CORNBREAD

Cornbread image

Cornbread is a great side dish that your family will love to eat on its own or use to wipe their plate clean of all the deliciousness you serve up. This recipe for cornbread works equally as well with yellow, white or blue cornmeal so you can choose the color of cornbread you want! With Gold Medal™ flour and 10 minutes of prep time, you'll be pulling a golden brown cornbread out of the oven before you know it.

1/4 cup butter (1/2 stick)
1 cup milk

  • In a 1-quart saucepan, heat the butter over low heat until melted.
  • In a large bowl, beat the melted butter, milk and egg with a fork or wire whisk until well mixed. Add the cornmeal, flour, sugar, baking powder and salt all at once; stir just until the flour is moistened (batter will be lumpy). Pour batter into the pan; use a rubber spatula to scrape batter from bowl. Spread batter evenly in pan and smooth top of batter.
  • Bake 20 to 25 minutes or until golden brown and a toothpick inserted in the center comes out clean. Serve warm.

CAST IRON SKILLET CORN BREAD

Cast Iron Skillet Corn Bread image

This is a great recipe and tastes better, I find, when cooked in a cast iron skillet and served hot tableside. I have also served this recipe for breakfast, brunch, lunch and dinner. Whether with jam and butter or fried chicken on the side, there are rarely leftovers!

Provided by Alex Guarnaschelli

Time 55m

Yield 8 to 10 servings

Number Of Ingredients 10

1 1/4 cups coarsely ground cornmeal
3/4 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon kosher salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/3 cup whole milk
1 cup buttermilk
2 eggs, lightly beaten
8 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven to 425 degrees F and place a 9-inch cast iron skillet inside to heat while you make the batter.
  • In a large bowl, whisk together the cornmeal, flour, sugar, salt, baking powder, and baking soda. Whisk in the milk, buttermilk, and eggs. Whisk in almost all of the melted butter, reserving about 1 tablespoon for the skillet later on.
  • Carefully remove the hot skillet from the oven. Reduce oven temperature to 375 degrees F. Coat the bottom and sides of the hot skillet with the remaining butter. Pour the batter into the skillet and place it in the center of the oven. Bake until the center is firm and a cake tester or toothpick inserted into the center comes out clean, 20 to 25 minutes. Allow to cool for 10 to 15 minutes and serve.

CAST IRON CORNBREAD

Cast Iron Cornbread image

When it comes to deciding what to bring to a cookout, this super easy cast iron cornbread is the clear winner. You don't even need a cast iron pan! Ribs or brisket are great, though not cheap, while a bag of chips is just weak sauce. On the other hand, this cornbread is very inexpensive to make, but that'll be the last thing anyone will be thinking about as they eat. In fact, you'll probably be asked to bring it to the next gathering!

CORNBREAD

Cornbread image

I love tasting different cornbread recipes, and I have to admit, I think this is the best that I've ever tasted. Usually I have to put tons of butter on it, because it's so dry and just doesn't have much taste to it, but this recipe is very moist, and you can eat it alone, it's got a great sweet taste to it. Try it...and let me know what you think. Thanks to Betty Crockers Big Red Cookbook for this great recipe.

CLASSIC CORNBREAD

Classic Cornbread image

Matt and Amy Bell, owners of the restaurant South on Main, usually avoid cooking contests. But the cornbread festival was different. "It's more of a community project than a competition," Matt says. "And it's directly outside the restaurant." The pair won the traditional category with their classic cornbread, a recipe developed by Amy's grandmother Nellie Mae. "You don't dare mess with family recipes," Matt says. "And if you do, you better make sure they can't tell."

REAL SOUTHERN CORNBREAD

Real Southern Cornbread image

This is my families recipe, with a small change in the method which I learned from a book. It's the only cornbread I will eat. Please use a 10 inch cast iron skillet -- it makes a big difference in how this bread turns out.

Provided by P48422

Categories     Quick Breads

Time 35m

Yield 8 serving(s)

Number Of Ingredients 10

1 cup yellow cornmeal (fresh, and preferably stone-ground)
1 cup unbleached all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1 1/4 cups buttermilk
1 large egg
2 tablespoons sugar
1/4 cup corn oil (or plain vegetable oil)
2 tablespoons unsalted butter

Steps:

  • Put the skillet in the oven and preheat to 375 degrees.
  • Combine the dry ingredients except for the baking soda in a bowl.
  • In another bowl, mix the buttermilk and the baking soda.
  • Set aside.
  • In a small bowl, beat the egg with the sugar until combined.
  • Add the oil and mix until combined.
  • Pour this mixture into the buttermilk/baking soda, and mix.
  • When the oven is preheated, toss the butter into the skillet and let it melt.
  • Meanwhile, pour the wet ingredients into the dry, and mix in as few strokes as it takes to just make the dough come together.
  • Pull the skillet out of the oven, swirling to get the butter covering the bottom and up the sides of the skillet.
  • Pour the batter immediately into the pan, smoothing the top, then back into the oven for about 25 minutes, or until golden brown and pulled away from the sides of the pan.
  • Turn out onto a cutting board, cut into wedges and serve.
  • NOTE: IMNSHO- cornbread isn't worth making if you don't make it in a cast-iron skillet.
  • It may just be my upbringing, but it tastes better somehow.
  • And please do not add the baking soda to the dry ingredients.
  • I can't explain why, but adding it to the buttermilk makes a big difference in the texture.

