Pulled pork tacos with pineapple salsa image

Put the pork for these pulled pork tacos in the slow cooker in the morning, and you'll have a family feast for dinner. Serve with cabbage, avocado and salsa

1½kg boneless pork shoulder, rind removed and cut into 6 chunks
2 garlic cloves , crushed
2 tbsp tomato purée
1 tbsp chipotle paste
1 orange , juiced
2 limes , juiced
432g can pineapple , juice only (save the chunks for the salsa, below)
2 tsp dried oregano
2 tsp smoked paprika
1 tsp ground cumin
1 tsp ground coriander
grating of fresh nutmeg
432g can pineapple , drained
½ red onion , finely chopped
handful of coriander , chopped
1 lime , juiced
1 red chilli , chopped (optional)
8-10 taco shells or wraps
½ red cabbage , finely shredded
1 avocado , sliced
100ml soured cream (optional)

Steps:

  • Put the pork in a large, lidded ovenproof dish with the remaining ingredients and mix well to coat. If you can, chill and marinate overnight.
  • Heat the oven to 140C/120C fan/gas 1. Put the lid on the dish and cook on the middle shelf for 4 hrs. Check after 2 hrs and spoon over the juices. Check the meat is tender by pulling it apart with two forks. If it resists, cook for 1-2 hrs more.
  • Mix the ingredients for the salsa in a bowl and warm the tacos. Shred the pork and remove any fat or sinew. Serve with the cabbage, avocado, soured cream and salsa.

1 pineapple
1/2 cup fresh orange juice
2 tablespoons white vinegar
2 teaspoons ground cumin
2 teaspoons kosher salt
1 teaspoon dried Mexican oregano
1/2 teaspoon smoked paprika
4 cloves garlic
2 chipotle chiles in adobo plus 1 teaspoon adobo sauce
1 sweet onion, half rough chopped and half finely diced
One 3-pound bone-in pork butt (cross-cut shoulder works well)
Canola oil
2 cups low-sodium chicken stock
Warm corn tortillas, for serving
1/4 cup chopped fresh cilantro
Pineapple-Jalapeno Salsa, recipe follows
Cotija cheese, crumbled, for serving
2 limes, cut into wedges
2 cups small-diced pineapple
1/2 cup small-diced white onion
2 tablespoons finely chopped fresh cilantro
2 tablespoons minced jalapeno (seeds removed)
2 tablespoons fresh lime juice
1 teaspoon kosher salt
1 small red chile, seeded and minced

Steps:

  • Slice off the bottom of the pineapple and stand it upright. Remove the rind in large pieces, cutting deep enough to remove all the prickles; reserve the rind. Quarter the pineapple and remove the core. Roughly chop half of the pineapple; reserve the other half for the Pineapple-Jalapeno Salsa.
  • To a blender, add the orange juice, vinegar, cumin, salt, oregano, smoked paprika, garlic, chipotles and adobo sauce, the roughly chopped sweet onion and the chopped pineapple. Blend until smooth. Place the pork butt in a large resealable plastic bag and add the marinade. Seal and refrigerate for 3 to 4 hours.
  • Preheat the oven to 350 degrees F. Set a large Dutch oven over high heat and add enough canola oil to cover the bottom. Remove the meat from the marinade and wipe off the excess. Add to the pot and sear on all sides, 4 to 5 minutes per side. Pour in the chicken stock and the marinade from the bag (the liquid should come halfway up the meat; add a little water if required). Bring to a simmer, then place the reserved pineapple rinds, skin-side up, over the top to cover. Place, uncovered, in the oven and cook until the rinds are deep brown and the pork is fork-tender, 2 1/2 to 3 hours (tent with foil if necessary).
  • Discard the rinds and roughly chop the meat into 1/4- to 1/2-inch pieces. Toss with a little braising liquid and keep warm.
  • Serve the pork in warm corn tortillas. Garnish with finely diced onion, cilantro, Pineapple-Jalapeno Salsa and cotija. Serve with a squeeze of lime.
  • In a medium mixing bowl, combine the pineapple, onion, cilantro, jalapeno, lime juice, salt and chile and mix well. Allow to sit for 10 to 20 minutes before serving so that all the flavors meld together.

