2 medium eggplants (about 1 pound)
salt
olive oil or vegetable oil, for pan frying
2 1/2 cups marinara sauce
8 ounces mozzarella cheese, thinly sliced
1/2 cup grated parmesan cheese or 1/2 cup romano cheese

Steps:

  • Trim the eggplants and cut them into 1/4 inch thick slices.
  • Layer the slices in a colander, sprinkling each layer with salt.
  • Let drain for 30 minutes.
  • Rinse the eggplant and pat dry.
  • Pour about 1/2 inch oil a large deep skillet and heat over medium heat.
  • Fry the slices, in a single layer, turning once, until browned on both sides.
  • Drain on paper towels.
  • Preheat the oven to 350.
  • Spread a thin layer of tomato sauce in a shallow baking dish.
  • Make a layer of eggplant slices, overlapping them slightly.
  • Top with a layer of mozzarella, another layer of sauce, and a sprinkle of grated cheese.
  • Repeat the layering, ending with eggplant, sauce, and grated cheese.
  • Bake for 45 to 60 minutes, or until the sauce is bubbling and the mozzarella is melted.
  • Let stand for 10 minutes before serving.

1/4 cup extra-virgin olive oil
3 medium yellow onions, peeled, halved, and cut into thin slices
6 cloves garlic, peeled and grated
Kosher salt
1 tablespoon crushed red pepper flakes
1 tablespoon granulated sugar
3 (28-ounce) cans San Marzano whole plum tomatoes
2 medium eggplants, washed and cut into 1/2-inch thick rounds (about 2 1/2 pounds)
1/2 cup all-purpose flour
Freshly ground black pepper
5 large eggs
3 tablespoons whole milk
4 cups Italian-style breadcrumbs
1 tablespoon dried oregano
1 tablespoon fresh thyme leaves
Vegetable oil, for frying, as needed, about 1 1/2 to 2 cups
1 1/2 pounds mozzarella cheese, cut into thin slices
1/2 cup grated Parmesan
1 pound provolone cheese, grated
2 handfuls fresh basil, leaves only, torn

Steps:

  • For the tomato sauce: In a large skillet, heat the olive oil over medium-high heat. Add the onion and garlic and season with salt and red pepper flakes. Cook until the onions become translucent, 3 to 5 minutes. Add the sugar and the canned tomatoes. Use a wooden spoon to break up some of the whole tomatoes and cook 10 to 15 minutes over medium heat, stirring from time to time. Taste for seasoning, the tomatoes should be fairly broken down and the flavors coming together. Cook for another few minutes if the tomatoes still taste like they need a little more time to break down. Set aside to cool.
  • For the eggplant (this step is optional, leave it out if you have limited time): Arrange the eggplant rounds in a single layer on 2 baking sheets. Sprinkle with salt on both sides of each slice and allow it to sit for about 1 hour. Salting it draws out the liquid and bitter flavor. After an hour, rinse with cold water and dry them thoroughly with a kitchen towel.
  • Put the flour in a medium bowl and season with salt and pepper. In another bowl, whisk together the eggs and milk and season with salt and pepper. In a third bowl, combine the breadcrumbs with the oregano and fresh thyme leaves and season with salt and pepper. Dip each eggplant slice in the flour and shake off any excess. Then, dip in the egg mixture, and finally in the breadcrumbs. Make sure to coat both sides of each slice of eggplant. Arrange them in single layers on the baking sheets.
  • In a large skillet, pour enough oil to accumulate about 1/2-inch in the bottom. Heat the oil until it begins to smoke lightly (alternatively, test with a thermometer and wait until the oil registers between 380 degrees F and 400 degrees F). Use a pair of kitchen tongs to add a single layer of the eggplant to the pan. Cook them until they are golden brown, about 2 minutes on each side. Remove from the oil and transfer to a baking sheet fitted with a kitchen towel so the eggplant can drain as the others cook. Season lightly with salt. Take care to reheat the oil back up to temperature before adding another batch of slices to the pan.
  • Preheat oven to 350 degrees F.
  • To assemble: In a 9 by 13-inch flameproof baking dish, spoon about 1/4 of the tomato sauce on the bottom. Top with a layer of the fried eggplant; the eggplant slices can overlap slightly. Top with about 1/3 of the mozzarella slices. Sprinkle with about 1/4 of the Parmesan and provolone cheeses. Top with a layer of torn basil leaves. Spoon sauce and repeat the layering 2 more times to make 3 layers. End with the remaining mozzarella. Carefully press the layers down firmly into the dish once assembled. Place the dish in the top part of the oven and cook until the cheese is melted and bubbly, 35 to 40 minutes. For extra browning, put the dish under the broiler for a minute or two just before serving to get an extra brown cheesy top. I always nibble on a bit of that before sharing it with my friends!