CORNBREAD

Cornbread image

This basic recipe is so easy and forgiving that you may find yourself making cornbread as often as your mother made mashed potatoes. Only a few ingredients are pretty much fixed: the salt, the baking powder, cornmeal and flour (you want a little flour for lightness). Other than that, feel free to experiment with bits of cooked bacon, sautéed onions or shallots, chili powder or cumin, chopped chilies or herbs, grated cheese, mashed or puréed beans or fresh, canned or frozen corn. The options are practically endless.

Provided by Mark Bittman

Categories     breads, side dish

Time 45m

Yield 8 servings

Number Of Ingredients 8

4 tablespoons butter, olive oil, lard or bacon drippings
1 1/2 cups medium-grind cornmeal
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon salt
1/4 to 1/2 cup sugar
2 eggs
1 1/4 cups milk, more if needed

Steps:

  • Preheat oven to 375 degrees. Put fat in a 10-inch cast-iron skillet or in an 8-inch square baking pan. Place pan in oven.
  • Meanwhile, combine dry ingredients in a bowl. Mix eggs into milk, then stir this mixture into dry ingredients, combining with a few swift strokes. If mixture seems dry, add another tablespoon or two of milk.
  • When fat and oven are hot, remove skillet or pan from oven, pour batter into it and smooth out top. Return pan to oven. Bake about 30 minutes, until top is lightly browned and sides have pulled away from pan; a toothpick inserted into center will come out clean. Serve hot or warm.

CORNBREAD

Provided by Cassie Best

Categories     Side dish

Time 1h10m

Yield cuts into 8-10 slices

Number Of Ingredients 9

50g slightly salted butter , melted, plus extra for greasing
250g fine polenta or cornmeal, plus extra for dusting
325g can sweetcorn , drained
250ml buttermilk
4 large eggs
1 tbsp golden caster sugar
100g plain flour
2 tsp baking powder
1 tsp bicarbonate of soda

Steps:

  • Heat oven to 180C/160C fan/gas 4 and brush a 900g loaf tin with melted butter, then dust it with polenta and shake out the excess. Tip 175g of the sweetcorn into a food processor with the remaining ingredients and 1 tsp salt. Blend until smooth, then remove the blade and stir through most of the remaining sweetcorn.
  • Pour the batter into the tin, scatter over the last of the sweetcorn and bake for 45-50 mins until risen and golden. Insert a skewer into the centre - it should come out with a few moist crumbs, but the mixture should not be wet. Return to the oven for a further 5-10 mins if necessary, then test again.
  • Cool the loaf in its tin for 10 mins, then transfer to a wire rack to cool. Will keep, wrapped in cling film, for up to 3 days, or freeze in slices for up to 2 months.

  • Chili. One of the most iconic and classic cornbread pairings is chili. A thick red broth chock full of ground beef, beans, pepper, and onions, chili is just a filling and utterly satisfying meal.
  • Pinto beans. As any true Southerner knows, pinto beans just cry out for a side of cornbread. The beans simmer for hours in broth, with a ham hock and onions, until they turn into almost a soup that’s so savory and nourishing that you won’t be able to stop at one bowl.
  • Fried chicken. Cornbread bread also goes really well with finger-lickin’ good fried chicken. Whether you fry the chicken yourself, or buy it premade from a store or restaurant, it’s a popular dish for good reason.
  • Beef stew. Classic, tender beef stew is chock full of beefy flavor that basically requires some bread alongside it. The simple, inexpensive ingredients somehow marry to create a dish worthy of royalty.
  • BBQ pulled pork sandwiches. If you’ve never had cornbread muffins with your pulled pork sandwiches, I recommend that you add it to your meal asap. Cornbread is a common side dish at barbecue restaurants, because the BBQ sauce and cornbread are just a match made in heaven.
  • Smoked sausage or kielbasa. Savory grilled smoked sausage basically requires a sweet countertop for balance, making it the perfect meat to serve with cornbread.
  • BBQ grilled chicken. Maybe you’re starting to see the pattern, but BBQ grilled chicken is another main course to serve with cornbread. Set out some honey mustard or BBQ sauce, cornbread, and corn on the cob, and everyone will be gobbling up their dinner.
  • Meatloaf. The savory, beefy, comfort food nature of meatloaf can really play off the sweetness of cornbread as well. Forget those plain ‘ol dinner rolls, and swap in some corn muffins instead.
  • Taco bake. A quick, weeknight dinner that everyone is sure to love is a layered taco bake. It combines ground beef, tortillas, queso sauce, and a couple other ingredients to make a flavorful and super easy meal.
  • Pork chops. There are several different ways to prepare pork chops, but these honey garlic pork chops specifically almost require a side of cornbread.