4 dried ancho chillies
2 dried chipotle chillies
1 large white onion, roughly chopped
1 garlic bulb, cloves peeled
4 tomatoes, halved
1 tbsp olive oil
500ml chicken stock
1 tbsp sugar
2 oranges, juiced
1 tbsp oregano
1.7kg pork shoulder (approx), skin removed
250g pineapple, diced
2 jalapeno chillies, finely chopped and seeds removed
1 small red onion, finely chopped
1 lime, zested and juiced
small bunch of coriander, leaves picked
8 tacos or soft tortillas
chunky tomato salsa, soured cream and guacamole, to serve

Steps:

  • Heat the oven to CircoTherm® 180°C. Boil a kettle and place the dried chillies in a bowl. Pour over the boiling water and leave to soak for 20 mins. Add the onion, garlic, tomatoes, oil and a pinch of salt to a large roasting tin and give everything a good mix. Roast in the oven for 20 mins, until the vegetables start to blister slightly, then remove and tip into a blender along with the soaked chillies, stock, sugar, orange juice and oregano. Blitz until smooth.
  • Lay the pork in the roasting tin and pour over the chilli and vegetable mixture. Seal tightly with foil and place in the oven, turning CircoTherm® to 150°C. Leave to cook for 3.5 hrs, checking and basting every hour or so. Once cooked, the meat should be soft enough to pull apart with two forks. Take off the foil and cook for a further 30 mins to caramelise the pork. Remove from the oven and leave to rest for a little while before shredding.
  • While the pork rests, mix together the pineapple salsa ingredients with a pinch of salt. Serve your shredded pork on tacos or soft tortillas with the salsa on top. For extra deliciousness, team with a chunky tomato salsa, soured cream and guacamole.

I got this recipe from People magazine. I made some modifications, and used Food.com recipe # 29697 for the pineapple salsa,madding a little minced jalapeño.

1 cup chicken stock
1/2 cup orange juice
2 tablespoons white vinegar
1/2 cup chipotle chile in adobo, diced
3 garlic cloves, chopped
1 teaspoon cinnamon
1 teaspoon ground cumin
2 lbs boneless pork loin
1 teaspoon kosher salt
1 teaspoon black pepper
12 ounces tortilla chips
2 lbs chihuahua cheese or 2 lbs cheddar cheese
3 cups pineapple salsa (I use Pineapple Salsa with a little jalapeno added)
1/4 bunch cilantro, chopped

Steps:

  • Mix chicken stock through cumin.
  • Rub pork with salt and pepper. Pour checked stock mixture over pork. Cover with foil. Roast in 350 degree oven for 2 1/2 hours.
  • Remove foil and roast 30 minutes more. Remove from oven and rest for 30 minutes. Shred pork and mix with any remaining stock mixture.
  • Put chips on baking sheet and cover with cheese. Place in oven until cheese melts.
  • Sprinkle pork over chips. Garnish with salsa and cilantro. Serve hot.
  • Note: I made the pork ahead of time and reheated when ready to serve.

1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
12 cherry tomatoes, quartered
2 chipotle chiles, canned in adobo sauce, chopped (about 2 tablespoons)
12 (6 inch) corn tortillas, warmed

Steps:

  • To prepare salsa, combine the first 7 ingredients in a medium bowl; stir until well blended. Cover and chill.
  • To prepare tacos, heat oil in a large nonstick skillet over medium heat. Add onion to pan; cook 2 minutes or until tender.
  • Add garlic; cook 30 seconds. Add pork to pan; cook 4 minutes or until pork loses its pink color, stirring occasionally.
  • Stir in broth and next 7 ingredients (through chipotles).
  • Cover, reduce heat, and simmer 10 minutes. Uncover and simmer 10 minutes or until liquid is nearly evaporated.
  • Warm tortillas according to package directions. Serve pork mixture with tortillas and salsa.
