- Preheat the oven to 350 degrees F. Lightly butter a 9-by-13-inch baking dish; line with parchment paper, leaving an overhang on 2 sides. Butter the parchment. Whisk the flour, oats, malted milk powder, cardamom, ginger, cinnamon, cloves and salt in a large bowl.
- Beat the butter and brown sugar in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Add the egg and vanilla and beat until combined. Reduce the mixer speed to low; beat in the flour mixture until just incorporated. Transfer the batter to the prepared pan and spread evenly.
- Bake until the top is golden brown and the edges start to pull away from the sides of the pan, 20 to 25 minutes. Remove from the oven and sprinkle with the white chocolate, then return to the oven until the chocolate softens, about 45 seconds. Remove from the oven and spread the chocolate into a smooth layer. Top with nonpareils. Transfer to a rack and let cool completely, then lift out of the pan using the parchment; cut into squares.

Chai Latte Cookies are a simple cookie recipe that is packed full of the flavor of a delicious chai latte.

- Preheat oven to 350º.
- In a Kitchen Aid or a large bowl, beat butter, cream cheese, and sugar on medium high for about 1 minute, until the mixture is fluffy.
- Add salt, cardamom, cinnamon, ground cloves, pepper, vanilla, and egg, and beat again for a few seconds.
- Add cream of tartar, baking soda, and 2 cups of the flour, and mix just until incorporated. Add remaining flour and stir again until just incorporated.
- Scoop balls of cookie dough, and roll them between your palms until smooth. Roll in 1/3 cup sugar, and place on a cookie sheet. Flatten slightly with palm or the bottom of a glass.
- Bake 8 minutes. You may be tempted to cook until golden brown, but that isn't necessary with this recipe.
- Cool on a wire rack.

- For the chai: In a 48-ounce French press coffee maker, combine the coffee, cardamom, cinnamon, ground ginger, allspice, grated ginger, pepper, cloves, salt and water. Place the lid on the coffee press with the plunger extended. Let the mixture brew for 4 minutes. Press down the plunger.
- While the coffee mixture is brewing, whisk the nonfat milk in a heavy medium saucepan over medium-high heat until very thick and foamy, 5 to 6 minutes.
- For the cinnamon sugar: In a small bowl, mix together the sugar and cinnamon until combined. Set aside.
- Pour the coffee mixture into a medium saucepan and rewarm over medium heat. Stir in the condensed milk. Divide the chai among 4 cups and spoon large dollops of the whisked nonfat milk on top. Sprinkle with the cinnamon sugar and serve.

- Toast the spices in a dry frying pan until they are fragrant then put them, the ginger and tea bags into a teapot or cafetière with 500ml freshly boiled water and leave to infuse for 10 mins.
- Heat the milk with the brown sugar, stirring until the sugar has dissolved. Once lightly steaming froth the top with a milk frother or whisk to create some foam.
- Strain the tea between 4 mugs, or heatproof glasses, then pour in the milk, keeping the froth back. Stir to combine. Top each latte with a bit of the milk foam then dust with a pinch of cinnamon.

CHOCOLATE CHAI LATTE COOKIES
Adapted from a recipe I found in a Land O'Lakes holiday cookie mag. Unusual but good (calls for a cake mix as the cookie base). They went over pretty well with my favorite group of culinary guinea pigs, my coworkers!

- Preheat oven to 350 degrees F.
- In a large bowl, combine all the ingredients in the cookie list except for the chips. Beat with an electric mixer on medium speed until smooth and well mixed.
- Stir in chips.
- Shape dough into 3/4 inch balls (I use a small cookie scoop). Place about 2 inches apart onto ungreased cookie sheets.
- Bake at 350F for about 9 to 11 minutes, or until tops are set (slight underbaking will provide more fudgy chewy cookies).
- Cool cookies on baking sheet for about 2 minutes. Remove cookies to a wire cooling rack to cool completely.
- While cookies are cooling, combine the dry drizzle ingredients in a small bowl. Add milk or water gradually, mixing well between additions, until you achieve the consistency you like.
- Drizzle over cooled cookies. Allow drizzled cookies to dry fully before packing cookies for storage or transport.
- NOTE: In place of the spices in the cookies, you can use 3 tbs. of instant chai latte mix (any flavor).
- NOTE: You can substitute 1 1/2 cups white chocolate/semisweet swirled chips for the separate types, if you prefer.

- Pour the milk into a small pot, add the cloves, green and brown cardamom pods, cinnamon sticks, sugar, tea leaves and ginger, and bring to a simmer. Turn the heat to low and simmer for 10 minutes. Strain into a 2-cup measure and, using an electric milk frother or an espresso machine, steam the milk until it is thick and foamy. Pour into 2 large latte cups and spoon the foam on top. Sprinkle with ground cardamom and cinnamon and serve.

- For the chai syrup: In a small saucepan, combine the water and sugar. Bring to a boil, stirring to dissolve the sugar, then remove from the heat and add the tea bags. Let steep for 10 minutes, then remove the tea bags, pressing on them to extract as much flavor as possible. Transfer the chai syrup to a jar. Use right away or refrigerate for up to 1 month. Makes about 1 1/4 cups syrup, which is enough for 5 to 6 chai lattes.
- For the chai latte: Pour 3 to 4 tablespoons of the chai syrup in a large mug. In a medium saucepan, warm the milk over medium-high heat, whisking constantly, until steaming and foamy on top, about 3 minutes. Slowly pour into the mug, then garnish with ground cinnamon and serve.
CHAI LATTE
