ANGEL PUFF
A simple twist on a breakfast casserole. You can add bacon, chopped ham, or fresh broccoli... a great dish to be creative with. This recipe cam from the Angel of the Sea Bed & Breakfast in Cape May, New Jersey. I've been searching for an Angel Puff recipe and this is the only one I've found. If you try it please let me know if you would change anything.

- Beat eggs until they are light and fluffy.
- Add the remaining ingredients and stir gently until well blended.

Steps:
- Preheat oven to 350.
- Combine first 3 ingredients in a large bowl.
- Beat with a mixer at medium speed until smooth.
- Drop batter by heaping tablespoon onto baking sheet coated with cooking spray.
- Bake at 350 for 9 minutes or until lightly browned.
- Remove from baking sheets.
- Immediately, and cool on wire racks.
- Tip: You can change the flavor of these light, chewy cookies by using any other flavored sugar-free carbonated beverage.
- Try strawberry or lemon-lime for starters.

- Preheat the oven to 375 degrees F. Line a cookie sheet with parchment paper or a silicone sheet.
- Pulse the granulated sugar and lemon zest in a food processor until fine and fragrant.
- Lay 1 of the puff pastry sheets on a lightly floured work surface. Brush the sheet with about half of the butter and sprinkle with half of the lemon-sugar. Lightly press sugar into the pastry with a rolling pin. Place the other pastry sheet on top, brush with the remaining butter and sprinkle with remaining sugar. Carefully roll the pastry out into a 12-inch square, about 1 1/8-inch thick. Trim uneven edges with a pizza cutter or a knife to make a perfect square.
- Starting on the closest edge, roll the pastry up into a cylinder but stop at the mid point of the dough. Roll the pastry up on the opposite side so it looks like an old-fashioned scroll. Adjust the rolls so they are even and meet in the center. Wrap tightly in plastic wrap and freeze until firm, 20 minutes.
- Slice the roll, crosswise, with a serrated knife into 1/4-inch thick pieces and lay on the prepared baking sheet. Bake until the cookies soften, about 10 minutes. Working quickly and efficiently, remove the cookies from the oven--if they have lost their shape, gently roll them back together. Let cool on the pan for a minute to set. Turn them with a spatula (take care to keep the shape) sprinkle with the yellow sugar and return to the oven. Continue to bake until golden brown, about 15 more minutes. Transfer cookies to a rack, sugary sides up, to cool. Serve.
- Store cookies in a tightly sealed container for up to 3 days.
BAKED ANGEL HAIR WITH EGGPLANT

- Heat 1/3 cup of oil in a large nonstick frying pan over medium-high heat. Add half of the eggplant and toss to coat in the oil. Sprinkle with salt and pepper. Saute the eggplant until it is golden and tender, about 10 minutes. Decrease the heat to medium. Add half of the garlic and saute until it is tender, about 2 minutes longer. Using a slotted spoon, transfer the eggplant mixture to a large bowl. Repeat with the remaining 1/4 cup oil and the remaining eggplant and garlic.
- Add the sausage and wine to the same frying pan. Cook over medium-high heat until the wine evaporates and the sausage is brown, breaking the sausage into pieces with the back of a spoon, about 8 minutes. Add the sausage, marinara sauce, and crushed red pepper to the eggplant mixture, and toss to combine.
- Meanwhile, bring a large pot of salted water to a boil over high heat. Add the angel hair and cook for 1 to 2 minutes, stirring constantly, until pasta is still slightly crunchy and undercooked. Drain. Toss the angel hair with the eggplant mixture. Cool completely. Add the mozzarella and Parmesan and toss to combine.
- Preheat the oven to 375 degrees F.
- Roll out 1 pastry sheet on a floured surface to a 13 1/2-inch square. Transfer to a 9-inch springform pan, allowing the excess pastry to hang over the rim. Spoon the pasta mixture into the pan. Place the second pastry sheet atop the pasta filling. Pinch the edges of the pastry sheets together to seal. Trim the overhanging pastry edges to about 1-inch. Fold the pastry edges in to form a decorative border. Cut a slit in the center of the top pastry to allow the steam to escape.
- Bake until the pastry is brown and puffed on top, about 1 hour and 30 minutes. Let stand for 20 minutes. Remove the pan sides and serve.

- Line a large baking sheet with waxed paper.
- Place the white chocolate chips into a large microwave-safe bowl, and heat on low power for 30-second intervals until the chocolate chips have begun to melt.
- Stir the chips until smooth.
- Pour the corn puff snacks into the bowl with the white chocolate, and stir to coat the puffs with the chocolate.
- Spread the mixture out onto the waxed paper-lined baking sheet and allow to set, about 30 minutes.
- Break the mixture up into bite-size pieces to serve.

CHRUSCIKI - POLISH ANGEL WING COOKIES
This delightful pastry was made by my Polish Grandmother every year for Christmas. Traditionally they were made for the last Thursday before Lent. They take a while to make but the time you put in to making these is well worth the reward!

Steps:
- Using a stand mixer, whisk whole eggs, egg yolks, butter and salt until thick and lemon colored.
- Slowly beat in the confectioner's sugar and brandy.
- Change to the dough hook and slowly mix in the flour a 1/4 cup at a time until the dough forms and pulls away from the bowl.
- Using the dough hook, knead the dough for 3-5 minutes. It should be thick like bread dough.
- Keep the dough in the bowl covered with a damp towel to keep it from drying out.
- Snip off a baseball sized piece of dough. On a floured surface, roll to 1/8 inch thick at the most!
- Using a sharp knife cut the dough into 1 1/2 inch wide strips. Then cut the other way in a diagonal to make pieces of dough that are about 1 1/2 X 4 inches.
- Next use your knife to cut a slit in the center of each piece.
- To form the wing shape, take one pointy end and poke it through the slit. Very gently pull the end through the slit to form a bow shaped cookie.
- In a heavy pot or deep skillet, heat the fat of choice (I like lard) to 350°F Use a thermometer!
- Drop the cookies, 3 cookies at a time, into the fat. Drop 3 cookies at once not 1 at a time. The cookies will sink to the bottom at first then they will puff up and float a couple of seconds later. As soon as this happens use a couple of forks to turn them.
- Immediately after you turn them use a deep fry strainer to remove them from the fat to drain on brown paper bags.
- Dust the still hot cookies with confectioner's sugar and repeat, cooking 3 cookies at a time until finished.
- Store in tightly covered, wax paper-lined tins.

- Tear the cake into walnut-size pieces and scatter over bottom of 10" X 13" sheet cake pan.
- Dissolve Jello in 2 cups of boiling water and then 2 cups cold water.
- Allow to jell a little.
- Fold in the frozen strawberries and whipped topping which has thawed a little.
- Pour over cake and refrigerate until set.
- Decorate with whipped cream or additional whipped topping and fresh strawberries.
