Provided by Erin Clarke / Well Plated

Categories     Dessert

Time 20m

Number Of Ingredients 13

1 1/4 cups quick oats
1 cup white whole wheat flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon kosher salt
1/4 cup unsweetened applesauce
4 tablespoons unsalted butter (melted and cooled)
1 large egg
1 teaspoon pure vanilla extract
1/2 cup honey
1/3 cup dark chocolate chips
1/4 cup raisins
1/4 cup well chopped raw walnuts or pecans

Steps:

  • In a large bowl, whisk together the oats, flour, baking powder, cinnamon, and salt.
  • In a medium bowl, combine the applesauce, butter, egg, vanilla, and honey. Whisk until blended. Pour the liquid mixture into the flour mixture and stir just until combined. The dough will be wet and sticky. Fold in the chocolate chips, raisins, and walnuts. Place in the refrigerator and let chill for at least 30 minutes or up to 3 days.
  • When ready to bake, place a rack in the center of your oven and preheat the oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper or a silicone baking sheet. Remove the dough from the refrigerator (if it is very stiff, you may need to let it sit out for 5 to 10 minutes). With a cookie scoop or spoon, drop the dough into 1 1/2-inch balls and arrange on the baking sheet, leaving 1 inch of space around each. With your fingers, gently flatten each cookie to be about 3/4-inch thick.
  • Bake until the cookies are golden and firm around the edges and set on top, about 9 to 10 minutes. Place the baking sheet on a wire rack and let the cookies cool on the baking sheet for 2 minutes, then transfer the cookies to the rack to cool completely.

REDUCED SUGAR WHOLE WHEAT OATMEAL COOKIES

Reduced Sugar Whole Wheat Oatmeal Cookies image

Dana and I are trying to ease up on the white flour and refined sugar, but it's hard sometimes to do without creating "cardboard" tasting foods. He asked me to find an oatmeal cookie recipe that had no sugar and used whole wheat flour. I wasn't completely successful finding one, so I took a standard oatmeal cookie recipe and...

Time 35m

Number Of Ingredients 12

1 1/3 c whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 c oats, uncooked
1/2 c butter or margerine, soft or melted
2 eggs
1 c nuts (i used a combination of walnuts and almond slices, chopped)
1 c splenda
1/4 c molasses
1 tsp cinnamon
1 pkg chopped dates or dried fruit. i made two batches, one with dates and the other with a package of dried mixed berries. they were both delicious.

Steps:

  • 1. Preheat oven to 350. Mix flour, baking powder, Splenda, cinnamon, baking soda, salt, and oats together. Add butter, eggs, vanilla. Stir in remainder of ingredients.
  • 2. Place walnut-sized balls of dough on greased cookie sheet, and flatten (where it's whole wheat, they don't spread without some help). I also smoothed the edges with my fingers so that they wouldn't be so bad to crumble.
  • 3. Bake for 10-12 minutes. Allow to cool for a couple of minutes on cookie sheet, then transfer gently to a wire rack to finish the cooling process. These will do best if you don't flatten them to any more than 1/3 inch thick. They'll have a chewy, dense texture...and if you like whole grain foods, I'm guessing you'll really be pleased with the taste of these.

HONEY WHOLE WHEAT OATMEAL COOKIES

Honey Whole Wheat Oatmeal Cookies image

These cookies use honey instead of white granulated sugar. Also, 100% whole wheat flour used instead of all purpose flour. Tempature is lowered on purpose beacause honey burns at higher tempatures. This is suppose to be a healthier alternative to cookies made with white sugar.

WHOLE WHEAT OATMEAL COOKIES WITH EVERYTHING

Whole Wheat Oatmeal Cookies With Everything image

Based on Quaker Oats' Vanishing Oatmeal Cookies Recipe. I made them a few times, and I never thought they were quite good enough. They weren't fluffy enough and they didn't have nearly enough oatmeal! I found out one day when I ran out of white flour, that whole wheat tastes great in oatmeal cookies. I like to pulse the oats in the food processor a few times so they're extra fluffy, but instant oatmeal works very well.
