GRILLED BBQ CHICKEN KABOBS
Spiced chicken, peppers, onions and bacon are skewered, basted with bbq sauce, and grilled to perfection!

Steps:
- If using metal skewers, no prep is needed. If using wooden skewers, soak them in water for at least 30 minutes so they don't burn too much.
- Combine spice rub ingredients in a small bowl and toss to combine.
- Add chicken pieces, bacon and oil in a mixing bowl and toss with about 2/3 of the rub. I like to use my hands to really massage the rub into the meat.
- To another mixing bowl, add green pepper, onion, and pineapple. Toss with remaining rub.
- Wrap bacon pieces around the chicken, in a "C" shape, with the chicken inside. Thread bacon wrapped chicken, peppers, onion, and pineapple onto kabob skewers, alternating as desired.

THE BEST BBQ CHICKEN SKEWERS RECIPE
Steps:
- Trim chicken of excess fat, then cut the chicken into 1-inch cubes. In a large bowl, toss the chicken with the salt. Then cover with plastic wrap and refrigerate for at least 30 minutes and up to 1 hour.
- Turn all grill burners to high, close lid, and heat for about 15 minutes. Leave primary burner on, but turn off other burners.
- Meanwhile, pat the chicken pieces dry with paper towels. In a small bowl, combine both paprika and sugar. Place the raw bacon in a food processor or blender and pulse for about 30-45 seconds, until a smooth paste forms, scraping down the sides of the bowl twice throughout. Add the bacon paste and spice mixture to the chicken. Mix with hands or spatula until the ingredients are blended and chicken is coated. Thread the chicken onto the skewers, rolling or folding as needed to maintain 1-inch cubes.
- Grill the chicken over the primary burner with lid closed, turning one-quarter of a turn every 2 minutes or so, until browned and slightly charred (about 8 minutes total for chicken breast and 10 minutes for thighs). Brush the top of skewers with BBQ sauce; flip and cook until sauce is browned in spots, about 1 minute. Brush second side with sauce; flip and cook for another minute or so, until cooked through.
- Remove skewers from grill, tent with foil, and let rest for 5 minutes. Serve, passing remaining BBQ sauce separately, if desired.

BBQ CHICKEN SKEWERS

- If you are using wooden skewers, it is important to soak them first. You can soak them overnight or at least 30 minutes before making the kebabs.
- In a small bowl mix together BBQ seasonings.
- Season chicken with BBQ seasonings. Let the mixture sit for 10 minutes.
- To a skewer, rotate adding in chicken, peppers, and onions, repeat until the skewers have been filled about 1/2 way (about 3-4 pieces of each).
- Preheat a grill to 400º Fahrenheit.
- Add skewers to the grill and cook for 10-15 minutes, brushing with olive oil several times during grilling. Turn the skewers occasionally and grill until temperature reaches 165ºF internally.
- Serve warm.

GRILLED CHICKEN SKEWERS

- Preheat a grill or grill pan to medium heat.
- To make the peanut sauce, put the peanut butter in a blender with the soy sauce, honey, ginger, red pepper flakes, chili oil and lime juice. Add 1/4 cup very hot water as you blend the mixture. Check the consistency and add a little more hot water if needed to make it very smooth. Transfer the sauce to a small dish, cover it with plastic wrap and set aside.
- Brush the grill with oil. Thread the chicken onto the skewers and grill on both sides until the chicken is done in the middle, 2 to 3 minutes per side. Remove to a serving platter and sprinkle on the cilantro.
- Serve the skewers with dishes of the peanut sauce and a good-quality barbecue sauce for dipping.
BARBECUED CHICKEN FAJITA SKEWERS

- Make the marinade. In a large bowl, juice both the limes. Add the oregano, spices, olive oil and garlic, and mix together. Dice the chicken, then get your child to stir it through the marinade, and set aside.
- Prepare the vegetables. Deseeding the peppers and halving the onion is tricky, so do this yourself. Children aged from about seven or above can cut them into chunks using a child-friendly knife.
- Make your skewers. Carefully thread alternate pieces of chicken, peppers and onion onto your skewers. Smaller children might find this a little hard, so the best way is to stab the ingredients and push them up the skewers. When you've used up all the ingredients, set aside. Can be made several hours ahead and chilled until ready to cook.
- Prepare the guacamole. Stone and peel the avocados, then tip into a bowl with the other ingredients. Get your child to use a potato masher to mash everything together and tip into a serving dish.
- Cook the skewers. Heat a barbecue or griddle pan. Cook the skewers for 10-12 mins, turning, until they are cooked all the way through. A child from the age of eight can watch over a griddle and turn the skewers with a pair of tongs. Serve the skewers on heated tortillas with the guacamole, soured cream, chopped coriander, lime wedges on the side and chilli sauce for those who like a touch of spice.

- In a resealable plastic bag, combine the mustard and Worcestershire sauce and water, soy sauce and oil; remove 1/3 cup and set aside for basting. Cut chicken into 1-1/2-in. pieces; add to bag. Seal and refrigerate for 1-1/2 to 2 hours. Drain, discarding marinade. , Thread chicken and vegetables alternately on skewers. Baste with reserved marinade. Grill over hot heat for 10 minutes. Turn and baste. Cook 10 minutes more or until chicken juices run clear.
