A delicious breakfast bread that's made with white whole wheat flour and sweetened with pure maple syrup and banana, so you can feel good about eating it. You'll definitely want a second slice of this Favorite Healthy Blueberry Banana Bread, warm from the oven!

1 ½ cups white whole wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
¼ cup unsalted butter (melted)
1 cup mashed ripe banana (about 3 medium bananas)
1/3 cup pure maple syrup
2 large eggs
1 teaspoon vanilla extract
1 cup blueberries (fresh or frozen)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, whisk together the white whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  • In a medium microwave-safe bowl, melt the butter in the microwave. Add the mashed banana and stir to combine. Add the maple syrup, eggs, and vanilla. Stir until well combined.
  • Pour the wet ingredients into the dry and stir until just combined, being careful not to overmix. Gently fold in the blueberries.
  • Spray a loaf pan with cooking spray. Pour the batter into the pan and bake for 50-60 minutes, until a tester inserted in the center comes out clean. Let cool in the pan on a wire rack for 10 minutes; remove bread from pan to a cooling rack. Let cool for at least 20 minutes before slicing and serving. Bread is best the day it is made, but still delicious on the second and third day.

3 ripe bananas
2 eggs
½ cup 2% plain greek yogurt
⅓ cup honey
1 teaspoon vanilla extract
1 teaspoon baking soda
1 ½ cups wheat flour
1 cup blueberry

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a medium bowl, mash bananas. Mix eggs, yogurt, honey, vanilla extract, and baking soda into mixture.
  • Add flour and mix.
  • Add blueberries and gently fold into mixture.
  • Pour the batter into a greased 9 x 5-inch (23 x 13 cm) bread pan. Bake for about 50 mins, or until a toothpick comes out clean from the middle of the bread. (Baking times may vary, so keep an eye on the bread.)
  • Allow to cool for 15 minutes before serving.
  • Enjoy!

1/2 tsp. ground cinnamon
2-1/4 cups plus 2 Tbsp. flour, divided
1 cup plus 2 Tbsp. sugar, divided
1/4 cup plus 3 Tbsp. butter, divided
1-1/2 tsp. baking powder
1/2 tsp. baking soda
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup mashed fully ripe bananas (about 3)
2 eggs
1 cup blueberries
1/2 cup pecan halves, coarsely chopped

Steps:

  • Heat oven to 350ºF.
  • Combine cinnamon, and 2 Tbsp. each flour and sugar in medium bowl. Cut 3 Tbsp. butter into small pieces. Add to cinnamon mixture. Use pastry blender or 2 knives to cut butter into cinnamon mixture until mixture resembles coarse crumbs. Reserve for later use.
  • Combine baking powder, baking soda and remaining flour. Beat cream cheese with remaining sugar and butter in large bowl with mixer until light and fluffy. Add bananas and eggs; mix well. Add flour mixture; mix just until moistened. Stir in blueberries and nuts. Top with reserved cinnamon mixture.
  • Spoon into greased and floured 9x5-inch loaf pan.
  • Bake 1 hour 15 min. to 1 hour 20 min. or until toothpick inserted in center comes out clean. Cool 20 min. Remove bread from pan to wire rack; cool completely.

2 eggs
1/3 cup coconut oil
1/4 cup orange juice (fresh squeezed)
1/2 cup applesauce (no sugar added)
1 tablespoon honey (organic)
1 tablespoon maple syrup (not maple flavored syrup)
1/2 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon baking soda
2 teaspoons baking powder
3/4 cup oats (not quick oats)
1/4 cup oat bran
1/4 cup flax seed (ground)
1 cup whole wheat flour (or whole wheat pancake mix)
1/2 cup blueberries (frozen)

Steps:

  • Combine all wet ingredients (except blueberries) and cinnamon on medium in electric mixer, using cake whisk, so it will chop up the bananas.
  • Add all dry ingredients to electric mixer and combine with wet ingredients on low, until mixed thoroughly. Do not over mix.
  • Stir (by hand) the frozen blueberries into the batter.
  • Spoon batter into a greased loaf pan or several mini loaf pans or muffin tins.
  • Bake at 350 degrees for 35-50 minutes, depending on the size/type of pan(s) used, until a toothpick or knife comes out clean.
  • Allow pan to cool slightly before turning bread out.

This recipe is naturally sweetened with fruit and an optional drizzle of agave syrup meaning less added sugar is required in this banana bread

125g self-raising wholemeal flour
½ tsp baking powder
2 tsp ground cinnamon
75g sultana
50g butter, melted
2 tsp vanilla essence
1 egg
1 tbsp milk
3 ripe bananas, mashed
drizzle agave syrup, to serve (optional)

Steps:

  • Grown ups: Preheat the oven to 180C/ 160C fan/ gas mark 4. Grease and line a 450g loaf/1lb tin with baking parchment.
  • Children: Weigh the flour, baking powder, cinnamon and sultanas into a bowl and mix with a wooden spoon. Then weigh the butter, vanilla essence, egg, milk and mashed bananas and put into another bowl or jug and mix with a small balloon whisk or fork. Pour the 'wet' banana mixture into the 'dry' flour mixture and combine thoroughly with a wooden spoon. Weighing needs to be very accurate when baking so help older children to measure carefully. Younger children can also get involved by spooning or pouring into the scales with adult supervision. Younger children can also beat the egg with a fork and mash the banana with a potato masher.
  • Grown ups: Pour the cake mixture into the prepared tin and bake for 30 - 40 mins or until a skewer inserted in the middle comes out clean. Remove from the oven, allow to cool in the tin for 10 mins then turn out.
  • Children: Drizzle with agave syrup if using.