This recipe comes form The Canberra Times Sunday Magazine and LeggyPeggy says it is 'divine'. It's very easy and yummy. I didn't have any fresh herbs when I made the sauce, so used dried ones. I just shook them into the sauce until I thought that it smelled nice and looked like a nice consistency. Not very scientific, I know. Although it is very yummy as is, next time I make it I intend to grill, rather than fry, the eggplant just so's I don't ingest quite so much olive oil. The introduction to the recipe mentions eggplant's propensity to absorb all available oil and although I squeezed the slices between paper towel to remove some of the oil, there still seemed to be a fair bit. And I used parmesan cheese rather than the grana padano. I think grilling the eggplant will give it a slightly different, but still very yummy, flavour. And I didn't peel the eggplant. I like my food to be visually pleasing as well as yummy and I think the glossy, dark skin is very nice to look at. Happy eating!

seasoned flour

8 -10 fresh mozzarella balls, sliced into rounds
1/2 cup freshly grated grana padano or 1/2 cup parmesan cheese
1 (400 g) can Italian-style diced tomatoes
2 tablespoons olive oil
1 onion, finely chopped
2 garlic cloves, finely chopped
2 tablespoons fresh thyme
1 tablespoon parsley, chopped
black pepper
1/2 teaspoon salt
1 pinch sugar

Steps:

  • Sprinkle the eggplant slices lightly with the salt and let the juices disgorge for about half-an-hour. Pat the slices dry. Dust lightly with seasoned plain flour and then brown in olive oil in a non-stick frypan. You will need to do this in batches.
  • For the tomato sauce:.
  • Heat 2 tbsp olive oil in a medium saucepan. Add a finely chopped onion and saute until the onion is transparent. Add 2 finely chopped cloves garlic and saute for a minute. Add 1 400g can Italian diced tomatoes, 2 tbsp fresh thyme, chopped and 1 tbsp parsley, chopped. Grind in black pepper, add half a teaspoon of salt and a pinch of sugar. Simmer for 10 minutes, covered.
  • To assemble:.
  • Preheat oven to 180°C Lightly grease a baking dish with olive oil. Place a layer of eggplant over the bottom. Top with some tomato sauce and then dot with mozzarella slices. Continue layering until all the eggplant is used up. The last layer should be tomato sauce and mozzarella. Sprinkle with the grated grana padano or parmesan. Drizzle the top lightly with olive oil and bake for about 25 minutes.

A very rich version. This can be prepared a day ahead and cooked just before serving. This is from my 365 Easy Italian Recipes cook book I purchased in 1991. This is by far the best recipe I have found and made. You will need recipe #201650 Besciamella Sauce for this. I couldn't add it to the ingredients. Don't let this recipe scare you. It is easy to make. I hope you will enjoy it just as much as we have.

2 eggplants
2 tablespoons kosher salt
1/2 cup flour
3 eggs
2 tablespoons water
2 1/2 cups dry breadcrumbs
1 teaspoon salt
1/2 teaspoon pepper
1/2-3/4 cup olive oil
3 1/2 cups marinara sauce
2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese

Steps:

  • Trim ends and peel skin from eggplant. Slice eggplant into 1/4" rounds. Sprinkle with salt and layer in colander. Place a plate with a weight on top and let drain 35-40 minutes. Pat slices dry with paper towels.
  • Spread flour on a flat plate or sheet of wax paper. In a wide shallow bowl, beat eggs and water until well blended. On another plate or paper, combine bread crumbs with salt and pepper. Dredge eggplant slices in flour. Dip in beaten egg, then dredge in seasoned bread crumbs; pat gently to help crumbs adhere.
  • In a large frying pan, heat 1/2 c olive oil over medium heat. Add 3-4 slices of eggplant at a time and cook 3-4 minutes, or until golden brown on both sides. Remove eggplant to drain on paper towels while cooking remaining slices. Add remaining oil to pan as needed.
  • Spread 1/2 c marinara sauce over bottom of 13X9" baking dish. Place a single layer of eggplant on sauce. Spread 1/2 c besciamella sauce over eggplant; top with 1 cup marinara sauce, 1/4 c mozzarella, and 2 tbls parmesan cheese. Make 3 more layers, ending with the parmesan cheese.
  • Bake 30 minutes at 350, until bubbly and brown on top. Let stand 5 minutes before serving.

