Steps:
- First make the dough: Sift the flour in a large bowl. Add in instant yeast and salt. Whisk well. In a medium bowl, whisk together the yogurt and warm water. Pour this mixture in the flour mixture. Combine them well. Knead it well until everything holds together. It will be a pretty soft and sticky dough. Wet your fingers and pat the top of the dough. Cover it with a kitchen towel. Put it in a warm place and wait at least one hour so that it rises well.
- Meanwhile you can prepare the topping mixture you'll spread on the dough. Combine all peppers and onions in a bowl. Add in sesame seeds, olive oil, pepper paste and salt. Stir well.
- After the dough rises enough (after at least one hour), preheat the oven to 350F. Oil a baking sheet and transfer the dough on it. Now it's time for your hands to work more. Flatten the dough in the baking pan equally, pressing on it with you palm. Spread the topping mixture on the dough with your hands.
- Before putting it into the oven, cut it in squares so that it is easier to remove from the pan after it's baked.
- Place it into the oven and bake it for 30-40 minutes.

- Brush the bell peppers with 1 tbsp of olive oil, and place in a lightly oiled oven-safe pan or cast-iron skillet. Roast the peppers in the 425 degrees F heated oven for 30 minutes or so, turning them over once or twice.
- Remove from the oven and place the peppers in a bowl. Cover with plastic wrap for a few minutes. This traps the steam from the roasted peppers, making them easy to peel. When cool enough to handle, simply peel the peppers, remove the seeds and slice the peppers into small strips.
- Now in the bowl of a large food processor, combine the roasted red pepper strips with 3 tbsp extra virgin olive oil, walnuts, tomato paste, bread crumbs, pomegranate molasses, Aleppo pepper, sugar, sumac, salt and cayenne. Blend into a smooth paste.

- Thinly slice the tomato and cheese. You could also grate the cheese with a box grater if you want it to melt faster. Spread the salça (or tomato paste) on one side of each slice of bread.
- Top two of the bread slices with an equal amount of tomato and cheese slices. Sprinkle with dried thyme. Top the toasts with the other slices of bread (the side with the paste should be in).
- Heat a non-stick skillet over medium heat and add the butter. Place the toasts in the skillet when the butter starts to melt.
- Press down on the toasts with a lid to flatten them and help the cheese melt while the toasts cook. Cook the underside for about 4 to 5 min, until the bread is nicely toasted with a deep golden brown color.

- Mix the diced aubergine with 150 ml of the olive oil and some salt and pepper. Transfer to the baking sheets and roast until all the pieces are completely soft, 25-30 minutes or longer.
- Meanwhile, place a large, thick bottomed pan or pot over medium heat. Add the remaining 50 ml olive oil, onion and pepper and fry until softened, but not browned, stirring regularly. This will take 10-12 minutes. Add the garlic and continue frying for another minute, stirring constantly and making sure the garlic doesn't colour. Add the tomatoes and sugar and continue to cook until the tomatoes have released their juices and cooked down a little, stirring occasionally, about 10 minutes. Add more salt and pepper, if needed.
- Gently fold the roast aubergine into the sauce. Continue to cook for 5 minutes or more to allow the flavours to mingle, or until your aubergines are completely soft if they weren't already – undercooked aubergines is the only thing that can ruin this dish. Be careful when stirring so the aubergines don’t break and turn into a mash. Take off the heat and leave with the lid on until it has reached room temperature.

- In a mortar, grind the cumin seeds, coriander seeds, thyme, and peppercorns. When the seeds are as coarse as you prefer, add the olive oil into the mortar for it to absorb more flavor. I left a few larger pieces of seeds since I like some big flavor-bombs here and there, see the photo above for reference.
- In a bowl, mix the pepper paste, crushed walnuts, and olive oil blend. Give it a taste and add more spices if you prefer. Enjoy on toast or as a dip.
- Save it in the fridge in a lidded jar for up to a week. However, if you add olive oil to cover the surface, you can save it for far longer.
