WATERCRESS SALAD WITH AVOCADO, ORANGE & CHIA SEEDS
Rich in nutrients and fibre, this watercress salad is perfect on its own as a light meal or served as side dish. The watercress is paired with fresh orange, avocado, cranberries and chia seeds and dressing with citrus juice, mustard and olive oil.

- If you buy a whole bunch of watercress, simply rinse it well under cold water and shake off the excess water. Tear or cut the leaves and some of the stems and use those in the salad. Discard the tougher stems near the roots and use them up in a smoothie, soup or stew.
- Cut the orange peel away with a knife and slice the fruit into bite-sized pieces. You can repurpose the orange peel to make lovely flavoured water.
- Make the dressing next and then cut up the avocado just before serving.
- Combine the watercress with avocado and orange, and sprinkle with dried cranberries (omit for Whole30) and some chia seeds, which are full of Omega-3 fatty acids and fibre. Toss the salad with the dressing and serve.

- In a small bowl or food processor, whisk together the lemon juice, mustard, and sea salt until mixed well.
- Add 3 tablespoons of the oil slowly, while mixing constantly until the dressing is well blended. Season with sea salt and pepper and any other spices you'd like.
- Lightly rinse off any dirt and shake or pat watercress dry. Snip the stems with leaves off roots (if attached) and disccardany thick stems that may be touggh to eat, keepingg thin stems. (both are edible!
- Then, dress watercress with the vinaigrette, and serve as a side or base to your favorite protein!

- Drain tofu on paper towels in refrigerator for at least 1 hour.
- After tofu is drained, cut into 1" blocks.
- Heat pot of lightly salted water.
- Cut 2 inches off bottom of watercress and discard.
- Cut watercress into 3" pieces.
- When water comes to boil, add cut watercress and parboil for 30 seconds.
- Drain and cool in ice bath.
- Meanwhile, make Oriental Salad Dressing: Combine all other ingredients - soy sauce, rice vinegar, ginger, sesame oil, sugar, sesame seeds and blend.
- Arrange drained and cooled watercress on a platter with tofu, tomato, and fish.
- Drizzle with Oriental Salad Dressing at time of serving.
