1 cup walnuts (or pecans)
1/4 cup dates
1/4 teaspoon sea salt
5 large apples
5 tablespoons lemon juice
4 tablespoons maple syrup or agave nectar
1 teaspoon cinnamon
2 tablespoons raisins or dried cranberries

Steps:

  • 1. To make the crumble, briefly process coconut, nuts and salt until pecans are reduced in size.2. Add dates and continue to process until mixture is coarse meal that still looks fluffy. Do not over-process. (You may still see small dark chunks of dates, but that's okay.) Your "crumble" is now ready.3. Slice your apples. (If you have a food processor, you can pulse chopped apples BRIEFLY if you are in a rush.) Set aside.4. Throw your crumble loosely into a BIG bowl. Add your sliced apples on top of the crumble (and add your optional raisins/cranberries). Pour the lemon juice and the maple syrup into the bowl. Add cinnamon.5. Gently stir everything together until the crumble, apples and moisture from the lemon juice/syrup are equally distributed.6. Your crumble is now ready!

2 lb / 1kg Granny Smith Apples( green apples), weight before peeling
1 tbsp white flour
1/2 cup white sugar
2 tbsp lemon juice (or water)
1/2 tsp ground cinnamon
1 cup rolled oats / oatmeal ((quick cooking is ok))
1 cup white flour
1 cup brown sugar (loosely packed)
1/2 tsp baking powder
1 tsp cinnamon powder
125g / 1/2 cup unsalted butter, melted
Pinch of salt
Vanilla ice cream

Steps:

  • Preheat oven to 350F/180C.
  • Peel apples, then cut into 1.5cm/ 3/5" cubes.
  • Place apple in a bowl. Sprinkle with flour, sugar and cinnamon, then pour over lemon juice. Toss, then spread out evenly in a 1.5 litre/1.5 quart baking dish.
  • Place Topping ingredients in a bowl. Mix until clumps form, like wet sand (see video). Spread over the apples, crumbling with fingers if required to get that crumbly topping.
  • Bake for 30 to 40 minutes or until golden brown. Remove, cover loosely with foil to keep warm and let stand for 10 minutes before serving (let's the apple filling come together).
  • Serve warm with vanilla ice cream!

1.5 kg mixed apples, (I like to use half Bramley)
150 g golden caster sugar
1 lemon
50 g unsalted butter, (cold)
100 g plain flour

Steps:

  • Preheat the oven to 200°C/400°F/gas 6.
  • Peel and core the apples, then quarter and chop into 3cm chunks.
  • Place in a saucepan on a medium heat with 100g of sugar and a few fine gratings of lemon zest.
  • Pop the lid on and cook for 5 minutes, or until the apples have softened. Remove the heat and leave to cool a little.
  • Meanwhile, cube the butter and place in a mixing bowl with the flour. Rub together with your fingertips until it resembles breadcrumbs, then scrunch in the remaining sugar to add a little texture.
  • Transfer the apples to a 25cm x 30cm baking dish and sprinkle over the crumble topping.
  • Bake in the oven for 25 to 30 minutes, or until golden and bubbling. Delicious served with vanilla custard.

This is the best apple crisp i have ever tasted! The crisp part tastes like a shortbread cookie! Its a recipe from the food network show Barefoot Contessa. I only used 2 1/2 lbs of apples(about 5) but i prefer my apple crisps more crispy than appley! I also used Gala apples because they just happened to be on sale and it turned out great! You can use your own apple of choice! I also didnt have orange juice or the zests so i just used the bottled lemon juice and it tasted fine.You can also substitute berries, peaches, or any other fruit you like! This crisp also stays crisp if stored in the fridge!

1 cup white sugar, divided
2 tablespoons all-purpose flour
6 cups thinly sliced peeled apples
2 cups water
3 -4 tablespoons lemon juice, bottled is fine
1 pie crust
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground mace
1/2 cup butter, softened

Steps:

  • Preheat the oven to 375.
  • In a large bowl, (at least 8 cups) combine 2 cups water and the lemon juice, as you cut up the apples put them in the water. This will keep them from browning. When you are finished cutting them up, drain off all the water.
  • Combine 1/2 cup of the sugar, and the 2 tablespoons of flour. add to the apples.
  • Grease a pie tin. Line it with the pie crust. Fill with the apple/flour mixture.
  • In separate bowl combine remaining 1/2 cup sugar, the 1/2 cup flour, cinnamon, ginger, and mace. Cut in butter until crumbly. Pat onto the top of the apples. Cover the edge of the pie with foil.
  • Bake for 30 minute then remove foil. Bake 30 minute more or until topping is golden.

