Steps:
- In a bowl, combine ground beef, Soy Sauce, sugar, seasoned salt and black pepper. Form into 6 patties, cook on skillet or grill to desired doneness. Add cheese to the cooked burger and serve with desired condiments.
UMAMI BURGER WITH PARMESAN SWEET POTATO WEDGES
Umami is a distinct flavor profile - aside from sweet, sour, salty, and bitter - that can best be described as savory, incredibly flavorful, and indescribably delicious. This dish has umami in spades! We start with a miso-marinated beef burger topped with all the fixings on a toasted brioche bun. It's paired with Parmesan sweet potato wedges for that extra special something.

- Before You Cook Turn oven on to 400 degrees. Let preheat, at least 10 minutes If using any fresh produce, thoroughly rinse and pat dry Prepare a baking sheet with foil and cooking spray Ingredient(s) used more than once: Parmesan, miso Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Prepare the Ingredients Cut sweet potato into 1/2"-thick sticksCut mushrooms into 1/4" slices.Peel onion and slice into 1/4" rounds. 2 Roast Wedges and Make Sauce Place sweet potato wedges on prepared baking sheet and toss with 2 tsp. olive oil and 1/4 tsp. salt.Spread into a single layer, and roast in hot oven until browned and tender, 28-33 minutes, flipping once after 15 minutes.Rest 5 minutes on baking sheet to firm up. Garnish with half the Parmesan (reserve remaining for patties).While wedges roast, combine mayonnaise, sun-dried tomato pesto, and 1 tsp. miso (reserve remaining for patties) in a mixing bowl and set aside. 3 Make the Patties Combine ground beef, remaining miso, remaining Parmesan, and a pinch of pepper in another mixing bowl.Form ground beef mixture into two patties, 5" in diameter. Make a small dimple in middle of each patty. This will prevent patties from bulging when cooked. 4 Toast the Buns Place a medium non-stick pan over medium-high heat. Brush cut side of buns with 1 tsp. olive oil.Place buns in hot pan, cut side down, and toast until golden brown, 1-2 minutes.Remove to a plate. Keep pan over medium-high heat. 5 Cook the Burgers and Mushrooms Add 1 tsp. olive oil and burgers to hot pan. Cook on one side until browned, 4-6 minutes.Flip burgers and add mushrooms. Stir mushrooms occasionally until browned and burgers reach a minimum internal temperature of 160 degrees, 4-6 minutes. Burgers may finish before mushrooms.Transfer burgers to a plate and top each with a white cheddar slice.Plate dish as pictured on front of card, topping bun with sauce, onion (to taste), burger, and mushrooms. - Preheat the oven to 400 degrees. Line a baking sheet with a silicone baking mat or parchment paper. Toss together all of the mushrooms in a large bowl. Add the oil, salt, and pepper, tossing to coat the mushrooms. Arrange the seasoned mushrooms in a single layer on the prepared baking sheet. Bake for 12 to 15 minutes, until soft, lightly browned, and beginning to crisp. When cool, transfer to a lidded container and store in the refrigerator for up to 3 days.
- Heat the canola oil in a large skillet over low heat. Add the onions and cook for 30 minutes, stirring often, until they are soft and brown. Let cool, and then store in a lidded container in the refrigerator for up to 3 days.
- Put the vinegar, tamari, yeast flakes, and garlic in a blender or food processor and blend until well combined. Remove the feed tube and with machine running, slowly drizzle in olive oil. Blend well until the mixture becomes thick and emulsified, like mayonnaise. Pour the mixture into a lidded jar and refrigerate for up to 2 weeks.
- Using your hands, mix the bison, yeast flakes, salt, and pepper in a bowl to combine. Divide the meat into 6 patties. Wash your hands.

- In a small bowl, combine fish sauce, garlic, sugar and black pepper. Add the marinade to the ground beef and combine until all the ingredients are mixed together well. Refrigerate the beef for at least 30 minutes. We like to allow the beef to marinade overnight in the fridge for optimum flavor, but most of the time don't plan that far ahead. They still always come out great, even with the shorter marinade time.
- Gently form meat into patties for sliders or burgers. Form them to the size of your burger or slider buns.
- Cook on a skillet or grill. If cooking on a grill, make sure to pre-heat the grill and to scrape the grill clean before grilling. It will help minimize the sticking. (1/2 pound patties on a med./high grill take about 3 min. per side for med. rare burger. Heat temp., thickness, etc. all affect cooking times).
- Assemble your burger with your favorite condiments and treat yourself to the cheeseburger version!
