ROASTED ASPARAGUS WITH LEMON, BUTTER, AND PARMESAN



Roasted Asparagus with Lemon, Butter, and Parmesan image

The perfect side dish - Roasted Asparagus with lemon, butter, and parmesan. An easy, baked asparagus recipe that pairs well with everything.

2 lbs asparagus (or about 2 bunches)
1 lemon ((half juiced and half sliced into rings))
4 Tbsp unsalted butter (cut into pats)
1 Tbsp olive oil
1 tsp sea salt (or added to taste)
1/2 tsp black pepper, freshly ground, (or added to taste)
1/2 cup shredded parmesan cheese (or to taste)

Steps:

  • Rinse 2 bunches of asparagus and break off the ends by holding the base end and snapping it wherever it snaps.
  • Place asparagus in a large rimmed baking sheet, drizzle with olive oil and season with salt and pepper. Roll asparagus lightly to coat in oil and seasonings.
  • Squeeze 1/2 of a lemon evenly over the asparagus. Line the top third of the asparagus with lemon slices from the second half of your lemon. Thinly slice 4 tbsp of butter and line the center of the asparagus with butter.
  • Bake at 400°F for 10 minutes or until asparagus is tender. Remove asparagus from the oven and set oven to Broil.
  • Sprinkle the center of the asparagus with Parmesan cheese then return to the center of the oven and broil 2-3 minutes or until cheese is melted and golden.

1 bunch asparagus (1 pound) (ends trimmed)
2 Tablespoons olive oil
1 Tablespoon lemon juice
1/2 tsp EACH garlic powder, salt
1/4 tsp EACH pepper, dried oregano, dried basil
1/8 tsp EACH ground nutmeg, dried thyme
1/2 cup freshly grated Parmesan cheese ( or to taste)
1 tablespoon unsalted butter
1/3 cup panko breadcrumbs

Steps:

  • Preheat oven to 425 degrees F. Line a baking sheet with foil and lightly spray with cooking spray.
  • Add asparagus to the baking sheet and add olive oil, lemon juice and all seasonings. Toss to evenly coat then arrange asparagus in a single layer. Evenly top with Parmesan cheese.
  • Bake at 425 degrees F for 7-10 minutes or until tender but still crisp.
  • While the asparagus is baking, make Panko topping. Melt one tablespoon butter in a skillet over medium heat. Add panko and stir to coat then continue to cook and stir until panko is golden.
  • Sprinkle toasted panko all over baked asparagus. Serve immediately.

2 1/2 pounds fresh asparagus (about 30 large)
2 tablespoons good olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan
2 lemons cut in wedges, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • If the stalks of the asparagus are thick, peel the bottom 1/2 of each. Lay them in a single layer on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 15 to 20 minutes, until tender. Sprinkle with the Parmesan and return to the oven for another minute. Serve with lemon wedges.

I added in about 1/2 teaspoon garlic powder with the cayenne pepper when making the cream sauce but that is optional, and also the asparagus can be cut into half or thirds or just leave them in one piece in the dish, the choice is up to you, I sliced mine in half for this. This is delicious!

3 lbs fresh asparagus (tough ends snapped off)
4 tablespoons butter
2 tablespoons flour
1/4 teaspoon cayenne pepper
1 1/2 cups half-and-half cream
1/2 cup grated parmesan cheese
seasoning salt (or use white salt)
black pepper
1 1/2 cups soft breadcrumbs
1/4 cup parmesan cheese
2 tablespoons melted butter
1/2 teaspoon paprika

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • Place the fresh asparagus in a pot of water; bring to a boil, and boil for about 3-4 minutes, plunge into ice water or very cold water then drain well.
  • Arrange the asparagus into the bottom of prepared baking dish.
  • In a saucepan melt butter oven medium heat; whisk in flour and cayenne until smooth, whisking constantly for 1 minute;.
  • Slowly add in half and half, whisking and cooking until thickened (about 2 minutes).
  • Add in 1/2 cup Parmesan cheese, season with salt and pepper; pour the cheese sauce evenly over the asparagus in the dish.
  • In a bowl stir the soft breadcrumbs with melted butter, 1/4 cup parmesan cheese and paprika; toss to combine, then sprinkle evenly over the casserole.
  • Bake uncovered for about 25-30 minutes.

10 garlic cloves, minced
3 tablespoons olive oil
salt (to taste)
pepper (to taste)
1/4 cup freshly grated parmesan cheese (may use Asiago)

Steps:

  • Heat oil and garlic in a small saucepan over low heat until garlic becomes golden- several minutes (do not burn garlic); allow oil to cool.
  • Bend asparagus gently at a natural point and when it snaps, discard end pieces.
  • Place asparagus on a lipped roasting pan and toss with infused olive oil and garlic, coating all pieces.
