THE BEST CRISPY BAKED CHICKEN NUGGETS
These are the BEST crispy baked chicken nuggets you'll ever make! This delicious, healthy chicken nuggets recipe takes just about 30 minutes from start to finish and uses super simple ingredients like panko breadcrumbs, chicken breast and spices. Serve with honey mustard, ketchup or your favorite BBQ sauce. Kid-friendly and adult approved!

- Preheat oven to 400 degrees F.
- Add panko breadcrumbs to a large baking sheet and spread out in an even layer. Spray breadcrumbs with nonstick olive oil cooking spray. Bake for 2 minutes, then stir breadcrumbs (or just give the pan a shake) and then bake for 2-3 minutes or until breadcrumbs are golden brown. Keep heat in the oven.
- Transfer breadcrumbs to a medium bowl. Whisk in spices: salt, black pepper, onion powder, paprika, garlic powder and cayenne pepper. Set aside.
- In a separate medium bowl, whisk together the eggs and almond milk. Set aside.
- Line the large baking sheet with an oven safe wire metal rack. Spray with nonstick cooking spray.
- Dip each chicken cube into the egg mixture, then use a tong to grab each chicken nugget and toss into the breadcrumb mixture to completely coat with breadcrumbs. Use tongs to transfer to the wire rack, placing about 1 inch apart.
- Generously spray the tops of the chicken nuggets with nonstick spray. Bake in the oven for 15-20 minutes until cooked through and temp reaches 165 degrees F with a meat thermometer. Serves 4. Serve with BBQ sauce, honey mustard, ketchup or whatever sauce you'd like!

BAKED CHICKEN NUGGETS WITH EASY HOMEMADE BARBECUE SAUCE

- For the nuggets: Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Beat the egg in a shallow bowl. Place the panko, garlic powder, Italian herbs and salt in a separate shallow bowl and stir to combine.
- One at a time, dip the chicken chunks in the egg and then in the breadcrumbs. (Keep one hand dry to help adhere the breadcrumbs to the chicken.) Make sure the chicken chunks are completely coated. Place on the prepared baking sheet.
- Spray each nugget with nonstick spray. Bake until browned and cooked through, 18 to 20 minutes.
- For the barbecue sauce: In a small saucepan, stir together the ketchup, brown sugar, vinegar, Worcestershire sauce, garlic and paprika. Bring to a boil, stirring frequently. Reduce the heat to low and simmer until thickened, 2 to 3 minutes. Serve with the nuggets.
NO SECRET INGREDIENTS OVEN-BAKED CHICKEN NUGGETS
I have adapted this easy to make recipe from Alan Coxon's Chicken Nuggets recipe from Great Food Live on the uktv FOOD website. I've added marjoram or oregano and almonds or walnuts to the crumb mixture to make the chicken nuggets tastier. You could also use half and half of either of these alternatives: a pinch of both marjoram and oregano and perhaps 2 almonds and 1 walnut! If you are going to be serving these to children, it's probably best to use a mild, sweet paprika. It's certainly a recipe that children ready to help in the kitchen could take part in preparing. Perhaps then they'll see chicken nuggets as something you make yourself and eat at home rather than as a fast food choice. If making this only for adults and you like some bite in your food, add the appropriate quantity of your favourite spicy ingredient in the crumbs or in the accompanying salsa or relish. But if you're looking for a milder salsa, you might like to try my Apple Mint Yoghurt Salsa Recipe #320813. Remember that smaller nuggets will require more crumbs and will cook more quickly. For the benefit of any others like internetnut wanting to make this recipe and not having access to conversion charts, I have added the conversions below.

- Preheat the oven to 200°C/390°F/gas 6. Slice the bread, and toast it until it has lightly browned. Leaving the crusts on, break it into pieces, and grind it into fine crumbs in a food processor.
- Add the garlic powder, paprika, marjoram or oregano and almonds or walnuts and process again; place the crumbs in a large plastic freezer bag or tip into a deep tray.
- Beat the egg in a large bowl with the milk, and add the chicken pieces, in batches; drain the chicken pieces for a moment or two before tossing them in the breadcrumbs - coating the crumbs evenly around each nugget.
- Arrange the crumbed chicken nuggets on a lightly greased baking sheet, and bake for 10 minutes until golden and cooked through. Serve straight away, accompanied with your choice of salsa or relish or sour cream.

ACCIDENTALLY THE BEST BAKED CHICKEN NUGGETS EVER
Accidentally discovered this while playing around with Chinese restaurant classics. My nugget-expert daughter loved them. I use the marinade from http://www.recipezaar.com/Sweet-and-Sour-Pork-43587 (minus the extra salt) and the flouring and baking technique from http://www.recipezaar.com/Baked-Lemon-Chicken-With-Chinese-Lemon-Sauce-194890. The chicken works great with either sauce but my picky kid just loved the chicken by itself. Infact she liked it so much I had to post the recipe. All measurements are approximate; vary the spices based upon your own taste.

- Pre-heat over to 450°F.
- Marinade chicken for a minimum of 10 minutes in egg, corn starch, soy sauce and water.
- Measure flour, chile powder and pepper into bowl or plastic bag.
- Put one piece of chicken at a time (draining off as much of the marinade as possible first) into the flour, coat chicken.
- Place on cookie sheet sprayed with cooking spray first.
- After all the chicken is on cookie sheet (make sure they don't touch), spray chicken generously with cooking spray.

- In a bowl, add chicken and pickle juice; toss to coat. Marinate at room temperature for 30 minutes. Meanwhile, combine the next 8 ingredients to form a thick batter.
