8 ounces cream cheese, room temp
2 -3 garlic cloves, crushed
1 dash garlic salt
1 -2 tablespoon mayonnaise (the amount depends on how stiff you want to make the dip, more of the Tuna water, less stiff.)

Steps:

  • Mix all the ingredients together, let the flavors blend.
  • Optional add ins: green onions.
  • olives, green or black, nuts.

This is not your mother's mayonnaise-laden tuna salad, but it's just as easy to prepare. Here's what you do: stir together some canned tuna, garlic, lemon juice, red onion, black olives, capers and fresh parsley, then spread it on buttered toast. Top it off with a round of ripe tomato or slivers of avocado and another slice of toast. That's it. If you want to make it into a dip, toss the mixture into a food processor with a few tablespoons of softened butter and a bit more olive oil. Purée until smooth and creamy and serve with carrots, fennel, bell pepper and seeded crackers. If you have a tin of sardines taunting you from inside your cabinet, we bet this recipe would work equally well with those.

1 garlic clove, finely minced
Juice of half a lemon, plus more to taste
5 tablespoons extra virgin olive oil, plus 4 more tablespoons if serving as dip
20 ounces canned tuna, preferably packed in olive oil, drained
1/4 cup chopped red onion
1/4 cup chopped black olives
2 tablespoons capers
2 tablespoons minced parsley or basil
Salt to taste
Buttered toast, if serving as sandwiches
10 tablespoons unsalted butter, softened, if serving as dip

Steps:

  • In a large bowl, mash garlic with the back of a spoon. Whisk in the lemon juice and 5 tablespoons of olive oil. Combine with the tuna, onion, olives, capers, herbs and salt to taste.
  • Serve on buttered toast for sandwiches, or make into a dip: Pulse the tuna salad and butter in a food processor until it is creamy. With the motor of the processor running, slowly add the additional 4 tablespoons oil. Taste and add more salt or lemon juice if needed. Serve with cut vegetables (fennel and bell peppers are nice) and crackers.

My Delicious and Easy Tuna Dip is creamy, full of flavour and takes just minutes to prepare! When a homemade dip is this simple and tasty, there is no need for a shop-bought dip. In fact, it will likely be quicker to make it from store cupboard ingredients than go to the store.

185 g (6.5 oz) canned tuna in oil (See Note 1)
1 tsp lemon zest (See Note 2)
1/3 cup mayonnaise - good quality whole egg
1/2 tsp cayenne pepper - or to taste
1/4 cup fresh parsley leaves - roughly chopped (See Note 3)
1 spring onion/scallion - some white and green part, roughly chopped
sea salt and freshly ground black pepper - to taste, if needed (See Note 4)
to garnish - parsley, spring onions, lemon zest and/or capers (optional )

Steps:

  • Drain your tuna of any excess oil.
  • Zest the lemon. Chop the parsley and spring onion.
  • Place all of the ingredients into a small blender, and blend until the dip has reached a smooth consistency.Check that the seasoning is to your taste. Add salt and freshly ground black pepper if necessary.
  • Serve the dip, spread in a shallow bowl with a garnish of parsley, spring/green onion top, capers or lemon zest. (Or all of the above!)

6 medium garlic cloves, thinly sliced

Steps:

  • Cook pasta in large pot of rapidly boiling water until al dente or done to your liking.
  • Meanwhile, prepare the sauce. Place olive oil and the garlic in a large saute pan and turn heat to medium. Cook until the garlic is fragrant and lightly golden. Add capers, anchovies, olives, and tomatoes. Cook until the tomatoes start to break down and become a sauce, about 8 minutes. Toss with cooked pasta. Add parsley and tuna and season, to taste, with salt and pepper. Serve immediately.

1 5-ounce can Chicken of the Sea chunk light tuna, packed in water, drained
½ cup cooked white beans, such as Cannelini or Great Northern, drained and rinsed if canned (you can also use same amount cream cheese or mayonnaise)
4 Tablespoons unrefined, cold-pressed, extra-virgin olive oil + extra for drizzling
1 Tablespoon capers, drained + extra for garnish
1 Tablespoon fresh lemon juice
1 Tablespoon anchovy paste
2 medium garlic cloves, smashed
a few grinds of freshly ground black pepper
sea salt, if necessary
fresh flat leaf parsley for garnish, finely chopped
Suggested accompaniments: crackers or crostini, endive leaves, cucumber rounds, carrot sticks

Steps:
