags.
  • Bring oil temperature up to 375 degrees F. Return the par-fried potatoes to the oil in batches and cook a second time for 4 minutes until golden and crispy. Drain on fresh brown paper bags then place in a serving bowl lined with paper towels. Salt and serve immediately.

1/4 cup butter, melted
salt and pepper
garlic powder
onion powder
1 dash cayenne pepper

Steps:

  • Spread potatoes on lightly greased jelly roll pan and bake at 375° for 15 minutes.
  • Drizzle melted butter over (use more if needed to coat all of the potatoes).
  • Sprinkle liberally with salt and pepper, then add other seasonings as desired.
  • Toss together to be sure all of potatoes are coated with butter and seasonings.
  • Return to oven until potatoes are crisp and tender.

Put on the food processor lid, and drape a large, dampened kitchen towel over the top of the machine (this will keep salt dust from getting everywhere.) Process the salt for about 1 minute, until its texture is fine and dusty. Let the dust settle for a minute or two before opening the lid unless you want a lung full of salt! Transfer the french fry salt to a dish and set aside. (This step is optional, but I highly suggest it. Super fine salt clings to fries better. You can use it for popcorn too! If you skip this step, a fine salt like sea salt is better for fries than kosher salt.)
  • Peel the potatoes. Use a mandoline with a wide julienne attachment to cut the potatoes into thin and uniform fries. (I like to use a cut resistant glove for protection when using a mandoline!) If you don’t have a mandoline, hand cut the potatoes instead. For this recipe, thin fries work best, about ¼” wide on each side.
  • Prepare a large rimmed baking sheet lined with paper towels or brown paper bags. If you’re making a lot of fries, you can use more paper towels between layers of fries. Paper towels or brown paper are a must-- the oil needs to be wicked away from the fry.
  • When you are ready to eat, prepare a fresh baking sheet with fresh paper towels or brown paper. Heat the oil to 325F (a lower temperature this time.) Fry the french fries in batches until golden, about 7 minutes per batch, and transfer to the baking sheet. Sprinkle generously with the french fry salt.
