1 cup packed brown sugar
½ cup butter
2 eggs
2 (1 ounce) squares unsweetened chocolate
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Melt chocolate over low heat. Cream together sugar and butter or margarine. Add chocolate and mix well.
  • Add eggs and dry ingredients. Mix well.
  • Heat waffle iorn. Non stick spray can be used to prepare iron.
  • Drop about 1 Tablespoon of dough in each section of preheated iron.
  • Bake until cookies start to turn brown. Be careful because they can burn easily.
  • Cool and frost with a white powdered sugar frosting. (See recipe for Vanilla Glaze.)

1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1/3 cup packed light brown sugar
1/3 cup granulated sugar
1 stick unsalted butter, at room temperature
1/2 teaspoon pure vanilla extract (see Cook's Note)
1 large egg
1/2 cup semisweet chocolate chips
Nonstick cooking spray

Steps:

  • Whisk together the flour, baking soda and salt in a medium bowl. Beat the sugars and butter with an electric mixer on medium-high speed until light and fluffy, about 5 minutes. Beat in the vanilla and egg until incorporated. Adjust the speed to medium-low and add the flour in 2 batches, mixing until incorporated. Mix in the chocolate chips. Refrigerate the dough for at least 30 minutes if time allows.
  • Preheat a waffle iron to medium-low. Generously spray the top and bottom of the waffle iron with cooking spray. Scoop tablespoons of the dough, roll into balls and flatten slightly. Working in batches, place 1 dough round onto each section of the waffle iron, close gently and cook until slightly crisp, 3 to 6 minutes.
  • Serve the cookies warm or store in an airtight container at room temperature for up to 1 day.

3 ounces unsweetened chocolate, coarsely chopped
18 tablespoons (2 1/4 sticks) unsalted butter
4 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups granulated sugar
1/2 teaspoon coarse salt
1 1/2 teaspoons ground cinnamon
1/2 cup unsweetened Dutch-process cocoa powder, plus 2 tablespoons for icing
1 1/2 cups all-purpose flour
1/4 cup confectioners' sugar, plus more for dusting
1 1/2 tablespoons milk
Vegetable oil, cooking spray

Steps:

  • Melt chocolate with 1 cup butter (2 sticks) in a saucepan over medium-high heat, stirring constantly. Let cool slightly.
  • Put eggs, vanilla, and granulated sugar in bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale, 4 to 5 minutes. Mix in chocolate mixture, salt, cinnamon, 1/2 cup cocoa powder, and the flour.

My friend Clark made these cookies for an Oscar party. His theme was The Waffle of Wall Street. He won first prize so I decided to try them. So yummy. He used chocolate chips and butterscotch chips. I subbed mini peanut butter Reese's Pieces, since I didn't have any butterscotch. I also used half white and dark brown sugar, since I didn't have any light brown sugar. This recipe is great for summer - you don't have to turn on the oven! Don't make them too big. I baked them 8 at a time on my waffle iron and got around 40 cookies.

  • Heat Waffle Iron.
