Easy Bananas Foster French Toast image

This Easy Bananas Foster French Toast is one of our favorite breakfast recipes! Crispy slices of buttery brioche are topped with a delicious homemade bananas foster sauce made from dark rum, butter, brown sugar, heavy cream, and crunchy pecans. Delicious on it's on, but devilishly good with whipped cream or vanilla ice cream!

1/2 cup (113 grams) unsalted butter
4 large eggs, plus 3 egg yolks
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 and 1/2 tablespoons (44 grams) granulated sugar
1 Tablespoon (14 grams) dark brown sugar, packed
1/3 cup (76 grams) milk
1/3 cup (78 grams) heavy cream
2 teaspoons vanilla extract
1 Tablespoon (14 grams) dark rum
8 slices brioche, cut about 3/4" thick
1/2 cup (113 grams) unsalted butter
3/4 cup (142 grams) dark brown sugar, packed
1/4 teaspoon ground cinnamon
1/2 cup (113 grams) heavy cream
1/4 teaspoon salt
1 cup (110 grams) pecans, roughly chopped or whole
2 large firm bananas, peeled and sliced
2 teaspoons vanilla extract
2 and 1/2 Tablespoon (35 grams) dark rum

Steps:

  • Melt a few Tablespoons of the butter in a large skillet over medium-heat.
  • In a large shallow bowl or pie plate, whisk the eggs and egg yolks until well combined.
  • Add in the cinnamon, nutmeg, and both sugars, and whisk until well combined. Finally, whisk in the milk, heavy cream, vanilla extract, and rum.
  • Dip each slice of brioche into the egg mixture, making sure both sides are well coated.
  • Place brioche slices into skillet and cook until the undersides are golden brown, about 2 to 3 minutes.
  • Flip, and continue cooking on the other side until equally golden brown, about another 2 to 3 minutes.
  • Continue with all french toast, adding more butter to the pan as needed.
  • In a large skillet over medium-low heat, melt the butter. Add in the brown sugar and cook, stirring with a whisk, until the sugar has melted and mixture is bubbling, about 2 minutes.
  • Add in the cinnamon, heavy cream, and salt and whisk to combine. Add in the pecans and bananas and, using a rubber spatula, fold them into the liquid mixture until they're completely coated. Cook for 1 minute. Then remove from heat and stir in the vanilla and rum.
  • Pour on top of the french toast and serve at once!

2/3 cup packed brown sugar
1/2 cup heavy whipping cream

3 large bananas, sliced
12 slices egg bread or challah (about 3/4 pound)
1-1/2 cups 2% milk
3 large eggs
1 tablespoon sugar
1 teaspoon vanilla extract

Steps:

  • Place butter in a microwave-safe bowl; microwave, covered, until melted, 30-45 seconds. Stir in brown sugar, cream, cinnamon, allspice and, if desired, pecans. Add bananas; toss gently to coat., Transfer to a greased 13x9-in. baking dish. Arrange bread over top, trimming to fit as necessary., Place remaining ingredients in a blender; process just until blended. Pour over bread. Refrigerate, covered, 8 hours or overnight., Preheat oven to 375°. Remove French toast from refrigerator while oven heats. Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 5-10 minutes. Invert to serve.

¾ cup milk
1 ½ tablespoons vanilla extract

Steps:

6 Tbsp butter, cut into pats, plus more for greasing
3 large ripe bananas, sliced, plus more for serving
1/3 c light brown sugar packed
1 Tbsp dark rum (optional)
6 oz cream cheese, cut into pats at room temperature
16 oz loaf italian bread, sliced & torn itno bite sized pieces
2 1/2 c whole milk
1/2 c heavy cream
6 large eggs
1/3 c light brown sugar, packed
2 tsp ground cinnamon
1 tsp pure vanilla extract
maple syrup, for serving

Steps:

  • 1. Butter a 9" x 13" casserole dish.
  • 2. Melt butter in a medium sauté pan over medium-high heat. Once foaming , add bananas and sauté until softened, about 2 minutes. Add the 1/3 cup brown sugar and stir until it melts with the butter. Carefully add the rum and let cook for one more minute, until the mixture is thick and syrupy. Remove from heat and cool.
  • 3. In a large bowl, whisk together the milk, cream, eggs, 1/3 cup brown sugar, cinnamon and vanilla until smooth.
  • 4. Add half of the bread to the buttered casserole dish. Sprinkle with half of the cream cheese and half of the brown sugar sauce. top with remaining bread and repeat with sauce and cream cheese. Pour the milk and egg mixture over the top and press down lightly to make sure the bread is absorbing the liquid. Cover tightly with foil, then place in the refrigerator for at least two hours or (preferably) overnight.
  • 5. Remove casserole from the refrigerator. Heat oven to 350 degrees F. Bake casserole for 30 minutes, then remove foil and continue to bake for 20 minutes, until puffed and golden.
  • 6. Serve topped with powdered sugar, sliced bananas and maple syrup.

2/3 cup light brown sugar
4 tablespoons unsalted butter
1/4 teaspoon salt
1 tablespoon dark rum
1 teaspoon banana liqueur
3 sliced bananas
1 lb French bread, cubed
3 cups 1% low-fat milk
8 eggs
2 teaspoons vanilla
1 teaspoon almond extract
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/4 cup sugar
1/4 cup mini chocolate chip

Steps:

  • Using a small sauce pan, melt butter. Add brown sugar and salt. Stirring until sauce starts to bubble lightly. Remove from heat and add rum and liqueur. Set aside.
  • Mix together milk, eggs, vanilla, almond extract, salt, cinnamon & sugar.
  • Butter a 13 x 9 baking dish, layer the sliced banana's and drizzle with sauce. Layer half of the bread, all of the chocolate morsels and top with remaining bread. Pour egg mixture over bread. Cover with plastic wrap and gently press down on the top to make sure the bread gets to adsorb the egg mixture. Place in the refrigerator overnight.
  • Let stand at room temperature 30 mins prior to baking. Preheat oven to 350°F and bake 45-60 minutes Allow to cool for 5 mins before serving.

1/2 cup maple syrup

Steps:

  • Preheat oven to 375*, slice bread.
  • For batter, whisk eggs, milk, sugar, vanilla and salt.

  • In a large saute pan over medium heat, stir together butter, brown sugar, maple syrup, dark rum and cinnamon.
  • When Mixture is Syrupy, toss fruit in syrup just till heated through, 1 minute.
  • Spoon over French toast and garnish with pecans.
