CHICKEN GASSI (MANGALOREAN CHICKEN CURRY)

I have my roots in Southern India and there is a lot of coconut used in South Indian cooking. The curries there are served with simple steamed rice or Rice crispies. My husband is East + Anglo Indian and does not like coconut based curries too much. So I relish these curries only at my mum's place or cook them for parties that we throw (a novelty for my husband's family and our friends)

1 kg chicken
1 coconut, grated
5 -6 whole red chilies (use Kashmir chillies if possible for the best colour and they are not too spicy too. I use a mix of)
1 tablespoon coriander seed
1 tablespoon poppy seed
1 teaspoon peppercorn
3 -4 cloves
2 bay leaves
1/4 teaspoon fenugreek seeds
2 onions, sliced
1 teaspoon cumin seed
1 -2 tablespoon refined oil
50 g tamarind pulp (or to taste)
1/2 teaspoon turmeric powder
6 cloves garlic
250 ml water
chopped coriander leaves (to garnish)

Steps:

  • Roast the grated coconut till light brown.
  • Keep aside.
  • In the same skiller roast the red chillies, coriander, peppercorns, cumin, poppy seeds, bay leaves and the fenugreek seeds in oil.
  • Grind together the roasted coconut, garlic, cloves and roasted spice mixture to a fine paste with a little water.
  • Marinate the chicken with salt and turmeric for 30 minutes.
  • Heat oil.
  • Add onions.
  • Sauté till a light brown.
  • Add the ground masala and cook for 20 minutes.
  • Put in 250 ml of water and simmer for 30 minutes.
  • Add chicken and cook until done.
  • Put in the tamarind pulp.
  • Cook a little more and garnish with coriander leaves.

  • In a pan , heat 1/2 Tbsp of oil , add black peppercorns , cinnamon stick , cloves, jeera seeds , fenugreek seeds , red chillies , coriander seeds and roast them till you get pungent smell.
  • Add chopped onion and fry till raw smell of goes off and onion starts to change colour. Turn off the heat and let all the roasted items cool down.
  • Transfer the roasted spices and onion into a mixer jar / blender , add little water and blend to smooth and fine paste and set aside.
  • In a pressure cooker or deep pan , heat 2 Tbsp of oil . Add 1 chopped onion and fry till raw smell goes off.

  • Heat coconut oil in a pan and saute shallots (small onions) and garlic for 3-4 minutes on medium flame until the shallots are pink and soft. Remove from pan and set aside. Add in the Byadagi chillies in the same pan and roast for 30 seconds. Once the chilli is roasted, set aside. In the same pan, add a teaspoon of ghee and add in the dry spices namely fenugreek seeds ( don’t add too much, else the curry will become bitter), cumin seeds, coriander seeds and black pepper corns. Roast for a minute until fragrant. Set aside to cool.
  • Take a pressure pan and add in the chicken pieces. Add in the rock salt, the ground masala paste and the turmeric.
  • Heat ghee in a small pan and add in the cinnamon, cloves and the curry leaves. Let the curry leaves splutter. Add it to the curry.

  • Cooking the chickpeas :Drain the chickpeas that have soaked in water for 8-10 hours. Place in a small pressure cooker, cover with fresh water, until they are just submerged. Keep on a high flame, with the whistle (pressure) on. After one whistle, keep on sim (lowest flame) for 12 minutes so. Switch off and allow to cool.
  • Making the masala / spice paste:In a small kadai/wok, dry roast the red chillies until crisp, about 1-2 minutes, along with the coriander seeds. In a mixer, grind to a fine paste - the red chillies, coriander seeds, garlic, coconut, tamarind, using up to 1/2 cup of water.
  • Making the curry:Once the cooker has cooled, you will be able to open it. Ensure that the chickpeas are very soft - on pressing with the thumb they should completely disintegrate. Drain the cooked chickpeas and place them in the kadai along with the freshly ground spice paste. Add 3/4 tsp salt or to taste and turmeric powder. Bring to a simmer, adding a few spoons of water if required to thin it to a curry consistency.

  • Add oil to a small kadhai or wok placed over low heat. Once the oil is hot, slide in dried red byadgi chillies and roast, stirring often, for about 2 minutes. Toss in cinnamon, black mustard seeds, coriander seeds, fenugreek seeds (methi dana), cloves, black peppercorns, and cumin seeds. Roast, stirring, till aromatic. Add turmeric powder, stir, and remove from heat right away. Immediately transfer roasted spices to a plate or bowl; otherwise they will keep cooking in the kadhai.
  • Make kori gassi masala paste: Once the roasted spices have cooled, place them in a grinder. Add roasted coconut mixed with chopped garlic to the grinder, then tip in tamarind paste. Grind to a fine paste, adding 1 tablespoon water if needed. Reserve.
  • Place a kadhai or wok on high heat and pour in oil. Once the oil is hot but not smoking, add onion and sauté till golden brown, about 6 to 8 minutes. Add reserved kori gassi masala paste and stir vigorously for about 1 minute. If the masala paste mixture is looking dry, stir in 2 tablespoons thin coconut milk (2nd press). Fry for 2 to 3 minutes.
