These Apple Streusel Cheesecake Bars are a delightful apple recipe perfect for Thanksgiving dessert. They have a buttery shortbread crust, creamy cheesecake filling and are topped with cinnamon apples and a cinnamon streusel!

1 1/2 cups (195g) all purpose flour
6 tbsp (84g) packed brown sugar
3/4 tsp ground cinnamon
1/2 cup (112g) salted butter, room temperature
4 1/4 cups (506g) chopped apples (3-4 large apples)
1 1/2 tsp all purpose flour
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
20 ounces (565g) cream cheese, room temperature
3/4 cup (168g) packed brown sugar
3 tbsp (24g) all purpose flour
1/2 cup (115g) sour cream
1 1/2 tsp vanilla extract
1 3/4 tsp ground cinnamon
1/4 tsp ground nutmeg
2 large eggs, room temperature
1 large egg white, room temperature
1/2 cup (65g) all purpose flour
1/2 cup (112g) packed brown sugar
1 1/2 tsp cinnamon
1/2 tsp nutmeg
4 tbsp (56g) salted butter, melted

Steps:

  • Preheat oven to 300 degrees and prepare a 9×13 inch pan with parchment paper that sticks up above the sides of the pan, so that you can remove the bars later for easy cutting.
  • 2. In a medium bowl, combine the flour, brown sugar and cinnamon.
  • 3. Cut in butter into the flour mixture with a pastry blender or fork until mixture is crumbly.
  • 4. Press evenly into the bottom of the pan and bake for 8-10 minutes. When the crust is done baking, turn the temperature up to 325 degrees.
  • 5. In another large bowl, combine the chopped apples, flour, cinnamon and nutmeg and set aside.
  • 6. To make the filling, blend the cream cheese, brown sugar and flour in a large mixer bowl on low speed until well combined and smooth. Be sure to use low speed to reduce the amount of air added to the batter. Scrape down the sides of the bowl.
  • 7. Add the sour cream, vanilla extract, cinnamon and nutmeg and mix on low speed until well combined.
  • 8. Add the eggs and egg white one at a time, mixing slowly to combine. Scrape down the sides of the bowl as needed to make sure everything is well combined.
  • 9. Pour the batter into the pan with the crust and spread evenly.
  • 10. Spread the cinnamon apples evenly over the top of the cheesecake filling.
  • 11. In another small bowl, combine the flour, brown sugar, cinnamon and nutmeg for the streusel.
  • 12. Add the melted butter and stir together until crumbly.
  • 13. Sprinkle the streusel evenly over the apples.
  • 14. Bake the bars for about 45 minutes or until the center is just set. Remove the bars from the oven and allow to cool on the counter for about 45 minutes, then refrigerate until cold and firm.
  • 15. Use the parchment paper to remove the bars from the pan and cut into bars. Serve cold. Bars are best when stored well covered in the fridge and eaten within 4-5 days.

1 3/4 c all-purpose flour
1/2 c firmly packed brown sugar
3/4 c butter, softened
CHEESECAKE PART
2 pkg pkg. (250 g each) cream cheese
1/2 c sugar, plus 2 tablespoons, divided
2 large eggs
1 tsp vanilla extract
PREPARING APPLES
4 apples, peeled, cored and finely chopped
1 tsp ground cinnamon
STREUSEL PART
3/4 c firmly packed brown sugar
3/4 c flour
1/2 c quick cooking oats
1/2 c butter, softened

Steps:

  • 1. base part: In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender until mixture is crumbly. Press evenly into a 13x9-inch baking pan lined with heavy-duty aluminum foil. Bake 15 minutes, or until lightly browned.
  • 2. Cheesecake part: In a large bowl, beat cream cheese with an electric mixer at medium speed until smooth. Beat in 1/2 cup sugar, eggs, and vanilla until smooth. Pour over warm crust.
  • 3. Preparing apples: In a small bowl, stir together chopped apples, 2 tablespoons sugar and cinnamon. Top cheesecake part with chopped apples.
  • 4. Streusel part In a small bowl, combine all ingredients and sprinkle evenly over apples. Bake 30 minutes, or until filling is set (until a knife inserted in the center comes out clean)

2 pkg (8 oz each) cream cheese, softened
1/2 c sugar
2 Tbsp all-purpose flour
1 tsp vanilla
1 egg
2 can(s) (21 oz) apple pie filling
3/4 tsp ground cinnamon
1/4 c chopped walnut (optional)

Steps:

  • 1. Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  • 2. Place cookie mix in large bowl. with pastry blender or fork, cut in butter until mixture is crumbly and coarse. Reserve 2 cups crumb mixture; press remaining crumbs in bottom of pan. Bake 10 minutes.
  • 3. Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth.

  • Heat oven to 325°F. Lightly grease 8- or 9-inch square pan with butter or cooking spray.

A tip that was listed is that you can make this ahead of time, pop it in the freezer,ready to serve for up to 3 months! Steps:

  • Preheat oven to 350°. In a small bowl, combine flour and brown sugar; cut in butter until crumbly. Press into a well-greased 13x9-in. baking pan. Bake 15-18 minutes or until lightly browned., Meanwhile, in a large bowl, beat cream cheese, 1/2 cup sugar and vanilla until smooth. Add eggs; beat on low speed just until combined. Spread over crust., In a small bowl, toss apples with cinnamon, nutmeg and remaining sugar; spoon over cream cheese layer. In another bowl, mix flour, brown sugar and oats; cut in butter until crumbly. Sprinkle over apple layer., Bake 25-30 minutes or until filling is set. Drizzle with caramel topping; cool in pan on a wire rack 1 hour. Refrigerate at least 2 hours. Cut into bars.

1 pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix
1/2 cup firm butter or margarine
2 packages (8 oz each) cream cheese, softened
1/2 cup sugar
2 tablespoons Gold Medal® all-purpose flour
1 teaspoon vanilla
1 egg
1 can (21 oz) apple pie filling
1/2 teaspoon ground cinnamon
1/4 cup chopped walnuts

Steps:

  • 1- Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray. 2 - Place cookie mix in large bowl. With pastry blender or fork, cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs in bottom of pan. Bake 10 minutes. 3 - Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth. 4 - Spread cream cheese mixture evenly over partially baked crust. In medium bowl, mix pie filling and cinnamon. Spoon evenly over cream cheese mixture. Sprinkle reserved crumbs over top. Sprinkle with walnuts. 5 - Bake 35 to 40 minutes longer or until light golden brown. Cool about 30 minutes. Refrigerate to chill, about 2 hours. For bars, cut into 3 short rows by 6 rows. Store covered in refrigerator.