1 (16 ounce) jar prego spaghetti sauce with meat
1/4 cup grape jelly
1 (14 ounce) can sliced-style stewed tomatoes
4 slices mozzarella cheese
parmesan cheese, to season flour

Steps:

  • Preheat oven 375°F.
  • Moisten eggplant slices and coat lightly in flour.
  • Quickly brown slices in hot oil, dusting each side generously with seasoned salt and the parmesan cheese.
  • When fork tender and golden brown transfer to jelly roll pan.
  • Cover loosely with foil and bake about 20-25 minutes or until tender.
  • Use 8 slices for this amount of sauce.
  • Sauce:.
  • In a medium saucepan combine jelly and tomatoes that have been broken with a fork.
  • Heat on medium heat until piping hot.
  • Do not boil. Be sure jelly is melted.
  • Arrange 2 eggplant slices on each of 4 plates.
  • Cover each with 1 slice of mozzarella. Ladle sauce over all, not to cover completely.
  • Place plates in oven, just to melt cheese.
  • Serve immediately.

1 large eggplant (about 1 1/2 lbs)
2 cups marinara sauce
2 eggs
2 cups breadcrumbs
3/4 cup olive oil
3/4 lb button mushroom, cleaned and sliced
18 large black olives, pitted and cut in half
8 ounces fresh spinach leaves, rinsed and drained
1 cup ricotta cheese
1 cup parmesan cheese
1 lb mozzarella cheese, thinly sliced

Steps:

  • Trim and wash eggplant; do not remove skin.
  • Cut crosswise into ¼ inch slices.
  • Place on baking sheet, put a cup on one end of baking sheet to make it tilt (so that liquid that drains off will gather at one end); sprinkle eggplant slices with salt and let drain 30 minutes.
  • Preheat oven to 400 degrees F.
  • Lightly oil a 12 x 8 inch baking dish.
  • Rinse eggplant and pat dry.
  • Beat eggs in shallow bowl.
  • Spread half of the breadcrumbs on large platter.
  • Dip each eggplant slice first in the egg, letting excess drip back into bowl, then into the breadcrumbs, shaking off excess.
  • Place slices as they are breaded onto a baking sheet.
  • Heat ¼ cup of olive oil in large skillet over medium-high heat until rippling.
  • Add enough eggplant slices to fin in one layer without crowding and saute on both sides until lightly-browned, 2-3 minutes per side.
  • Transfer to paper toweling to drain as the slices become done.
  • Continue, adding more oil if necessary.
  • When finished frying eggplant, add mushrooms, olives and spinach to same skillet, reduce heat to medium.
  • Saute, stirring frequently, until spinach has just wilted, about 2 minutes.
  • Remove from heat.
  • Make a layer of half the eggplant slices in baking dish.
  • Spread ricotta cheese evenly over; sprinkle with Parmesan, then cover with mushroom mixture.
  • Add remaining eggplant slices; pour on 2 cups marinara sauce and top with slices of mozzarella.
  • Bake until hot and bubbly, about 20-25 minutes.
  • Let stand 10 minutes before serving.

4 large eggplants
2 eggs
1/3 cup water
3 tablespoons flour
1/3 cup seasoned dry bread crumb (you can season your own with Italian seasoning, salt and pepper or any combination you like)
1/2 cup parmesan cheese
1 (28 ounce) can marinara sauce (or your own)
1 lb mozzarella cheese, sliced
olive oil

Steps:

  • Peel eggplant and cut into 1/2" slices; place in a colander in layers, sprinkling each layer with salt, and let stand for 30 minute.
  • to drain excess water.
  • Dry on paper towels.
  • Rinse first if you feel there is too much salt remaining.
  • Then you will really have to dry the slices well.
  • Mix egg with water and flour.
  • Dip eggplant slices in mixture.
  • Saute a few slices at a time quickly in hot olive oil.
  • You just want to seal and slightly colour the eggplant.
  • Combine seasoned breadcrumbs with the Parmesan cheese.
  • In crockpot, layer 1/4 of the eggplant, top with 1/4 of the crumbs, 1/4 of the marinara sauce and 1/4 of the mozzarella.
  • Repeat three times to make four layers.
  • Cover and cook on low 4 to 5 hours.

(I like to use my own Angie's Bella Marinara sauce in this delicious vegetarian dish, but you can use whatever pasta sauce you prefer.)

1 large firm eggplant, cut into 1/2 inch slices
8 tablespoons olive oil
8 ounces ricotta cheese
6 ounces shredded mozzarella cheese

3 cups angie bella marinara sauce (or your favorite tomato pasta sauce)

Steps:

  • If you're a fan of salting eggplant to remove possible bitterness, proceed.
  • I try to purchase the youngest, freshest eggplant I can and skip that step, finding that it actually seems to contribute to the eggplant's ability to soak up oil.
  • Preheat oven to 350 degrees F.
  • Mix the ricotta, mozzarella cheese and 1/4 cup of the Parmesan cheese.
  • Mix in egg and basil.
  • In a large skillet, quickly saute eggplant in 4 tablespoons.
