THE BEST PEACH COBBLER

The Best Peach Cobbler image

In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

Provided by Food Network Kitchen

Categories     dessert

Time 1h10m

Yield 4 to 6 servings

Number Of Ingredients 12

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
  • Let cool to room temperature before serving.

Provided by Shauna

Categories     Dessert

Time 1h

Number Of Ingredients 17

10 cups peaches sliced (into thin wedges)
2 teaspoons lemon juice
¼ cup sugar
¼ cup brown sugar
¼ tsp cinnamon
⅛ tsp allspice
1 tsp vanilla extract
2 tsp cornstarch
2 cups flour

BLACK FOLKS SOUTHERN PEACH COBBLER RECIPE

Black Folks Southern Peach Cobbler Recipe image

This soul food dessert and the darling favorite of the South is loaded with fresh, juicy peaches and topped with a light and airy cinnamon sugar crust. A cobbler so delicious, you may want to eat it all. All by yourself!

Provided by Shaunda Necole

Categories     Dessert

Time 1h

Number Of Ingredients 12

4 cups peaches (ripe & fresh, peeled and sliced (or two 28 oz. canned peaches, drained))
1 cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ginger (minced)
¼ cup water (cold)
2 tablespoons cornstarch
2 cups Bisquick (*See the notes below for how to make homemade Bisquick from scratch!)
1 cup milk
¾ cup sugar (granulated )
1 teaspoon vanilla extract
½ cup butter (melted )

Steps:

  • Preheat the oven to 350°F.
  • Place the butter in the baking dish and then place the dish in the oven to melt the butter while the oven is preheating.
  • Remove the melted butter from the oven after a few minutes and set it aside.
  • Peel and slice the peaches into quarters, and then halve the quartered peach slices. (If using canned peaches, use a colander to drain the peach juice before slicing them).
  • In a medium-sized bowl, mix the ingredients for the peach filling: peaches, brown sugar, cinnamon, nutmeg, and ginger. (I mixed the peach cobbler filling in my Instant Pot inner pot with the lid off and the 'keep warm' setting on.)
  • Add the cornstarch to the cold water and stir until smooth.
  • Pour the cornstarch mixture into the peach mixture.
  • Stir the peach mixture to combine the ingredients and then set aside.
  • In a second medium-sized bowl, whisk the ingredients for the cobbler batter: Bisquick, milk, sugar, and vanilla.
  • Pour the Bisquick mixture over the melted butter in the baking pan.
  • Then, pour the peaches into the Bisquick mixture (the dough will rise around the peaches as it bakes).
  • Bake at 350 degrees F for 50-60 minutes in the conventional oven. Bake at 350 degrees F for 35-45 minutes if using the Instant Pot Omni Plus oven. Watch the cobbler while baking, and bake until the cobbler dough is golden brown.
  • To test if the cobbler is done, insert a toothpick into the center of the cobbler dough. If it comes out clean, then it is done.
  • Serve Black folks Southern peach cobbler recipe warm, and enjoy!

  • For the dough: Make sure the milk is warmed up to around 110°F. I like to do this by placing my cold milk in a microwave safe vessel and microwaving it for 45-50 seconds (it should be warm as if you are giving it to a baby and not scalding). In the bowl of a stand mixer, add in the sugar and warmed milk. Then sprinkle the yeast on top. Let sit for 7-10 minutes for the yeast to activate- the mixture will be bubbly and fragrant.
  • Next, add in the melted butter, eggs, flour, and salt. Attach dough hook attachment to mixer and knead on medium speed until the dough begins to come together, about 6-8 minutes. Look for the dough to be smooth. If your dough is sticking to the bowl, add in a tablespoon more of flour, only if needed. Alternatively, if you are not using a stand mixer- you can knead the dough by hand for 10 minutes on a lightly floured surface.
  • Shape the dough into a ball and place it into a lightly greased large bowl. Cover the bowl tightly with plastic wrap and a clean towel/linen- let the dough rise in a warm environment until it doubles in size, about 1 1/2 hours or longer depending on the temperature of your environment.
  • Once the dough has risen, punch the dough down and turn it out onto a lightly floured surface work area. Roll the dough out into a rectangle, about 15×10 inches, now let’s prepare the filling.

  • Start by preparing your peaches. Peel with a vegetable peeler if they are firm. If they are ripe, a vegetable peeler will bruise them so it's best to blanch: bring a large pot of water to a boil. Add the peaches a few at a time so that they are totally submerged. Let boil for 30-45 seconds. Remove from the boiling water. When they are cool enough to handle, use your hands to easily remove the peels. Slice the peaches. You should end up with about 9 cups of sliced peaches. Add your peaches to a 9x13 inch casserole dish (no need to grease the pan).