4 pear, peeled and quartered
125 g unsalted butter
125 g dark brown sugar
zest and juice of 1 orange
Custard, cream or vanilla ice-cream to serve
100 g spelt flour
100 g organic oats
100 g butter - cold and cut into chunks
100 g demerera sugar

Steps:

  • Heat the apples, pears, butter, sugar and orange zest and juice until tender but not too soft.
  • Mix together the flour, oats, butter and sugar to make the crumble topping.
  • Put the apples into a dish that can go into the oven, top with the crumble mixture and bake for around 25 - 30 minutes at 180C/160 Fan.
  • Serve with custard, cream or vanilla ice-cream.

1 pinch salt
120 g (1/2 cup) chilled unsalted butter (,cut into 1 cm cubes)
1 kg (2.2 lb) cooking apples
300 g (10.5 oz) eating apples (, such as Braeburn or Jazz)
3 tbsp golden caster sugar ((or superfine sugar))
1/2 tsp ground cinnamon
1 tbsp lemon juice

Steps:

  • Preheat the oven to 180C (350F).
  • Peel and chop the cooking and eating apples roughly, no larger than 2cm (or just under 1 inch) chunks and place in a saucepan.
  • Squeeze, or pour, over the lemon juice. PRO TIP: This is to help stop the apples from browning.
  • Add the caster sugar and the cinnamon to the apples and give everything a stir.
  • Place the pan on the hob (stove top) over a medium heat and cook for 10-15 minutes stirring a couple of times, until the apples start to break down.
  • Whilst the apples are cooking, make the crumble topping. Add the flour, oats, sugars and salt to a bowl and mix everything together until combined.
  • Add the cold butter and rub the mixture with your fingers until the butter starts to look like breadcrumbs and is starting to form clumps. .
  • By now the apples should be starting to break down. Carefully pour the apple filling mixture into a baking dish.
  • Add the crumble topping to the baking dish and spread on fairly evenly.
  • Place in the preheated oven and cook for 25-30 minutes until golden and bubbling.
  • Remove from the oven and leave to cool slightly before serving with your favourite ice cream or homemade custard.

Steps:

  • Position an oven rack in the center of the oven and preheat to 350 degrees F. Toss 575g peeled, cored and sliced Bramley apples with 2 tbsp golden caster sugar and put in a 23cm round baking dish at least 5cm deep, or a 20cm square dish.Don't cut the apples too small or they will just disintegrate, especially the Bramleys. Flatten down with your hand to prevent too much crumble falling through. Stir well being careful not to break up the fruit.
  • Put 175g plain flour and 110g golden caster sugar in a bowl with a good pinch of salt and mix well.
  • Slice in 110g cold butter and rub it in with your fingertips until the mixture looks like moist breadcrumbs. Taking a few cubes of butter at a time rub into the flour mixture.Shake the bowl and any big bits will come to the surface - rub them in. Keep rubbing until the mixture resembles breadcrumbs. Don't worry too much about getting it even, as this is quite a rustic dish and works well with an uneven texture.You can also make the crumble mixture in a food processor. Place all the topping ingredients into the processor and process on pulse until you get a coarse mixture but be careful not to over-mix.
  • Spoon the fruit mixture into the bottom, then sprinkle the crumble mixture on top. Pour the crumb mix over the apples to form a pile in the centre, then use a fork to even out.Sprinkle a good layer of crumble topping over the apples, try to work on a depth half that of the apples. Too thick and the middle won't cook.
  • Gently press the surface with the back of the fork so the crumble holds together and goes crisp, then lightly drag the fork over the top for a decorative finish.
  • Sprinkle 1 tbsp rolled oats and 1 tbsp demerara sugar over evenly, if you wish.
  • Set on a baking tray and put in the preheated oven for 35-40 minutes, until the top is golden and the apples feel very soft when you insert a small, sharp knife. Remove, cover loosely with foil to keep warm and let stand for 10 minutes before serving.Serve warm with vanilla ice cream!
