One of the best savoury pancake recipes for an authentic Dutch pancake. Going sweet instead? Add 2 tablespoons sugar to the batter and top with fresh fruit.

2 eggs
2 cups milk
2 cups flour
2 pinches salt
(2 tbsp sugar for sweet pancakes)
OPTIONAL SAVORY TOPPINGS
shredded cheese (pepper jack, gouda, white cheddar, or colby-jack)
sliced ham
bacon
chopped onions
asparagus
spring onions
sliced pimento
pineapple
OPTIONAL SWEET TOPPINGS
sliced strawberries
sliced apple rings
sliced pear
sliced peach
blackberries
banana
whipped cream
ice cream

Steps:

  • Beat the eggs in a large pouring bowl.
  • Add the milk and mix together with a whisk.
  • Combine the flour and salt to the batter, mixing until incorporated but still slightly lumpy.
  • Prepare toppings, ie. slice the ham, shred the cheese, fry the bacon, sautee the onions, etc.
  • Place a 12" nonstick frying pan on a medium burner with 1 tablespoon butter.
  • Pour about 1 cup of batter over the melted butter to cover the bottom of the pan.
  • Add filling ingredients such as ham, asparagus, bacon, onion, pineapple, etc.
  • Shake the pan gently from side to side to loosen the pancake as it cooks.
  • Look for tiny bubbles appearing and the edge of the pancake to start browning and drying (about 3-5 minutes).
  • Flip the pancake and cook on the other side for about 3 minutes.
  • If adding cheese, flip the pancake again and spread shredded cheese on top and turn down the heat to low while the cheese melts (about 3 minutes).
  • Plate and add any additional toppings.

1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 Granny smith apple, peeled, cored and thinly sliced
4 tablespoons cold butter
1/2 cup whole milk
1 tablespoon vanilla extract
3 eggs
1/2 cup all-purpose flour
1 teaspoon granulated sugar
1/2 teaspoon salt
1/2 cup brown sugar
Powdered sugar, for serving
Whipped cream, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the cinnamon, nutmeg and apples to a pan. Saute the apples over medium-low heat until slightly soft, 3 to 5 minutes.
  • Meanwhile, prepare the batter. Mix the milk, vanilla and eggs in a bowl. Add the flour, granulated sugar and salt and whisk lightly (some lumps are ok but not too many).
  • Increase the heat under the apples to medium and add the brown sugar and butter. Cook until a syrup forms, about 3 minutes, then add the batter all at once to the center of the pan. Swirl the apple syrup mix through the batter, using a heatproof spatula, to form ribbons (you do not want to fully combine the apple-sugar syrup into the batter). Cook until small bubbles form around the edge.
  • Finish cooking the pannekoeken in the oven, 12 minutes. To serve, invert a 12-inch plate over the pan and flip the pan to turn out the pannekoeken. Sprinkle with powdered sugar, top with whipped cream and enjoy!

My Norwegian grandmother made this for us as a treat, and it continues to be a favorite my mother makes for my kids. Very easy and versatile. Serve rolled like a crepe with syrup or jam. Can also be a dessert stuffed with a sweetened cream cheese and lingon berry mixture.

1 cup all-purpose flour
¼ teaspoon salt
1 teaspoon sugar

Steps:

  • Combine the eggs and milk in the container of a blender. Add the flour, salt and sugar, and blend until smooth.
  • Heat a skillet over medium-high heat, and coat with cooking spray or butter. Scoop about 1/4 cup of batter into the skillet, and tilt the pan to coat the bottom. Cook until the top looks dry, about 30 seconds. Carefully slide a spatula under the pancake and flip. Cook for a few seconds on the other side, just until browned. Remove to a plate, and repeat with remaining batter.

This is a basic recipe for the puffed Dutch pancake that you make in the oven. It is lovely with real maple syrup, or simply sprinkled with a bit of lemon juice and a bit of sugar. You can also fill with fruit, beef stew or sauteed vegetables for dinner! We make these often and the kids are now old enough to make on their own! Yay!

2 large eggs
1/2 cup milk
1/2 cup flour
1/8 teaspoon cinnamon
1/4 teaspoon salt
2 tablespoons butter or 2 tablespoons cooking spray

Steps:

  • Preheat oven to 400.
  • Place butter in 8x8 baking pan with straight sides, or similarly sized pan (I use a round quiche dish). Pie pans do not work well as the sides are not straight up and down!
  • Place pan in preheated oven until butter is melted.
  • In the meantime, place rest of ingredients in a blender or food processor and whirl until smooth. If you have neither, place all in covered jar or plastic container with a tight fitting lid and shake until well mixed.
  • When pan is hot and butter is melted, remove from oven and pour batter into hot pan. Immediately return to hot oven. Bake 15 to 20 minutes until puffed and golden around edges.
