8 ounces country ham, cubed (see Cook's Note)
1/3 cup apple cider vinegar
1 pound stemmed turnip greens (see Cook's Note)
Freshly cracked black pepper
4 cups low-sodium chicken stock (one 32-ounce carton)

Steps:

  • Put the ham in a large stockpot over medium heat. Cook until the ham is crispy and the fat is rendered, about 8 minutes. Pour in the apple cider vinegar and scrape the bottom of the pot with a wooden spoon to lift up any brown bits.
  • Meanwhile, rip the greens into large pieces to make it easier to fit all of them into the stockpot.
  • Add the greens to the pot and season generously with black pepper. Pour in the chicken stock and stir to combine. Bring the greens to a simmer and cover the pot. Reduce the heat to medium low and cook until the greens are tender and the liquid is reduced by half, about 45 minutes. Remove the lid and continue to cook, stirring occasionally, until the liquid is nearly gone, about 10 minutes more. Serve immediately.

Coffee and balsamic vinegar give these turnip greens with bacon, a Southern favorite, a great depth and kick.

4 slices bacon, chopped
1 medium onion, chopped
2 bunches turnip greens, chopped
½ cup strong brewed coffee
¼ cup balsamic vinegar
1 pinch garlic powder, or to taste
salt and ground black pepper to taste

Steps:

  • Place bacon and onion in a large skillet and cook over medium heat, covered, turning occasionally, until evenly browned and onions are translucent, 8 to 10 minutes.
  • Place turnip greens into the skillet, a handful at a time if necessary, until wilted down, 5 to 7 minutes. Add coffee, vinegar, garlic powder, salt, and pepper.
  • Taste the liquid and adjust seasonings if necessary. Reduce heat to low or medium-low, cover, and simmer for 20 to 25 minutes more.
  • Uncover and cook until liquid has reduced and greens are tender, about 10 minutes more.

1 large bunch turnip greens
1 small turnip, peeled and diced
Dash of sugar
6 slices bacon, diced
1 onion, diced
1 tablespoon lemon pepper
Salt to taste
Louisiana hot-pepper sauce

Steps:

  • Wash the greens in several changes of water in the sink until no more grit is seen. Chop the greens coarsely. Bring a large pot of water to boil and add the greens, the turnip, and the sugar. Cook for 12 to 15 minutes, or until tender. Drain.
  • In a large skillet, sauté the bacon until it gives up its grease. Add the onion and cook 7 minutes until the onion is soft. Toss the greens with the bacon and onion. Add the lemon pepper and salt. Serve with Louisiana hot-pepper sauce.
  • Variation:
  • Green beans. Substitute 1 pound fresh green beans, cleaned and snapped. Omit the sugar.

1 lb dried cannellini beans (soaked in 6 cups water overnight)
8 cups water
1/4 cup olive oil
1 head garlic, peeled
1 bay leaf
1 medium onion, chopped
4 garlic cloves, thinly sliced
2 teaspoons dried sage
2 teaspoons ground cumin
1/4 teaspoon red pepper flakes
3 lbs butternut squash, peeled, seeded and cubed
4 (10 ounce) cans chicken stock
1 lb turnip greens, torn into pieces (well rinsed)
salt and pepper

Steps:

  • Drain the soaked beans.
  • In a large saucepan, combine the beans, 8 cups water, 2 tbsps olive oil, the head of garlic and bay leaf.
  • Bring to boil and simmer, covered for 2 hours,or until the beans are tender.
  • Drain and discard bay leaf.
  • In the same saucepan heat remaining 2 tbsps olive oil.
  • Add onion and cook until tender.
  • Add sliced garlic, sage, cumin, and red pepper. Cook for 1 minute.
  • Add the squash, chicken broth, turnip greens and drained beans.
  • Bring to boiling, reduce heat and simmer, covered for 20 mins or until squash is tender.
  • Season with salt and pepper.

1 bunch fresh turnip greens (about 10 ounces)
5 ounces fresh baby spinach (about 8 cups)
1 medium cucumber, halved and thinly sliced
1 cup cherry tomatoes, halved
3/4 cup dried cranberries
1/2 medium red onion, thinly sliced
1/3 cup crumbled feta cheese
1 garlic clove
1/2 teaspoon kosher salt
1/3 cup extra virgin olive oil
2 tablespoons sherry vinegar
1 teaspoon Dijon mustard
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper

Steps:

  • Trim and discard root end of turnip greens. Coarsely chop leaves and cut stalks into 1-in. pieces. Place in a large bowl. Add spinach, cucumber, tomatoes, cranberries, red onion and feta., Place garlic on a cutting board; sprinkle with salt. Using the flat side of a knife, mash garlic. Continue to mash until it reaches a paste consistency. Transfer to a small bowl. Whisk in oil, vinegar, mustard, pepper and cayenne until blended. Drizzle over salad; toss to coat.
