2 cups old-fashioned oats
1/2 cup pecan halves
1/2 cup sliced almonds
1/4 cup sunflower kernels
1/2 cup packed brown sugar
1/2 teaspoon salt
1/4 cup butter, cubed
1/4 cup honey
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup dried cherries
1/2 cup dried blueberries
PARFAITS:
2 cups fresh blueberries
2 cups fresh raspberries
2 cups chopped fresh strawberries
4 cups honey Greek yogurt

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 6 ingredients. In a small saucepan, mix butter, honey and cinnamon. Cook over medium heat until blended, 3-4 minutes. Remove from heat; stir in vanilla. Pour over oat mixture; stir to coat., Spread evenly into a greased 15x10x1-in. baking pan. Bake until crisp and dark golden brown, 35-40 minutes, stirring every 10 minutes. Cool completely on a wire rack. Stir in dried fruit., In a small bowl, combine berries. Layer 1/4 cup of the berries, yogurt and granola into 8 parfait glasses. Repeat layers. Top with remaining berries.

  • Beat cream cheese and marshmallow creme until blended; fold in whipped topping., Sprinkle 2 tablespoons cracker crumbs into each of 2 glasses or dessert dishes. Layer each with 1/2 cup cream cheese mixture, 1/4 cup raspberries and 1/4 cup blueberries; repeat layers. Refrigerate, covered, until serving.

MIXED BERRY AND YOGURT PARFAIT

Making your own granola is easier than it looks, and it will add a nice touch to this quick and easy parfait.

Number Of Ingredients 11

1/3 cup low-fat plain yogurt
1/3 cup fresh or frozen mixed berries
1 tablespoon maple syrup
1 tablespoon Easy Homemade Granola, recipe below
2 tablespoons maple syrup
1 teaspoon extra-virgin raw coconut oil
1/2 cup old-fashioned oats
1/4 cup sliced raw almonds
1/4 cup raw sunflower seeds
Kosher salt
Nonstick cooking spray

Steps:

  • Fill a small single-serving (6 ounce) container with a third of the yogurt. Top with a third of the berries. Drizzle 1 teaspoon of maple syrup over the berries. Repeat two more times with the rest of the yogurt, berries and maple syrup. Pack the granola separately so that it can be mixed into the parfait when ready to eat. Pack the parfait with an ice pack or frozen juice box so that it stays cold until lunchtime.
  • Heat an oven to 350 degrees F.
  • Heat the maple syrup with the coconut oil in a small skillet over medium-low heat, just to melt the oil. While still warm, toss the maple syrup mixture together with the oats, almonds, sunflower seeds and a pinch of salt in a medium bowl. Spray a baking sheet with the nonstick cooking spray. Spread the granola on the sheet tray in a thin layer. Bake for a total of 20 minutes, tossing the granola halfway through. Let cool to room temperature and store in an air-tight container in the refrigerator for up to 1 month.

1 (10 ounce) package frozen raspberries, thawed
1/4 cup granulated sugar
2 tablespoons cornstarch
2 cups frozen sliced strawberries, thawed
2 teaspoons lemon juice
1 quart vanilla ice cream
1 cup sour cream
6 -8 sprigs of fresh mint, garnish (optional)

Steps:

  • Drain raspberries,reserving syrup. Combine the reserved syrup with enough water to measure 1 cup.
  • Combine grnulated sugar and cornstarch in a medium saucepan and mix well. Stir in respberry syrup mixture and sliced strawberries.
  • Cook mixture over medium heat,stirring continually, until thickened.
  • Reserve 6 to 8 tablespoons of the respberry sauce.
  • Spoon one third of the remaining respberry sauce into bottom of 6 to 8 parfait or sundae glasses. Top each with a scoop of ice cream. Add a second layer of respbery sauce and top with the sour cream. Spoon sauce over sour cream and top with a second scoop of ice cream.
  • Drizzle parfaits with reserved respberry sauce. Garnish with mint, if desired -- .

2 cups strawberries
1 cup blackberry (or blueberries)
1 cup raspberries
1 tablespoon sugar
1 (8 ounce) container mascarpone cheese
1 cup heavy whipping cream
1 teaspoon vanilla
3 tablespoons powdered sugar
of fresh mint
whole berries

Steps:

  • Place all the berries (cut the strawberries into pieces if they are too large) in a large bowl and sprinkle with the sugar. Stir to combine and leave to macerate for about 30 minutes.
  • Using a mixer, beat the mascarpone, heavy whipping cream, powdered sugar and vanilla extract just until soft peaks form.
  • Take four wine or parfait glasses and layer the berries with the cream. Garnish with a sprig of fresh mint and a few fresh berries.
  • The parfait can be made about an hour or two before serving. Cover and store in the refrigerator.

  • Crack the eggs into a medium bowl and beat well. Add the sugar and lemon juice and whisk until sugar is mostly dissolved. Set aside.
  • Fill the bottom of a double boiler pan with an inch of water. Bring to a simmer, then turn the heat down to low. Melt the butter in the top of double boiler. Add the egg mixture and cook, stirring constantly, until smooth and thick enough to coat a metal spoon, about 10 minutes. (If you get any bits of cooked egg, pass the mixture through a fine sieve to remove.) Stir in the lemon zest and pour into a shallow bowl. Chill in the refrigerator until cold.
  • Pour the chilled whipping cream into the bowl of an electric mixer and beat until the cream holds firm peaks (when you lift the whisk or beaters out of the bowl, the peak should hold its shape without drooping; if the cream looks grainy, you’ve gone too far and should start over). Be sure the lemon mixture is completely cool; then, using a rubber spatula, gently fold it into the whipped cream.
  • Place a large spoonful of berries into each glass (leave room for 2 layers of berries and 2 layers of cream) and top with a generous dollop of lemon cream. Top with another layer of berries and lemon cream. Cover with plastic wrap and chill until ready to serve. (Parfaits can be assembled up to this point several hours ahead of time.) Right before serving, top each parfait with a shortbread cookie and sprig of fresh mint.
